Authentic New Orleans Bread Pudding

  • This is an authentic New Orleans Bread Pudding, originally from the Bon Ton Cafe in New Orleans. The original calls for a whole cup of bourbon which I think is a little excessive. We've reduced the amount to 1/2 cup which is still strong. You could reduce it further to 1/4 cup if you wanted. The ingredients are: Bread Pudding:
    1 loaf French bread, at least a day old, cut into 1-inch cubes (about 6-7 cups)
    1 qt milk
    3 eggs (large)
    2 cups sugar
    2 Tbsp vanilla extract
    1 cup raisins (soaked an hour or two in 1/4 cup bourbon)
    1/4 teaspoon allspice
    1/4 to 1/2 teaspoon cinnamon
    3 Tbsp unsalted butter, melted
    Bourbon Sauce:
    1/2 cup (1 stick) butter, melted
    1 cup sugar
    1 egg
    1/2 cup Kentucky bourbon whiskey (less or more to taste)
    If you want a non-alcoholic version, use 1/2 cup of water mixed with 1 Tbsp vanilla extract and 2 Tbsp of cider or white vinegar in place of the bourbon called for in the sauce recipe.

    3 minutes is sufficient. Some cooking channels take 30 minutes, which is just not necessary, and a waste of my time. It looks wonderful!

    I make bread pudding muffins for my B and B guests, they love them, pile the mixture into muffin pans, bake until crisp on top. If you sprinkle a bit of sugar before baking they caramelize, adding even more goodness. Soooooooo, good!

      @@slaperigeduivel2816 😘 a year ago was in Canada near Banff in the mountains but because of Covid I shut down. Before that my B and B was in Scotland. Love Scotland, if you ever get the chance go! Can’t guarantee bread pudding muffins tho. But make this recipe and make the changes I mentioned. You’ll love them.

    I don’t do alcohol, but I soaked my raisins in Peru vanilla extract. The bread was absolutely delicious! Amazing.

      to make vanilla extract, take 1 bottle of rum,or vodka , add 58 vanilla beans in a quart jar.let stand 6 months and it is vanilla . You say you dont do alcohal?????

    I made this for Christmas dinner and it was great, everyone loved it . I used half the sugar the recipe called for. Some coconut sugar and some white sugar because that’s what I had on hand. I did not use bourbon I only used vanilla extract for the sauce . Only problem I had was when cooking the sauce the egg was frying as well so I had egg pieces lol but I took them out prior to serving and ate them , it reminded me of when your having breakfast and the syrup from the pancakes touches your eggs .

      Next time, try super low heat and/or make a simple glaze with powered sugar and heavy cream. I’d prefer that anyway. The sauce with the egg grosses me out.

      I think the problem is that the sauce is a simplified custard, or pastry cream, and if u use the concept of those sorts of sauces u understand how to not get scrambled eggs. I wish they would have addressed that in this video because it's such a common problem!! I'd recommend heating the milk on its own, then in a separate bowl mix the egg and sugar together, and when the milk is just about boiling slowly pour it into the egg mixture while constantly stirring, this will temperature the eggs, and then dump the whole thing back into the pot and continue to heat and stir it

    Delicious recipe... By the way, it goes without saying that people are FREE to add the amount of sugar or whisky or whatever they like and as much as they like, this doesn't make them worse or better cooks... Goodness me!

    1 c. sugar is plenty for the bread pudding- it’s not sugar pudding ❤️
    Toasting the bread is better to - after you tear it or cut it up ❤️

    Tip: 350 degrees Fahrenheit for 5 - 10 minutes to toast the bread is a great, because it soaks up way more custard.

      Not so much milk scalding these days because it is pasturized. In older recipes the scalding was to kill bacteria........

