Hi Jill, I did make the caramels again for my family for Valentine’s Day and they were super pleased. I cut the candy into squares and rolled them in pecans. Wrapped the Carmel’s in cellophane paper and placed into a tin with hearts. Thanks again
Hello from Alaska. Got snowed in so decided to make these. Never have corn syrup on hand so use honey. Y2K I bought 120 #. Got a few quarts left. Any way I poured mine in silicone miniature brownie pan makes 24. Used the remaining caramel for pretzel 🥨 rods. Awesome. Your recipe is fast. Used to make this with the cream method took about 45 minutes. This is fast. Thanks for posting.
Thank You so much for your wonderful recipe. Many of the other caramel recipes use the microwave which I never use, plus corn syrup which is not to my tastes. I was already thinking of an alternative. Can’t wait to make these. I can smell them cooking. Thank You again, Juliette
There is a clip on the thermometer to put it on the side of the pan so you can adjust it do not touch the bottom. I have made fudge and stuff for many years with a candy thermometer you don't just stick it in. Also I used to make the water test with ice instead of cold water
I made these today without a candy thermometer (mine broke a few years ago). They are delicious and the nonstick pan was a great idea. Clean up was a breeze. Thanks a million, your tutorial was very helpful.
YESSSSS YUM, my first time making caramels.. YUMMY and I even put them in silicone molds.. Woo hoo, thank you for being spot on with your instructional video
I stayed true to your recipe Jill but added cinnamon & pecan when I added the vanilla and of course salt at the end. It smells amazing and looks good so far , we will see when it comes time for cutting in 45 mins. I’ve tried caramel before and it sucked, so hopefully hopefully it turns out it 2020 girl! I pray your family is well! Ours is and for that, we thank God! This is showing up to you on my husbands email but he is at work and it’s me Johna having fun at home!
I made these yesterday and they were so good! My kids loved them. Only problem is after cutting them, they melted and pooled together over time. How do you make sure they stay into squares?
It sounds like it needs to be cooked a little longer. You can melt it down in a pan again and cook a few more minutes. The longer it's cooked, the firmer the caramel. Good luck!
Great video- Thanks! One thing I would have liked is to see you take a bite.. this shows exactly how hard/soft they are. I personally prefer a bit harder of a chew; but I couldn't quite tell where they were just by looking at them. 🙂
Just made the first batch. Oh my! Yummy in my tummy! The next batch will be turned into chocolate covered turtles. As good as this is, the turtles will be heavenly! Thanks for a great, easy to remember recipe!
@@TheCarefreeKitchen I accidentally added a lot more sweetened condensed milk. Instead of 8 oz, I added the whole 14 of can. Everything else was just one cup. The caramels came out so creamy that those who tried them say they are the best they've ever had. I know the way they melt is not like any I've had before.
If you try the cold water test, it’s better to take your pot off the heat as you test. Also it’s best to individually wrap the caramels as soon as they’re set , cold and cut because they’ll rapidly get impossibly sticky without wrapping. In wrappers they’ll keep far better. Tbh I’ve never had a batch of caramels last more than two days before being nommed so I know they’ll last that long at least lol.
I'VE ALWAYS BEEN A LITTLE SCARED ABOUT MAKING CARAMEL, BUT THAT FEELING IS NOW GONE ESPECIALLY AFTER VIEWING YOUR EXCELLENT VIDEO. YOU MAKE IT LOOK SO EASY. THANK YOU. I LOOK FORWARD TO SEEING MORE OF YOUR RECIPES. TAKE CARE.
Masha Allah. Bataye ke aap ye kya bana rahi hain? You tell me that after adding sugar to the caramel chocolate, What did u put jaggery or something else?
Over the past few weeks, I have attempted pumpkin caramels several times, and none have been very good. So I am going to try plain caramels. Having reviewed dozens of recipes, what I find interesting is that some recipes recommend NO STIRRING, while the others recommend CONSTANT STIRRING. Go figure!
That looks so good, but seeing as i dont have a thermometer, ill have to do the water test. I cant wait, however its 1 am right now, so ill wait until tomorrow!
Made this recipe today it came out awesome but it was real sticking and soft it wouldn't cut like yours did in the video what is I do wrong it keeps getting real soft after it sits out for a little bit. I have to keep refrigerating to cut and wrap. Any suggestions?
I made this tonight and it's Soo good!! The only thing is my candy thermometer broke 🤣 but I did the cold water test and I thought it was a soft ball but it's been sitting out for about 40 min .. (it's still sorta warm underneath my glass pan) but when I cut it the top is fine but the bottom looks to be just under soft ball. Can I throw it back in the pot ? If so, do I bring it to a boil again and try to get it to 240? I have a new thermometer coming tmw
I have this recipe EXCEPT- the sugar is only the karo (no sugar and brown sugar) I should try this and see how it compares! Also what Pan are you using?
I’m less than a minute in and I’m already giving you a like and follow just for pronouncing caramel correctly! Everyone knows the second “a” is silent. 😂❤
Just made the recipe. I think I messed something up because as it cooled, it crystallized. It was silky smooth but as it got to room temp, it has the sugar texture back. Tastes great though
This probably happened because you had some sugar crystals still on the side of your pan while you were cooking. To avoid this, mix your sugars and water together, warm it a little and put a lid on it for a few minutes. The steam will wash any sugar crystals back into your mixture, then add the rest of your ingredients.

