After trying so many times I finally got delicious rawa idli by tarla Dalal. Amazing chef she was! Tips- batter should never be runny. Make tadka in ghee. Take thick yogurt. Add eno at the end, whisk it and directly pour in moulds without waiting.
Hey ranveer.. I'm from Karnataka and I make rava idlis.. just a quick note.. it's not necessary to add khatta dahi. It's ok even if u add regular dahi. No need to refrigerate the batter also. And it's important which type of semolina we take. The medium semolina is the best. Other wise doesn't taste good. And ya.. instead of adding soda can add Eno. Works same.

I tried & came outwith laurels (first prize) - ONE NEEDS PATIENCE - ON 1st day I mixed the Ordinary Rice + little Udad Daal + little chana Daal + the very very little bitter Daal AND SOAKED THEM OVER NIGHT. Next day grinded BUT PASTE. again let it rest for another night. WOW THE MAGIC OF FERMENTATION COMES OUT GREAT & JUST STEAM IT. NO SODA-BICARBONATE NO ENO. have patience. PATIENCE.

Thank you chef for the best Rava Idli recipe so far. I made them and they were so light and fluffy. I left the mix to ferment for 1/2 n hour and kept it in sunlight. That somehow did the magic. Just sharing.

Well nicely portrayed but 2 points to be remembered. When you saute the semolina, chana dal also goes with the tadka along with broken cashew. Also Rawa Idlis are not served with sambar but with saagu😉

I kept the batter aside for 40 mins and steamed the idlis for around 10 mins... And made 10 medium sized idlis from 1 cup rawa.. It turned out awesome