    This is how it's done people tried-and-true New Orleans style. I like to change up sometimes and use cinnamon raisin bread that's two days old (I'm a cinnamon and raisin freak) the sugar amount I cut in half and use Jack Black. Sometimes I use a little whipped cream to top it off. 😋

      You are right! I also change mine up occasionally in the fall by roasting cinnamon sugar pecans in the oven, then soak them in the bourbon with the raisins especially for Christmas morning. Along with eggnog lol

      That sounds good. I've never done that but we have a bakery here that sells a pastry that's famous in the area called a chic de femme that a lot of us like to use to make bread pudding and I imagine it's pretty close to a honey bun bread pudding.

    I've never seen anyone soak the bread in milk without already mixing in the eggs and sugar. I wonder why they keep the two separate here. Every restaurant I've worked at makes a custard base, and then soaks the bread in that.

      A different approach,but to be fair it turned out really nice..As for me I like some more fruit! ( maybe mix in some Sultanas& or Cranberries and I usually dice a apple) and I might add a little cream to the Sauce.. But we see plenty of different methods& they all usually work out!

    I made this for Thanksgiving and everyone loved it! The only change I plan on making is not adding 1/2 cup of bourbon sauce. It was much too strong. I ate mine without it. When I make it for New Years Eve I plan on adding much less. Maybe 1/4 nah..probably 1/8th. It was so liked that my grown daughter asked that I make this as dessert from now on.

    Not sure what I did wrong with that bourbon sauce but it chunked up and I mixed it the entire time for like 15 minutes or so. It’s not creamy at all. The bread pudding however is something I’ve made for over 20 years and is awesome. If anyone has any tips for that sauce though I would appreciate it. TIA!!

    I grew-up eating bread pudding with either a rum or bourbon laced sauce. That's real bread pudding. The other versions with vanilla cream, etc., is just too sweet for me.

    I soak the raisins in apple brandy for a week. Then I drain and use the liquid for the topping.

      If you'd like to use something else instead of bourbon, try using 1/2 cup of water mixed with 1 Tbsp vanilla extract and 2 Tbsp of cider or white vinegar for the sauce. Hope that helps you!

    I don't like raisins so I soak the bread in Bourbon and then I make it with mixing the milk and eggs together and then pouring that in but man it's good

    I'm in south Africa..I don't remember my ethnic group having a bread pudding...were a. Real small minority...but this I'll try...I'm 54...never tasted any such stuff...unbelievable

      Your "Ethnic Group" has Bread? Eggs? Sugar and Milk? Yes? Then blame your Mother for being a lousy cook. Even the Chinese and Indian (Hindu) has a form of Bread Pudding. It's a very common global recipe. You're of Dutch decent? (last name is Dutch) the Dutch have their own version of Bread Pudding.

    The amount of sugar called for is insane. It will taste vile unless the quantity is at least halved.

    Good recipe video. But too much vanilla...half of that is sufficient. I do love bread pudding. I teach cooking, too, and sometimes make the bread pudding with mixed dried fruit.

    Tried this today for dinner and the whole dish was gone! There was no way I was using all that suger....I used less then a cup for the whole recipe. The custard came out like scramble eggs and I strain the lumps and drizzle the liquid part. Will not use the eggs for the sauce next time. The Bourbon was on point and not over powering.

      It will be cooked anyways but I'd imagine a better bottle will leave better residual notes of bourbon

    I made this with Kraken spiced rum. I will not do it any other way unless for variety purposes.

    When you cook with alcohol does the alcohol dissipate making it no longer alcoholic? In other words it won't intoxicated you will it? Or is that the achieved desire in recipes that use alcohol?
    I have cooked with wines but never strong alcohols.

      French bread is the best ever...someone told me to use biscuits...it was terrible..he was a so called chef...use only french bread

      This is what you make with it.
      Just remember...the sugar.
      You don't add as much because the stale bread has it.

      I feel that this category of pastry is a frugal housewife dish--a nonwaster. So, I'd just grab whatever was getting hard and stale. My wife, who is a terrible cook, keeps throwing away my stale bread that I lay aside for this dish, though...lol...

    Wow I was surprised that egg didn’t end up scrambled. I’ve that this recipe before and it’s really delicious. But you do have to be careful incorporating the egg into the sauce.
