There is a clip on the thermometer to put it on the side of the pan so you can adjust it do not touch the bottom. I have made fudge and stuff for many years with a candy thermometer you don't just stick it in. Also I used to make the water test with ice instead of cold water
Hi Jill, I did make the caramels again for my family for Valentine’s Day and they were super pleased. I cut the candy into squares and rolled them in pecans. Wrapped the Carmel’s in cellophane paper and placed into a tin with hearts. Thanks again

Any way I poured mine in silicone miniature brownie pan makes 24. Used the remaining caramel for pretzel 🥨 rods. Awesome. Your recipe is fast. Used to make this with the cream method took about 45 minutes. This is fast. Thanks for posting.

It sounds like it needs to be cooked a little longer. You can melt it down in a pan again and cook a few more minutes. The longer it's cooked, the firmer the caramel. Good luck!
If you try the cold water test, it’s better to take your pot off the heat as you test. Also it’s best to individually wrap the caramels as soon as they’re set , cold and cut because they’ll rapidly get impossibly sticky without wrapping. In wrappers they’ll keep far better. Tbh I’ve never had a batch of caramels last more than two days before being nommed so I know they’ll last that long at least lol.

I made this tonight and it's Soo good!! The only thing is my candy thermometer broke 🤣 but I did the cold water test and I thought it was a soft ball but it's been sitting out for about 40 min .. (it's still sorta warm underneath my glass pan) but when I cut it the top is fine but the bottom looks to be just under soft ball. Can I throw it back in the pot ? If so, do I bring it to a boil again and try to get it to 240? I have a new thermometer coming tmw

Made this recipe today it came out awesome but it was real sticking and soft it wouldn't cut like yours did in the video what is I do wrong it keeps getting real soft after it sits out for a little bit. I have to keep refrigerating to cut and wrap. Any suggestions?
Just made the recipe. I think I messed something up because as it cooled, it crystallized. It was silky smooth but as it got to room temp, it has the sugar texture back. Tastes great though
This probably happened because you had some sugar crystals still on the side of your pan while you were cooking. To avoid this, mix your sugars and water together, warm it a little and put a lid on it for a few minutes. The steam will wash any sugar crystals back into your mixture, then add the rest of your ingredients.

I have tried twice to make caramel. The recipe I used is slightly different- Evaporated milk instead of condensed. And both time the thermometer would get to the 240° but in the water test it didn’t ball up! But I panicked with not wanting to go above 240 since the recipe is was following says over 238 would result in too chewy caramels! My first batch is in jars now as sauce.... and lord knows how this batch will turn out. 😭 I don’t think I’m cut out for making caramels!

Right now in Dec 2021, we can't even find light karo syrup in a store. We had to go to Amazon. What's a candy thermometer? Kidding. My mother never needed one. She only used cold water for her candy.

You can store it in a covered container outside of the fridge for a couple days but it will keep in the fridge for a couple weeks.

You can use 1 cup of sugar dissolved in 1/4 cup water.

I'm not actually sure what golden syrup is. You could always try it and if it doesn't work quite right you'd have caramel syrup.... 😜

Make it with sweetened condensed milk, not evaporated milk. They’re very different. I promise it’ll work!
