    This is awesome! Great example! Yes canning can be often dirt cheap and FREE alsoI can't believe my husband ever told me it was a waste of time! I gave him an example that made him never say it again! I picked free fruit people live near me asked to be picked last summer! I got free cucumbers, free apples, pears, plums, berries etc. I canned 240 jars of all kinds of varieties for FREE! People don't realize how economical canning really is! The jars are reuseable and the lids are cheap. I get jars free alot here too. There are fruit trees all over and people that will ask you to help prevent the mess they make once fallen! I never buy apple sauce, jams, jellies or pickles...adding more dried teas and herbs!

    I’ve spent my life as a single parent building houses for a living and teaching other people to build houses. Now that my kids are grown I’m semi-retired and I have time to bake bread and do canning. I’m so glad you’re here to help with this venture. God bless and keep you and your family.

    Heather, you are such a positive person. I too find canning and dehydrating so relaxing. I like to have a well stocked pantry. I feel better knowing I have plenty of food for the "just in case" time. Thanks.

    Canning has helped to continue feeding my family after my husband's heart attack and we had NO money coming into the house. We lived for 4 months off my canned goods and stuff I had in my freezers and some help from family and friends. Since then, I've learned how to can meats, I've learned how to can meals, rather than just single ingredients. You have taught me so much, Heather---I've learned so much from you and Linda and Leisa and others. Thank you! I don't know how anyone can say that canning doesn't save money----I buy to can and it's ALWAYS bulk deals. Thanks again, I love your channel! ~~Leslie

    Girl, DON'T APOLOGIZE about canning...canning shows LOVE. You're using time you'll never get back, BUT you know what's in your jars and YOU control what goes into your jars.
    I grew up with canning and have won blue ribbons for my canning AND when you look at your finished work on your pantry shelf, it's like viewing a shelf of jewels. All the pretty colors. 💕😊👍

    I am 69 yrs. old & grew up learning how to can at a very early age. I agree with you 100% canning does save my family money & it taste sooooooooo much better than store bought. Thanks for sharing. Hug the "Littles". Blessings.

      I agree it does taste sooo much better. I keep a plum tree so every year we make plum jam from the plums. Most years it is the only jelly/jam we use. This year, we ended up with 5 cases of jam. lol Still cant beat the taste.

      Do canning beans in liquid last as long as vacume sealed canning dry beans?

      @@MamaShup No. Canning will allow them to be stored for a couple years. They advise 18 months but we have stuff on our shelves that is several years old. Vac sealed dry beans can last a lot longer. The difference is that canned beans are ready to eat with no extra effort. In an emergency you can eat these straight from the jar where the vac sealed beans require significant energy input to make them edible.

      @@GrandpasPlace ball blue canning book has a great recipe for plum sauce. Mix a jar with a little soy sauce,pour over chicken and cook until tender. Yum

      How come they snap back? I always thought that if they pop back they lost the vacuum that's helping with preserving the food inside.

      @@gheka35 You thinking the wrong direction: the lids are snapping DOWN, sealing. Until they SNAP they are not sealed yet. AS THE CONTENTS of the jars cools, it shrinks in volume, pulling on the air space inside the top of the jar. The air also shrinks.....think about Pop-Corn, only instead of expanding & blowing the skin inside out & fluffing up the corn kernel, this air is cooling & SHRINKING.....pulling tighter & tighter, & the lids on top suddenly can’t stay. UP anymore, so it POPS DOWN & seals the jar. That is why everyone is SO HAPPY: the goal of canning is to have the contents of the jar SEALED in & protected from contaminants outside that will spoil the food. Once the lid SNAPS SEALED all the effort is proven worth it because from that exact moment forward: THAT JAR IS GOOD until you pry the lid off.
      All the work, effort of preparing food, cleaning jars, cooking in the canner is for ONE THING: To hear the lid SNAP DOWN-SEALED! If you don’t hear the SNAP, then you can put it back in the canner & try again...or just refrigerate or freeze it (don’t freeze it in the jar, it will break the jar). If the jar didn’t snap sealed, your food is not “preserved” & will spoil.
      I hope you understand now 😊

