  • Today we are picking the rest of our Honey Select sweet corn and getting that canned to enjoy all winter long! I'm also making my first tomato sandwich of the season and boy was it the best thing I've eat since the first tomato sandwich last summer! I'm also making some homemade hotdog chili to go with supper tonight, its a recipe you are gonna want to try!

    Homemade Hotdog Chili
    1lb ground beef
    1 onion peeled/diced
    1-2 peppers (hot or mild) minced
    1-2 cups of water
    1 pint of tomato soup
    1-2 Tbsp chili powder
    2 tsp cumin
    2 tsp garlic powder
    2 tsp paprika
    1/2 tsp tumeric
    1/2 cup ketchup
    salt & pepper to taste
    1 Tbsp sugar (optional)
    Melt tbsp grease in frying pan, add onions and peppers. Cook them until they are tender. Add ground beef and seasonings (except sugar). Brown the ground beef. Add water, tomato soup, ketchup and sugar, combine. Simmer for at least 30 minutes or add to crock pot cook on low for 3-4 hours or until chili is as thick as you'd like. Enjoy!

    I agree about Duke's mayo! It is the best mayo out there! Yummy on any sandwich! And Maggie is so precious! I was never able to have children. But if I had, I would have been so proud if they had been like Maggie and Jake. A tribute to how good you are as parents. Kudos!

    Maggie and Jacob are getting the BEST EDUCATION they could possibly dream of and one day when they’re our age they’ll look back at their parents and be sooo grateful! Education camps are no longer a good education choice in my opinion. Mine is homeschooled too and sooo smart and well rounded! He knows as much about a Ford Powerstroke Diesel 7.3 and or 6.0 6.4 6.7 as he does the history of the world because he’s hands on daily getting things done and researching and learning what he LOVES MOST. Kids learn when they take an interest not when their curriculum is picked by someone else. I’m so glad y’all are homeschooling-I call it “unschooling” myself lol.
    But y’all are doing what I’m about to be doing come tomorrow morning at daylight-seven rows of corn preservation. So far what we’ve been daily eating has been DELICIOUS! Fried corn and corn on the Cobb. Delicious. I planted peaches and cream, silver queen, stowells and a little row of rainbow for fun. The silver queen and stowells cross pollinated with the dominant peaches and cream but hey-it eats the same! 😂I’m not mad about it at all I knew it would happen. I now have my own seed I’ll call “peaches & queen”🤣👏🏼. God bless y’all! 🙏🏼❤️Leslie Florence Alabama

    Megan I cut my corn 🌽 off the same as you,I’ve tried other methods but went back to using a knife 🔪. You and your family are the busiest people I’ve ever seen. Your 🌽 corn looks amazing. From Ontario Canada 🇨🇦🇨🇦🇨🇦

    I found it easier to cut my sweet corn over a bigger bowl. I use a sharp parring knife, hold ear in left hand use knife starting at butt end . The trick to cut put knife an angle as you saw back and forth. I found it cuts with ease cutting three or four rows.👋👋❤️

    I usually process about 15 dozen ears of corn each summer and have tried all different ways and gadgets. I keep coming back to my electric knife. So quick and easy! Great video guys!

      I read the comments just to see if someone would suggest the electric knife! It certainly made quick work of the 3 bushels we did recently. And much easier on these arthritic hands!

    😂 ever since my daughter was little she says when I can corn it looks like glitter was thrown around the kitchen.
    No matter what dish I use to remove the kernels some still goes everywhere.

Get you a large deep bowl, put a smaller bowl like a cereal bowl upside down in it, stand your corn butt end down on the smaller bowl and cut down and the kernels will fall right down into the bowl, u just did 3 bushels like this and no mess, I even put my bowl in a chair and set in front of it and everything was the right height for me to cut,

    I use a Bundt pan to cut corn off the cob. Just stick the pointy end in the middle part of the pan keeps the cob from slipping around and the corn falls in the bowl.

    ❤Meagan if you have ❤a tube cake pan put the pointed end of the ear in the middle then you can cut the kernels off with a knife and the pan with catch them

    Yum, yum fresh ripe tomato sandwich. The only thing missing is thinly sliced onion. Have you ever tried putting your corn on the for peeling off kernels on a bunt pan. Will help make it a little easier . Just put the corn bottom if still a little bit of stalk still there or the skinny top part in the hole of pan and helps it go a little faster. It looks good. Gonna be eating good for the year.😊 Happy weekend.

