This video is so good and timing is incredible for me. My wife and I love LOVE getting wine pairings with our fine dining meals. It is sourcery. We don't understand it, but when the food and wine together is more than the sum of the parts it is magical. So my idea for an Xmas gift was curating some Pet Nat pairings, and honestly I have been spinning my wheels. Looking to the internet, reddit, NYT cooking, I am all over the place. Do you have any Pet Nat Pairings you love? She loves effervescent wines with Medium funk and typically anything from All Together now. Also we are very adventurous eaters but day to day we are die hard Trader Joes people
Thank you for the love! The market is always changing and if you have a store you trust like All Together Now I would strongly recommend asking them for a suggestion. That way they're guaranteed to have it as opposed to me giving a suggestion and possibly taking you on a wild goose chase :)

I usually like your videos very much. This one... I stayed until the end and was glad for it. The first 59 seconds I strongly disagree with. I would never do what "madame" did. I always go for a complimentary or a contrasting pairing. "If you love X wine, drink it every time and pair it with everything" is not what I would think of as good advice. Simply put, there are foods that will ruin the wine and wines that will ruin the dish. A high acidity meal (heavy on lime or lemon, or even some oranges) will make a full red taste bland at best. A full bodied highly tannic red will give a fatty fish dish a metalic taste that most people will find quite unpleasant (I'm most people, BTW). There are, as I am sure you know, examples of this with white wines too. The rest of the video goes into the traditional advice on how to pair wine. All good advice, by the way, and I even smiled at a couple of things, wine and good memories always go hand in hand for me. So, I'm really sorry to say, this video, I didn't like very much. I don't mind different opinions, we all have our own, and when it comes to wine, opinions vary widely. But saying that pairing is B.S. or that you can pair your favorite wine with everything... sorry, I strongly disagree and I think you are doing a disservice to those who follow you in order to get good wine advice. Again, just to be clear, I enjoy your channel and your videos and IG posts very much, you are clearly very knowledgeable and have a gift for sharing wine information and the nuances of the wine world. The first 59 seconds of this video, however... you can probably toss out and still have a great post.
Howdy! I appreciate the thoughtful comment and I know you've enjoyed my videos in the past :) Our mission here at Slik is to make wine approachable to everyone. Everyone has a different relationship with wine, and our job is to meet people where they're at and expand people's perspectives. The story was a way to show that there can be two valid yet opposite schools of thought. If the upper-crust Parisian Madame says "screw it" to wine pairings, we think it's good to bring up! People like what they like. I have also paired wines for fancy tasting menus and I think presenting more classic sommelier ideas also presents a different kind of learning for different people. It's okay if the first school of thought isn't for you, but I'm glad you found enjoyment in the second! Thank you for being part of the Slik Squad and I look forward to your future feedback.