    Three years ago Heather helped me with some canning questions. 1st time was scary, then I realized how easy it is! My pantry is full of meats, soups, broths, sauces, fruits, etc. We’ve lost power several times due to storms and I was able to can meat and avoid losing everything in the freezer. Heather is right. Everyone in the canning community is so helpful. 💕

      @@dsa2591 Gas or propane stove, but make sure that the gas or propane stove will work with the power off. I believe some now have safety features which prevent them from lighting when there is no electric power.
      Even if they have electric lighters, they can typically be lighted manually. Most use physical strikers (or at least used to) and those don't require electricity.
      Some people also have outdoor kitchens that run on propane or wood or pellet burning stoves. It is possible to can over a fire.

      D A can outside on a camp stove with propane or on a gas stove indoors. If the electronic igniter on a gas stove doesn’t work when the power is out then use a lighter to light the flame. Always have a secondary source of cooking like a camp stove and propane in case the electricity grid goes down. It could possibly be down for several days in a storm. 😉

    You used a phrase that really spoke to me. It's a powerful feeling to have this knowledge. I didn't realize that's what I was feeling. I recognized feeling frugal, feeling proud of learning something new that nobody I know in my circle has learned. Feeling like I had conquered a fear of something new and a feeling of accomplishment being able to provide nourishing food for my family. But yes. Powerful. That's an awesome word to use.

    This is how my Grandparents and Great Grandparents lived... I ate a lot of preserved food as a child; Grandma had a plethora of jarred food in the cellar. Unfortunately it's not something my parents embraced and I was too young to grasp the viability. Now I'm trying to relearn, from scratch, what was lost in a single generation.

      I remember having to stand on a chair as a little girl bending over the stove and a pot the size of that canner stirring tomatoes. If I'd ever had memories of being able to help with any of the rest of canning, I probably wouldn't be trying to retrain myself at 65 hoping to pass it down to my daughter and daughter-in-law.

      I also had a grandma who canned and parents who did not. I am so glad I have learned, and I am teaching one of my nieces (who has a husband and 3 growing boys) . It is a skill that should never be lost.

    Heather you are so sweet and awesome,! "My Story," I was scared to death to can, had my presto canner, had everything I needed! I watched you can over and over, so I told everyone to leave the house and I canned! It did not blow up! I canned and then was scared to serve because I just knew we would all die. lol, so one evening I needed tomatoes for soup, I looked at my home canned tomatoes and thought well here goes, I hope I don't kill my family! We all made it! i am telling this because I was one of those people scared to death, but I so wanted a pantry and wanted to can my own food. I now can with confidence and I love it, Thank you so much for sharing all your knowledge and recipes! Hugs, :)

    I grew up surrounded by family constantly canning. We always had dozens of jars of fruits, veggies, and jams in the pantry. As an adult I have picked up both a water bath and a pressure canner. We have access to fresh albacore tuna in Oregon and have found that home canned tuna is so much better that we donated all of the sad little commercial tuna cans we had. We have a pantry full of jams, fruits, veggies, pickles, tuna, and salmon. Absolutely love it!

    LOVE LOVE LOVE YOU! You’re so stinkin’ sweet! I remover the first time I canned (3yrs ago)I binge-watched your videos over and over agin. I first did a fruit jelly then two veggies then chicken. Man I was in sheer panic with the chicken wishing I could call you every five min. To make sure I was doing it right so I’d rewatch one of your videos. Well let me tell you that chicken saved me through some tough times last fall. I was so grateful to be able to buy a two pkt of knorr pasta side for two dlls and add one huge can of chicken and be able to feed my family of 8 chicken Alfredo for just $3. I remember say a big “thank you JC- Amen!” And another big blessed-filled thank you to you! I just experimented and canned enough “to learn some” but that some got me through a hard year. I’m planning to pick up again and master this art of canning. I bought books you have recommended and I got a dehydrator last Christmas.
    So if your ears are ringing at around midnight south Texas time. It’s me! 😂 😝

    Grew up watching my mother and grandmother can. When I was newly married, I canned a bushel of green beans in my little 4qt Mirro pressure cooker.... 3-4 pints at a time. Loved it!