    Wow you're the first one I've seen use the old pressure cookers like mine everybody else has got these gages on them mine just got this weight that's it the good old pressure cooker not like these light ones nice and heavy the only thing you got to replace once in a while or once in your lifetime is the seal And all you got to do is just turn the lid to lock them down not tighten a bunch of knobs I don't know how they ever get those knobs tightened evenly

    I just put up corn the other day. I got 9 pts. And had some left over for dinner that night. But it was a all day job. Putting up veggies is a hard job but so good in the winter time. And not have to get out in the cold to go to the grocery store.
    And girl you can't go wrong with Dukes and a mater sammich. So so good. That's what real country folk eat. 😂

    When we used to pick and put up corn, my grandmother used one of those curvy slide cutters, then take a knife and turn it sidways and scrape off the rest. it makes a good creamy corn, if thats what you like. A little late for this video but yall could try it one year and see if you like it. Wed pick a truckload around 6 am, then carry to my Grandmother's house to shuck, scrape and cook on a saturday. It was enough for my family (9 kids and 2 adults) and my Grandmother/Granddaddy to last all winter

    I scrape the cobs too and that corn juice be everywhere but there's nothing like some good old creamed corn fried in fat back grease. I was very sick and had lost my appetite which is very rare, but when I started watching you cook those good old country meals, my appetite got right and I've been fine every since.     I too cut the corn off the cob with a knife but , I scrape the cob so I get all the sweet corn milk and it is so good . I live here in the middle of South Carolina , about 45 miles from Columbia , my garden is about the size of yours . Like you , I canned corn in pint jars and also put it in the freezer on the cob , OOOH , this is so good in the winter months I have just finished canning Fig Preserves they too are so good , you need to try those . I think ya`ll would love them .

    That rounded up dish pan full of corn reminds me of Mama and Grandma canning and freezing corn years ago. I'm like you Meagan. I can live off tomato sandwiches when the tomatoes start coming in and we follow the exact same recipe except I peel my tomatoes like Mama. Also when they give out, I'm done with tomatoes until next year. I like that chili recipe and will have to share it with my sister. Y'all have a great weekend and I hope y'all get some rain. Still dry here. Y'all show how sustainable farming can be . The corn feeds the people, the shucks feed the livestock and the worms feed the chickens.

    I love your channel, it make me feel like I'm sharing a day working and learning. I'm 70 years old and I've been a pepper for 24 years, what is sad I'm all alone. No one in my circle does any canning. I grow a lot of our veggies, can and freeze. I make our bar soap and laundry soap. I cook all our meals from scratch. My girl friends all eat out most of the time and don't can or even have enough food in their pantry to last a week.....So you are my muse...please continue. God bless you and I praying you get rain.

    We always had a large garden that fed 4 families. Once we pulled and froze 800 ears of cut off corn in one day! But when we fixed corn we always, always, always had a tomato sandwich and corn on the corn!!

    That’s just about exactly how I make my chili too but I add a lot more chili powder but that’s what’s fun about cooking right? Everyone puttin’ their own personal spin on their food. In the winter I make chili ( a little thicker) with beans and corn too, then put it in a casserole dish top with cheese then put corn bread mix . (I like sweeter corn bread but to each his own) bake until corn bread is set and it’s all bubbly! Love to watch you! Thank you sooo much!

    Use an old Bundt pan to cut your corn off, stick the end down in the whole and cut and turn, it catches it better too. You may want to try it. That’s what I do!

    corn maque choux
    Recipe
    ingredients together, including 4 slices bacon, 3 cups corn (about 4 ears worth + milk from the corn cobs), 1 medium yellow onion, 1 red bell pepper, 1 jalapeno pepper, 1 tablespoon Cajun seasonings + salt and pepper, 1/4 cup chicken stock, and ½ cup of heavy cream (or use extra chicken stock for a more traditional version

    I stumbled on a way to prevent the browning of the corn sugars from an Amish lady. Add a spoon of lemon juice and a spoon of sugar to each jar. It sounds counter intuitive, but it works.

    Look up a recipe for Dilly Beans in your Ball book.They are delicious. Green beans, garlic, add a little hot pepper if desired. Wonderful pickled green beans. I know your family will love them !!

    So Let me give u a tip. I set a small bowl or ramekin inside my big bowl. Set my cob on that little bowl and the corn falls into my big bowl. But I also cook those spent cobs on a low simmer. That makes a tasty corn stock for soups. Those cobs are full of flavor.

    A trick I do when cutting sweet corn off the cob is to put a plastic bowl upside down in the bowl I am cutting it into. You can use metal too, it lifts the ear up and makes it easier to cut. We love watching y’all!

    I lightly blanch my corn 🌽Then I the use a Bundt 🌽pan. 🌽Insert the pointy end into the hole of the pan. All the corn falls into the pan 🌽🌽🌽🌽🌽as I cut it off.

    Meagan, when making chili sauce for hot dogs I use a potato masher to break the meat into really small pieces -- works amazing 😁. I think a lot of folks thought you were making chili, not chili sauce. There's a big difference in them as you dont want huge chunks on your hot dog.

