What We Eat in A Week | Large Family Cook With Me | Alaska

  • Join me for a week of cooking for my Alaska family of 6! Recipes listed below!
    GUMBO:
    1 cup flour
    3/4 cup bacon drippings
    1 cup chopped celery
    1 large onion chopped
    1 large green bell pepper chopped
    2 cloves garlic, minced
    1 pound andouille sausage, sliced
    5 quarts water
    7 cubes of beef bullion
    1 tbs white sugar
    salt to taste
    3 TBS hot sauce
    1/2 tsp cajun seasoning
    4 bay leaves
    1/2 tsp dried thyme
    1 (6 oz) can tomato sauce
    1 (14 oz) can stewed tomato
    2 (10 oz) packages of frozen okra
    2 TBS white vinegar
    2 tsp file gumbo powder
    1 pound lump crab meat (or halibut)
    3 pounds uncooked medium shrimp (peeled and deveined)
    1 pound shredded chicken
    2 TBS Worcestershire sauce
    Make a roux by whisking the flour and 3/4 cup bacon drippings together in a large, heavy saucepan over medium-low heat to form a smooth mixture. Cook the roux, whisking constantly until it turns a rich mahogany brown color. This can take 20 to 30 minutes; watch heat carefully and whisk constantly or roux will burn. Remove from heat; continue whisking until the mixture stops cooking.
    Place the celery, onion, green bell pepper, and garlic into the work bowl of a food processor, and pulse until the vegetables are very finely chopped. Stir the vegetables into the roux, and mix in the sausage. Bring the mixture to a simmer over medium-low heat, and cook until vegetables are tender, 10 to 15 minutes. Remove from heat, and set aside.
    Bring the water and beef bouillon cubes to a boil in a large Dutch oven or soup pot. Stir until the bouillon cubes dissolve, and whisk the roux mixture into the boiling water. Reduce heat to a simmer, and mix in the sugar, salt, hot pepper sauce, Cajun seasoning, bay leaves, thyme, stewed tomatoes, and tomato sauce. Simmer the soup over low heat for 1 hour; mix in 1 teaspoon of file gumbo powder at the 45-minute mark.
    Meanwhile, melt 2 tablespoons of bacon drippings in a skillet, and cook the okra with vinegar over medium heat for 15 minutes; remove okra with a slotted spoon, and stir into the simmering gumbo. Mix in crabmeat, shrimp, and Worcestershire sauce, and simmer until flavors have blended, 45 more minutes.

    FREEZER BREAKFAST BURRITOS: thehammhomeste...
    7 LAYER:
    2- 3 thinly sliced potatoes
    1 large thinly sliced onion
    3/4 cup white rice, sprinkled around
    A layer of frozen mixed veggies
    A generous layer of minced meat
    1 large tin of tomato soup
    Bake in the oven for around 1.5 hours, or until the potatoes are cooked
    Serve with fresh bread
    STIR FRY/CHOW MEIN WITH STEAK:
    Slice steak thin
    Veggies of choice ( carrots, cauliflower, broccoli, cabbage, peppers)
    Cook in a skillet with oil and soy sauce
    Optional: Add a few tablespoons of Peanut Butter
    Cook spaghetti (add some soy sauce to the water)
    Mix noodles and veggies
    Serve with a side of pineapple
    SPAGHETTI SQUASH:
    Poke holes in the squash with a fork
    Place in Instant Pot with 1 cup of water
    High pressure for 12 minutes
    Allow to cool slightly
    Cut in half, remove seeds, and remove squash with a spoon.

    Hi Friends, the description of the fizzy drinks made me laugh, and then Mark trying not to laugh about the taste of the spruce drink during a downpour🤣🤣, someone in marketing was having a good day!!     My mom always made the potato casserole but she used fresh veggies because years ago they didn't have frozen ones. She called it meal in one. We loved it.

    You should try canning some leftover soups, it’s excellent for long term storage and saves the freezer for other things and you have a quick meal when needed

    Wow, all the recipes looked so good. Lots of great ideas. I bet those Breakfast Burritos would cook nice in the Airfryer, that way you don't have to be chained to the stove. I do that all the time, burn stuff because I forgot. But Burrito boats.., watch out "Chipotle" might snatch up that idea. The Soda's looked so good.       Hello Kim! I was watching a bunch of kids for our babysitting co-op. That little guys name is Hatcher and he is a cutie!! Weston really loved those sodas, not sure where the cocoa flavor was but they were a fun treat! Have a wonderful weekend.

    Lauren, this is such a great video! I'm gonna have to watch it again to get all the yummy recipes right. The stir fry looked good & so did the gumbo. I need to figure out the proper way to fold the breakfast burritos, mine seem to fall apart! I loved to soda reviews, great taste tests!!!     That soda looks good ,what one did they like the most . Do you know if they ship to the lower 48 states . I'd love my grandson to try the root beer?

      Everyone had a favorite. I loved the spruce tip, Weston loved the root beer, and Bennett loved the blueberry! I’m not sure if they ship, I will have to look into it.

    thatsalad looks delicious, I've tried n tried I can't do fruit in my salad . okay I can do Tom's lol but that is it on fruit. I can n do seeds n nuts but fruit gets me everytime.but I can eat a bowls fruits mixed in fruit salad just not the too mixed neither can my hubby, kids eat anything in front of them

    At what temperature and for how long did you bake the layered casserole?

      350° for about an hour... checked to make sure the potatoes were done. Recipe said 1-2 hours so I started checking around the

    I know y'all don't know this, but your roux needs to be much darker for gumbo. Also, way too thin. But a great first try! It takes YEARS to be able to pull off a great gumbo. My first gumbo was disgusting!!! My MIL just said, I'll teach you... lol Dogs got a great meal that night. We had pizza! LolKeep trying... Thank you for the what you eat in a week videos. I love them!!!

      I agree with EVERYTHING you said!!! I didn’t realize the amount of time it was going to take to make actual gumbo and did not have that amount of time. (Very hungry family) I’m excited to try again another time. I know the recipe was good because I had it at my friends house who gave me the recipe and now I realize how much time and love she put into it. Thank you so much for watching and being here.