    Canning equipment is expensive as is energy cost to can. We had 5 gardens and many fruit trees, maple trees for syrup, and berry bushes, and we were 'hunters'' we canned a lot, our pantry was full, it is a secure feeling when the shelves are full.
    And, with all of the gathering and attending, we never gained any weight.
    The best deer meat was the canned meat, so tender you could cut with a fork

    I am almost 68 years old. I grew up in a family of 5. My mom was a homemaker and my father worked. So she could stay at home my father raised about 1/2 acre of vegetables. I learned to can by the time I was 9 years old. I was never forced to do it, but wanted to sit with my mom and sometimes grandmother and help with the work. It was never like a chore to me. I fell in love with the way the jars of food seem to fill the shelves for the coming winter. The pots of stew that we made from theses jars was such a comfort to the family as we sat in our dining room and dad would build a fire in the wood-stove. At Christmas mom would make apple cakes from the dried apples, or a black walnut pound cake from the walnuts we had gathered during the fall. Thanksgiving would bring a lot of pumpkin pies that would be made from the pumpkins that she had canned. Pumpkin bread could be smelled as you walked up to the house. (she would cube them and can in jars). Home made tomatoes would go into soups, or spaghetti. Cans of ground beef would be made into casseroles. Every kind of vegetable would be offered on Sunday with the plate of fried chicken. It kept my mom from having to leave the house to get an outside job. It offered us wonderful family memories, a better quality of life than if we had not put food up for ourselves. It gave us a pride in our home and family that a lot of families do not have today, but most of all it showed me a way that I too could remain at home with my child as he grew up. Today I can, dehydrate. Its not a hobby but a way of life that was passed down to me. Huggs Kneady for all you do to keep this alive and strong.

    Although you can can beans this way, but if you cook the beans first with ham hocks then put them in quart jars then into your canner, you will have your beans preserved but you will also have good premaid meals and all you have to do is heat and eat, Make some corn bread and dinner is done in thirty minutes

      This is how I make cook my beans (with a ham hock, but I've never canned them, I don't like mine super liquid-ey, so would I add more water than normal so they are the consistency of above or make to my preferred consistency and then can that way? My newest bean-cooking discovery: If you like spicy you can add half a can of blended Chile in adobo such (the little cans), adds an incredible amount of flavor.

      @Mawmaw Sue The reason you soak raw beans, precook them a tad then dump the water, is to rid them of toxic phytic acid and to reduce indigestible sugars in beans. Many people get tummy distress from eating beans. Flatulence is reduced by the presoak/cook 10 minutes/dump water method. Your method kills the toxins but allows for lots of indigestible sugars to produce lots of gas.

      Yum. Can't have beans without corn bread in my house. My Mom would cook a big pan of beans Pinto or pink and make corn bread and fried potatoes to go with. Still my favorite dinner.

    I grew up sealing jars of jam with hot wax, making pickled everything and we literally grew , foraged and hunted and fished about 80% of our food. I was raised poor but never hungry. When you have this skill set, you’ll never be without. Use it up , wear it out make do or do without will take care of the rest🙂

    Canning is good for the soul and creates a wonderful pantry. It saved me when I was sick and didn't have money for almost 2 years. I now split my pantry with my daughter and my grandchildren. I have canned in the past, but stopped and came back Heather, you are looking amazing!! Keep up the good work,

      Initial cost may be more but it is an investment not a recurring expense
      My initial investment were a 25.00 13 at. Presto from eBay and and an 8.00 case of jars from Wal-Mart with a canning kit from Amazon. After that only lids. After that it's only food price As people learned I can I have been given jars and even been given jars and a canner by a.man who gave me his wife's gear to can no his garden for him after she died
      So yes I get better food for less.

      The best part is no salt. The amount of salt in canned goods at the store is well over the limit and causes health issues.

