What length screws should I use (both for the ceiling and for the outside)?
1/2 to 3/4 inch are very common sizes.
Do these lights in the pop up run off 12 volt or the 110volt?

Are the wires between the light and the port exposed at all?
No. You can easily place them right next to each other hiding the wires.
