Living in Bavaria I love Aschenblau! I like to eat it with the JJ Prüm Sonnenuhr Spätlese. It has sweetness to deal with the salty cheese, it´s fairly lactic so the cheese still presents as creamy and rich and the wine has a fair amount of sulphur so the smokiness from the ash really gets intensified. The laser like acidity leaves the palate fresh and clean after each bite.
@@visforvino Ausas Interpretacion with Gouda was stunning yesterday too. With the camembert my favorite wine is Monte Oro from Sardinia. Not sure how easy they are to get in the US but they´re sensational if you can find them
Where do people get this "blue cheese smells like feet" bs from? Blue cheese does not smell like feet, while some other types of cheese do. Those are the ones with an orange rind, like Munster or Limburger.
