    The marinade is almost exactly the same for Korean Galbi short ribs. Try adding cola next time for tenderizing and sweetness

    Asian pear also helps tenderize the meat. Used in Korean marinades

    Made these on the weekend - with half inch thick Wildridge Wagyu short ribs - used the same sauce, 24 hour marinade - cooked on charcoal and wow...compared to store bought pre marinaded ones - and no comparison...me and the boys inhaled these.... Sam never fails to deliver.

    Nice! The infamous Azeka "sweet meat" recipe. Growing up I used to bring back a few lbs of these ribs to honlulu after the annual Maui surf trip. Sadly, Azeka Market is no longer around but these ribs will live on through people like you that keep it alive! Thank you!

    So I made a dish at home that I haven’t seen elsewhere and I called it a Montreal grilled cheese and it’s more or less as the title suggests. It’s basically a grilled cheese with Montreal smoked beef. So, bread - cheese - meat - cheese - bread. I had it with jalapeño aioli on the side and it’s soooo good. I’d love to see you make it and your take on it. See if you like it as much as I do 🥰

    Believe it or not...a kiwi is a great substitute for the Asian Pears. Has the same tenderizing enzyme. Just don’t marinate it to long or it breaks down the protein too much. Looks good Sam! 😃🤙🏻

      Yes Koreans started using Kiwis for marinating meats (1) for tangier taste and (2) faster meat tenderization compared to marinating in asian pears.

    I’m from oahu hawaii we have something called kal-bi we soak them in sohyu or soy sauce then we add sugar green onions garlic and ginger overnight then grill them🔥🔥

    ►short ribs
    ►soy sauce - 1/2 cup
    ►water - 1 cup
    ►sugar - 1/4 cup
    ►honey - few TBS
    ►mirin (sweet rice wine) 1/4 cup
    ►asian pear - half
    ►onion - half of small
    ►ginger - small piece (1" sq)
    ►garlic - few cloves
    ►sesame oil - few tsp
    ►black pepper - 1/2 tsp
    ►green onion (for garnish)

    In Alabama we call this cut "country style ribs". Just ask the meat cutter at your local store to cross cut a Boston butt about 3/4 to 1 inch thick then halve those slices. Same results for about $1.18 a pound around here, when on sale. I like the looks of Sam's marinade, I will give something similar a try next time I do this.

    Hey Sam, You ask sometimes for show ideas. How about Pickled Shrimp? A southern delicacy. Those who don't like the sound of it haven't tried it. Medium fresh shrimp, sliced onionns, mushrooms, capers, .... endless options. Enjoying the shows!

    I always use a half a onion with some type of oil to coat the grill. Use a large grill fork.

    Hey Sam, sorry to nitpick. But when you turn your food on the grill, it is not 45°. A 90° turn will give you the squared grilled marks. Or, you could say "rotate them from 45° left to 45° right" and that would be 90° total...

    The Asian pear has an enzyme that helps break down the meat and make it tender. Im not sure if "regualtion" pears have the same but that is the real purpose of it. Pineapples and kiwis do the same.

    I love your videos and recipes. I was able to make your garlic bread chicken parmesan sandwich(minus the bread and on some angel hair pasta instead) and your croque madam recipe but with paprika added to the sauce and I used ghost pepper cheese instead of the cheese you used. They were great and super easy to make!!

    Try cutting slits in the ribs and soaking them in water to get rid of the blood , would taste so much better

    The pear is added to tenderize not so much sweetness. You could also add an (red) apple.

    if you like the thicker cuts of short rib you should try kalbi jjim from a korean restaurant. it uses thick cuts of braised short ribs that come out super tender

    You can save more ginger meat by pealing (scraping) it with the tip of a spoon.
    Used this method when I worked in Japanese kitchens. Not quite as fast, but you can make up the time in another process.
    Chef doesn't like to waste food!

    The KOREAN pear serves as a quick meat tenderizer. U can sub pineapple too.

    Sam a trick for the grill when you don’t have oil. You can cut an onion in half put a fork on the back part of it and the flat part use it to brush the grill it cleans it and it leaves a little of its juice so food won’t stick

    Those ribs look great 😋. Speaking of those ribs I believe the cross cut ribs are often referred to by butchers "Flanken cut". And since Eve was created from Adam's rib. Looking a little meat on your women is kind of the same as liking a little meat on your ribs 😂. I'm so happy for you and your family to have such a wonderful little vacation.