    I love watching your videos! You remind of when we were kids and helping my mom with putting canning and freezing vegetables and fruit. We always had a milk cow for our milk and butter. We butchered chickens, a cow and a pig every year. We rendered our own lard. We definitely ate well. We didn’t know we were poor.

    I figured out that I can use the juice from when I make salsa to can some of my corn. It becomes a Mexican corn that we eat separately or in other dishes (like tacos). I can’t get over how good your corn does, and the amount that you can. Your husband reminds me of mine when he helped me prepare fruits and vegetables for canning. Bless you all.

    Hahaaaa! I can just feel that goo that fell on your toes! It’s so gross !Corn is my favorite thing to put up in the summer, tomatoes second. Seeing your jars of corn all lined up makes my heart happy 😊. Always take a big bowl of corn to church dinners ! Nothing like “garden corn”! And btw so thankful for your rainfall !

    The whole time you fixed the chili I was admiring that beautiful canned corn!!! I just love homecanning!!!!! I think it's fun to can. So many people are scared of a pressure canner, but there's nothing to it. I have 2 big canners also. Back in the 1950s, I remember my mom and mamaw canning outside in a huge washtub over a wood fire. I think mom said you could can 21 quarts at a time in those washtubs. Took practically all day though, and you had to keep tending the fire to make sure the water stayed boiling.

    I love your videos. A little tip I've found is if you use your tater masher while the ground beef is almost all browned, it shops it up finer for hotdog Chilli. And again awesome videos, love you guys!!

    This is one of the best and most informative videos of yours I’ve seen in awhile. I make my tomato sandwiches like that too, just don’t toast the bread. Never tried corn on the cob with one, I’ll have to try that. Your hotdog chilli recipe looked delicious. I live about 8 miles from y’all, if you’ve got any extra tomatoes I’d gladly pay for some.

    Here’s an idea…if u have a bunt cake pan try that. I find that the “hole” is a perfect place to put the cob and then as I cut the kernels fall down into the pan 😊 my fav way to do it

    I like to put some diced peppers and onion in my corn and make mexi-corn. I like the red jalapeños. 😅

    Tomato sandwiches are a favorite at my house. We make them but add cheese, some basil and grill them often. Glad to see I'm not the only one. Shalom

    We use an electric knife…much faster and easier. We only freeze the corn as we both were brought up just by blanching, cutting off the cob, then freezing in baggies. Never have tried to can it. Love your family and videos!

    I use a bundt pan to cut my corn off. Stick the cob in the center and the cut off corn falls right into the pan!! So easy!! I just found your channel and I’m already loving it!! 🥰

    Get you a large deep bowl put a smaller cereal size bowl upside down in it, stand your corn butt end down and cut and it all falls down in the bowl , so easy to keep it from going everywhere

    you got that right dukes is the best and you cut your tomatolike me i like my slices from the bottom to. and i live pepper on my tomato sandwch and a good old slice of onion. dont knock it until you try it

    Oh, my gosh! MY mouth was watering when you made that tomato sandwich! Here in South Florida, we can't grow tomatoes in the summer, so I will be having my first tomato sammie in December or January.... Oh, how I miss garden tomatoes!

    Growing corn for the first time this year. We bought our little 1 acre property in November and put in big garden, blueberries, black raspberries and thornless blackberries. I did can corn last summer that I bought from farmer. We are in South PA and live near many Amish farmers and farmers in general. Would love to be able to can my own corn though. Will have to see how it comes in!

    I just got done last week with 20 pints plus some frozen corn. I buy mine from our local Amish. It’s a job!
    Your little girl is so fun to watch! I love that you’re teaching her to be a big person. She’s just got so much confidence which means momma and daddy are doing a fantastic job! I tend to baby my kiddos. I’m a grandma now tho and always say it’s my right to love them and baby them. I was a tough momma because there was so much teaching! Basically, now, my grandsons act helpless when grandmas around! 😂

      In Europe we were taught to eat tomato sandwiches with butter and sugar since tomatoes are a fruit. But have learned to love the sandwiches with mayo, tomato and pepper. 😊

    Awesome video!!! I would pay good money for Meagan to do a workshop and teach those of us that are scared to death of a canner to can. I’ve just never had anybody to teach me and as much as I want to learn I’m more of a hands on kind of person and I am scared to death of a pressure canner but I would sure like to learn.

    I have a Pressure Cooker like Megan's. Yet she uses it as a Pressure Canner. I don't have one of those HIGH DOLLAR Canners that all these Homesteaders use so I'm going to try my Pressure Cooker. Just what Pressure do I set it on. It's not quite as big as hers. Ty!

    Megan, I use a Bundt pan and stick the top of the cob in the center hole and cut down my cob. Corn falls in Bundt pan. Goes fast and not such a struggle to hold cob steady.