    I totally agree that canning is a stress reliever. As a caregiver for my elderly mom, I find getting in the kitchen and canning is a pure sense of joy. It makes me feel like I am accomplishing something.

    I love this video, especially your kind disposition! It feels good to have someone say, "don't be afraid." Having the electricity go out with a full freezer is something that has crossed my mind, but I never thought about proceeding to can the food. Someone gave me jars and some equipment so I guess I'll start soon. Thank You!

    For many years I canned everything in sight. One year my canned was going from 6 am until 11 pm. Fruit, veggies, meat, jams, jellies, pickles, whatever. Beans are among my favorites because they are so easy and make a quick meal. I am a widow now with just a grown son here to help me out so I don’t do as much, but I fed a family of 6 for a very long time.

    Pintos were .49 cents a pound at Foods Co. VERY RARE! I'll get 7 pints from this. 7 cents a jar ! Absolutely brilliant savings ! Pintos are 89 cents here in central CA .

    I LOVE canning! Totally obsessed. I watched my grandfather do this and see his huge shelves of canned food in the basement always made me so happy. I now have his old canning equipment, jars, etc., along with some of his canning recipes and it makes me so happy to give my family something that he 'made', if that makes sense. My grandma's favorite thing was a pickle relish he made and she hasn't had it in over 10 years since he passed away. I made some for her and she cried. I've only done water bath canning and the pressure cooker does intimidate me a bit but I think I just need to bite the bullet and try it. I'm so glad I found your channel!

    I've been following you for just several months. I'm 72 and have moved to a very small (pop 400) mountain town. I'm going back and watching old videos and 'catching up'. I am not afraid of running out of food, I have an amazing canned foods pantry. I just want to be prepared should I get snowed in for 1-2-3 weeks. I've been afraid I would kill someone with botulism... you make it less scary! THIS VIDEO, especially your encouraging and inspiring words at the end, make me less afraid! I've been making your laundry soap for years and finally decided this year to take the canning plunge. With all the uncertainty going on with our economy, it became necessary for my husband and I to learn to save every single penny we can on food. We are both disabled, so a fixed income is a scary situation to be in right now. I have learned so much from you I feel like I just owe you the world. I have been crying with you during the past year since the accident and I want you to know that I pray for you and think of you constantly. You are so strong and are such an amazing mother.     I grew up in the 50's and we had a garden with anything you could want. Mama canned all kinds of beans, vegetable soup, Chow chow, jams and jellies, fruit juices, spiced peaches, fruits for pies, even tomato and watermelon preserves. All the canned food, the potatoes and onions were kept in the cellar. When my young nephew came to visit, he immediately went to the cellar for a jar of vegetable which he could eat all by himself

    You are absolutely on point with the skill of canning. I started doing it for the same reasons that you did. And like you, it really did save me. Canners come in all different sizes. So even if you live in an apartment with limited storage space, you can totally do this. There are some fabulous recipes out there! The rewards are worth the effort. Hurray for canning!

    Never salt any dry beans until they are done cooking. If you salt before the beans are tougher & harder.. Not soft texture & yummy.. Keep sharing💕

      I have always seasoned my beans at the very beginning! Also added ham, fried bacon pieces and raw chopped onion while cooking.
      Never have had a problem with hard tough beans, unless they were very old dried beans to begin with. Your beans will have flavor cooked in, if you season at the beginning. If you need to add more water, add more seasoning if neccessary, while cooking.

      Complete Myth.... Cooks Illustrated and Kenji Lopez-Alt both disproved this. Salting during the soak is critical in avoiding rupture during cooking.

      Julie Wallace ,wrong. I have never had tough hard beans. I always add salt to my over night soak of pinto beans and then I rinse in the morning and add clean water and guess what more salt with my other seasonings. Comes out perfectly soft everytime with great flavors

    I read most of comments here and I'm so proud of you all that are canning. It's an lost art. Just remember your doing your part to help feed your family and others. Its so beautiful to make a nice basket to give to your neighbors at Christmas time. It says a lot to fellow man. And its ok to ask for your jars back. I did this for years. Because many people know how expensive they are and how much work you put into it.

