Copycat Shoney's Strawberry Pie

  • This copycat Shoney's strawberry pie goes together in no time! Big, juicy strawberries are piled in a flaky baked crust (use homemade or store bought to save time!) and covered in a thick strawberry glaze that's made super easy with Jello.

    Ingredients:
    2 cups strawberries, washed, hulled, and sliced
    2/3 cup sugar
    3 tablespoons cornstarch
    1 1/4 cup water
    3 ounce box strawberry gelatin
    1 9-inch pie crust, store bought or homemade
    Instructions
    Bake the pie crust according to instructions (usually 350F for 15 - 20 minutes).
    Let cool.
    Place berries in the pie crust. Set aside.
    Mix the sugar, cornstarch, and water in a heavy saucepan. Stir until all the cornstarch is dissolved.
    Bring to a boil, stirring occasionally.
    Cook until thick and clear.
    Remove from heat and stir in the gelatin until all the crystals are dissolved.
    Pour carefully over the berries in the pie crust.
    Refrigerate pie, covered, at least 4 hours or overnight.
    Notes
    Adding a few drops of red food color will give you a deeper red color.
    You can tell that the Jello is fully dissolved by putting some in a spoon, dipping your finger in and rubbing the glaze between your fingers. If you don't feel any crystals then you're good to go.

    With the shortages everywhere and prepping on everyone's agenda. I said that I needed to find the strawberry gel . Because it's as if it's non existent in my area. And here you are with such an easy and beautiful recipe

    I used to make a fruit pie every Sunday. After I picked, washed, cut up the fruit, I would, in the case of soft fruits, bake a single pie crust.
    To make the syrup, I put in sauce pan, 1 cup water, 2 TBLSP corn starch, 1 cup sugar and boil until thick, set aside and put in a few drops of red food coloring. Put in fridge to cool. When cool, put fruit into crust, pour syrup over, and place pie in fridge. You don't really need jello. I use this for peach pie, rhubarb pie (baked in a raw crust with a top crust) apple pie (baked in a raw crust with a top crust) and elderberry pie, that uses a prebaked crust.

    You're correct about the food coloring in Shoney's pie. I used to work for the company that made the strawberry glaze that Shoney's added to their strawberry pies. Red 40.