Hi. Did you use salted butter or unsalted? I wanted to make sure.
I used salted butter. And it turned out great.

Thank you so MUCH! This is a wonderful recipe. I just watched this video, made a batch and my husband agrees that it's one of the best he's had. ❤️

yes, you bet!
Awsome try using heavy cream instead of condensed milk
Awesome looks delicious can I use coconut sugar instead of regular sugar I'm trying to cut back & out sugar?
I’m not sure. 🤔 I haven’t ever tried that.
How fast will this set up. Could I put it in a piping bag and squeeze it onto my cookie?

Can we make it without the corn syrup? Is there any substitute for it?
You can use 1 cup of sugar dissolved in 1/4 cup water.
@@TheCarefreeKitchen Will do!! Thank you for the recipe and thank you for replying :)
Thanks for the recipe
Most welcome 😊
Is there any reason why not use 2 cups of white sugar? Is there a particular reason to use the white and brown? Or only for color purpose?
Either one works!
Delicious....can they be individually wrapped in waxed paper?
Parchment paper would be better. It's stick less.
This is the best Carmel ever.
Looks great 👍🏾
Thank you so much! ❤️
We don't have corn syrup in South Africa - can you use golden syrup (sugar cane syrup)?
Yes, or the clear syrup.
These are SO good!
This looks so good I want to try it right away. Just a question, though. How do you store this? Does it need refrigeration?
You can store it in a covered container outside of the fridge for a couple days but it will keep in the fridge for a couple weeks.
These look so easy; I'm ready to try them! Thanks for the great step-by-step instructions
You are so welcome!
Can i skip the corn syrup please answer me very soon i am excited to try this recipe🤗
The consistency wont be quite the same but it'll be close.
1 cup of butter butter would be how many grams? Approx

Yes. It's best to have a mixture of both but just white sugar will work too.
@@TheCarefreeKitchen thanks!
How much regular milk if you don't use sweeten condensed milk???
120°C soft stage...
make this with thc butter yum
Can you wrap these in wax paper?
Parchment paper will probably stick less!
Oh I want to try thanks!
Thank you for sharing.

Can I put any flavor I want in this, like chocolate, strawberry?🤷🏾♀️
an extract type of flavoring would work great!

I’m not sure what happened. Did you use evaporated milk or sweet and condensed milk?

what to add if you want to make it as frosting on cakes

is it okay if i use dark brown suger?
Yes!
