Even though I don’t work on the hot stuff, I do enjoy watching the videos cause you try to make stuff simpler to work on.

Where are you buying pitco parts?

I’m non OEM on them, partsfps sometimes, sometimes Amazon. I’m honest with my external locations if they want OEM and the price differences. 🤷‍♂️. My stores get what’s the best value just above pure junk and I’ll do whatever requested externally

How about liability? what if it will catch fire for some reason(not necessary because failed parts), investigation will point on hack conversion. is there way to protect yourself?

Those are always unique scenarios.. Simple answer *not legal advice* nope. Always maintain a piece of equipments UL listing or there will always be avenues of liability. With clear scope of work and documentation including requests and approvals you’ve laid the groundwork. In worst case scenarios it always hits the fan and becomes a blame game…. My scenario is unique because I do this at locations where I am the facility manager. But let’s go deeper down this rabbit hole…. If you order a “compatible” thermostat but not the OEM pitco 180 dollar one, you’ve done the same legal thing as a complete conversion. That fryer has been altered from its approved state and you’re now on the maybe liable list. I had this conversation on LinkedIn and an actual investigator was involved. He explained that after a fire he gets to come in and of he finds so much as one of the 5/16 screws missing it’s pass the buck time. He’s hired my the manufacturer to say “not our fault” then the owners legal calls an investigation to say “not our fault” it’s the service guy..
the systems broken too to bottom.

But if the hi limit is opening on over temp you physically would have to reset it and they or you will know.

You can purchase the components individually but promise me it’s way simpler to do this assy. Ordered one last week :-) Good luck and let me know how it goes.
