8吋海綿蛋糕的焗爐溫度? 時間會是多少? (份量照按比例放大吧?) 謝謝.
焗爐溫度不變,時間上可以加3-5分鐘後再觀察蛋糕變化。份量是按比例放大就可以。但上述情況前提是你的模具高度跟影片用的接近。其實經驗蛋糕師用一個份量去焗蛋糕,時間會因應所用模具作調整,新手焗蛋糕要注意的除了蛋糕糊的做法,另一個是只能放6-7分滿。給我的經驗你作參考,我焗蛋糕用2吋高的慕絲圈(大概只能切到影片中蛋糕2片),180度焗22分鐘。(但我自己用的份量,材料跟影片不同)其實如何任何過程有改變,都要一直嘗試直到成功,焗蛋糕看似簡單,實際操作起來要有很多經驗與心得才能成功。像影片中這種又高又鬆軟的海綿蛋糕,要每次都成功不容易的。她很厲害👍

是為了增加蛋香味而不會增加總份量液體所佔比重。例如在同一份量上用了3隻全蛋而不是2全蛋+1蛋黃,蛋糕糊會較稀,蛋糕出爐後會矮一些