    I just found your channel, I'm so proud of you for canning! It is an art to do that many dont take the time to learn. If you can do this you are a woman of Gold. You can feed your family on very little and no food goes to waste, plus you save money if you are willing to put in time and effort. I am 64 now and disabled but I raise three children on my garden for years. For years I had a garden and canned every thing I could get a hold of to feed my children. You can beans like I did! I didn't think I could do it that way but God helped me in my research and the 1st time I did it I was so happy that I didn't have to go to store any more for beans. And believe me we ate a lot of beans. From then on I always cann beans for camp outs and for winter. After planting my garden in spring it was the 1st thing I canned before every thing else for the season. I'm no expert but I canned like my grandma and mother. And I never had any spoilage or anything to go bad. Always remember to clean everything and clean jars and new lids.
    I am just so proud of you!

    I just stumbled upon your channel and now I'm watching the canning mix. I absolutely love canning. Yes, it's a lot of work but the absolute joy that I feel, knowing I have taken those steps to care for my family... there's nothing like it. I love it. I had no idea I could can dry beans (I know, it's "not approved"). I have always overnight soaked them and put them up that way. It's not hard, but it's time consuming and you have to think about it in advance to prepare everything. This knowledge is a game changer for me, so thank you. I've been canning for probably 25 years so I'm not a newbie, but this was new to me. I can't wait to get into my kitchen now!!!

    Nicely done! Now, I have canned for years and always cooked the beans before canning them. Never in a million years would have thought of literally cook the beans in the jars during the canning process. Thank you!
    We did something I had not done before. Now, I have canned over a fire pit because canning in the house in the summer is just not a fun thing to do. But, while we did not have to use electricity or gas to can and used wood fire, it still used a lot of wood. I get wood for free, but my time to cut and split is still of value. Then as we began using a rocket stove to cook with, I looked around to see if anyone else used it to can. And yes, there are some who do that! A rocket stove uses far less wood/sticks/ twigs to cook or can than a fire pit does. And can be faster to get to pressure than a gas or electric stove.
    So, in the event of a serious power failure that is prolonged and propane supplies go kaput, rocket stove technology is the answer. A lot of methods to build and use them here on youtube so search and find the ones that suit your needs.

    You are wonderful. My grandmother used to can food. She had a garden. She canned everything from squash to corn to beans. I know how that fresh food tasted. I don't like tomatoes or other things from the grocery store because of that. I live alone..canning isn't really something I need to do..I barely cook..but, you are amazing if you have kids and a family. You are great. Thank you. You almost made me cry with the memories of my grandmother. She was so resourceful.

    I grew up with huge gardens; my grandmother canning and my mother cans, but I never have... when you move from the little country town to the city you think you don't need to know these skills, but honestly... it's probably even more worthwhile to learn and do in an urban environment with the best healthy ingredients you can find.     Great video and I love your reasons for making this video. I may not be the normal audience for this video, being a 22 year old guy who is only responsible for myself. But I've got my own reasons for being into preserving foods. I usually ferment or pickle foods., but it would be useful to me to learn canning so that I can have other options for flavours if I need or want them.

      You could start with what you can be canned in a water bath canner as they're a lot less expensive to buy. Then add pressure canning later.

