27-32 seconds is in line. 24 is under extracted.

37 second shot does not necessarily mean overextracted. Depends on your coffee.

Brew ratio I find makes a lot more impact than time, as long as you're not getting 18g in 36g out in 10 seconds (way too fast). Shot timing is more of a guide to getting your grind size right.
But I've had some 1 minute shots that were really great :D

How would they taste if the grind was adjusted to have the same yield in the same time? 🤔

Could you please help me decide for the love of god! I need 1 grinder to do both espresso and filter. So far it seems the bigger the flat burrs the more clarity and I need to stay below £800 . So I am stuck between df64 with SSP upgrade or df83 with stock burrs. Which one would you choose and if SSP then which ones? You seem to like MP but will they also give good filter? Thanks!

The MP burrs are not known for texture and very good at clarity plus longer ratios, so the result makes sense.

Correct. The name High Uniformity is confusing. MP burrs are Unimodal and produce fewer fines.

Hi Hoon, did you Test the SSP sweet lab burrs already?

He's got videos with those burrs he seems to like em, but I'm not a fan. They give good body but not a lot of flavour clarity.

That is light roast all the way. Nothing like medium.

30:20 MP Burrs should give less fines than the HU. Which is why you got less body, but more flavour clarity.

coffee… incredibly complex with so many variables

Lack of fines are always going to lead to a worse tasting shot. You need that slight variation in grinds to make a more exciting, nuanced shot.

There's always some fines, but more unimodal / less fines means the extraction can be more even, so you can get more flavour clarity without over extracted fines causing bitterness which obstructs the flavour clarity. Might not be as complex in ways, you won't have a lingering aftertaste (which I believe is from fine particles hanging around) and texture will be different, more tea-like.

Mp is known to make a better light and medium roast. Hu is only good for dark roast. Hu doesn’t do lighter roast good. Also 24 seconds is under extruded

i know this is old but SSP need to chnage the names XD the Mp have more uniformity than the "high uniformity" burrs

How anyone can dial in without tasting or smelling is beyond me. Must know something I don’t!

Definitely tasting, is good to do, even if you think the shot is going to be bad, sometimes you may be surprised. Even if it's sour or bitter, add a little sugar or milk and it's gonna be good most likely.
I've only had a handfull of coffees that were so bad I didn't want to drink them at all, and that was more due to the coffee itself being bad, and then pulling the shot bad as well.