      Hey, Mate! I just turned 50 but grew up from age 4 cooking, sewing, cleaning, canning, chopping logs (Daddy didn't have no boys...), gardening, raising animals, fishing, and so on, in a very affluent area of San Diego. The Hicks of Point Loma! I had to have my Mum explain to me what a debutante was. And when she did so, I said, quite naively, "Why should a girl need an 'introduction to society'? If she were at all interesting, people would have known her by then..."
      Mum & Daddy born in 1935/1920 respectively, of German immigrants, HAD to economize through the backlash of the depression. These life skills I may or may not use again, but the CONFIDENCE that this gave me, as well as being able to spend time with my parents and sisters in productive, useful, bonding time, made me such a better person than I would have been otherwise. Work and travel around the world schooled me as no other activity could have. I KNOW that I can do anything I put my mind to because I HAVE done so. Humility and understanding were a huge part of that training as well. Daddy was a surgeon, Momma a Special Ed teacher, and they never ever forgot their roots and how hard that they worked to get from poor to the American Dream. And I could not be more grateful.
      Thank you, EZMawloc, for carrying on what has made our country flourish like no other.
      You are a special young man to see the value inherent in these activities.
      And not just because of 'canning'!!!
      It is because of self-reliance, belief in one's ability to change their lives for the better, and, for me, after being luckily able to see almost all regions of the world together as a family, I know to some degree what our country has that no other country does. And we should be unashamedly proud of that difference. Gifted with the understanding that America is a very unique, historically UNTRIED social experiment that continuously shows it's denizens what can be accomplished with Democracy, self-determination, and guided by that 'living document' called "The Bill of Rights".
      It's not about beans. It's about hearth and home. Our loved ones, our ability to choose our own destiny, and if that means canning freaking beans, so be it!
      Thanks, EZ, for explaining your place in the world. While 50 years ago that would have been considered 'normative', unfortunately, it isn't anymore.

    When you found a small stone in the beans, It brought back memories of Rock Soup. Did anyone else have rock soup as a kid? I'll explain in case this is uncommon.
    It was an activity we did in preschool where there was a contest for us all (the preschoolers) to find 'the best rock'. Dont know how they judged that. But the best one would then be washed and added to a big pot of stew (it was a big rock so no one would bite it by accident). And the activity was based on a storybook where the secret ingredient of a witch's stew turned out to be rocks.

      Stone soup. and the story we had was where they said they were making soup from a stone and convinced people to contribute ingredients. We all brought ingredients that were put in a crock pot together for our own stone soup.

    I raised 4 boys also. Lots of years on a tight budget, meant everything was home made. I used basic mixes and canned a lot. I have never canned beans. I have always wanted to but didn't have the confidence to do it. Thank you! I love to dry my own red bell peppers. They smell so yummy they make me hungry just smelling them. I use a coffee spice mill to grind up small batches of Bell pepper powder. That way it's always fresh. I never had any idea that there was this kind of a community and support out there. So glad I found you!

    You are so right about this being a dying art. I did grow up with both Grandmothers that canned. One set of grandparents grew a large garden. My Brother and myself, would go out and pick any veggie you could think of. My grandparents sold their extra produce to a market in town. Sometimes my brother and I would have a little roadside store. I've lost all grandparents and my parents. You can't imagine how many times I wished that I had really listened and watched them much closer. I do use the water bath canning and pressure canning. Thank you for sharing your knowledge and maybe it will not be a lost art. My daughter has now started using a power cooker. That's how I got used to the pressure cooker. Hope she will continue.       L g, Walmart sells a green jar lifter like she is using. They also sell a Ball canning book.

    I'm still freightened of canning. But you lady are therapy for me. The more I watch, the more I get closer to getting past the fear to giving it a go.

    I canned for years when i lived in the mountains of East Tennessee. I now live in North Carolina in the city. I don't can anymore. But would like to start canning again soon. Enjoyed your video. Thanks for sharing.👍

    I am seeing this three years after you made it, and after I just canned some pintos myself yesterday. I am new to it, and confused about the amount of beans that go into a pint jar. I had watched another canner, and did just what she did, which was to use 1/4 cup of beans per jar, and my jars are packed quite full after canning. I wonder if yours will be smaller and firmer, or if mine will be larger and maybe mushy! I will have to open a jar right away to see! I loved hearing your lids sealing as you spoke. That’s music to any canner’s ears! Thank you for showing your way, and how much we can save by doing this ourselves. No one is too old to learn, either. Tomorrow is my 80th birthday, and I just started pressure canning this year because we will all be facing hard times by spring and summer 2023.

    My husband and I worked for a farmer years ago. He taught us canning and other skills. Thanks for teaching canning. It's an important life skill to know.
