    Garlic hammered into steak!
    RECIPE:
    6-8 oz flank steak, top round, top sirloin

    1 garlic clove

    1-1/5 tbsp extra virgin olive oil

    1 bayleaf (optional)

    1 bread roll

    salt & pepper to taste
    (For six sandwiches you would need about2
    2.5 to 3 pounds of steak)

    1. Thinly slice the garlic
    2. Cut the bay leaf into large pieces
    3. Trim the steak, and if your steak is thick cut it into 1/4 inch slices
    4. Thoroughly tenderize the steak with a meat tenderizing hammer. It should be about an 1/8 inch thick.
    5. Gently nail the garlic and bay leaf into the steak.
    6. Preheat a saute pan and put in the olive oil. Gently place the steak garlic side down. Cook about 1 minute on each side.
    7. Remove the steak from the pan and toast the bread in the pan with the steak juices. Add more olive oil if needed.
    8. Enjoy

    In South Africa the focus is on the peri peri sauce - every place that makes prego will have its own peri peri recipe and it is the consistent factor that distinguishes a good and a great prego.

    The South African version has changed a bit with more of a focus on spices - particularly peri-peri. I have even known some people to marinate or cook the meat with white wine as well as the other flavourings.

    We also love prego in South Africa. However it has slightly evolved. We like to include some bird's eye peppers on the meat, and then also add a mild peri-peri sauce.
    I will take this over a burger any time!

    The stake is a bit overdone.
    Should have a line of red in the middle (medium)
    Around 30s, for that thickness of stake should be fine.
    Still.. it's always nice to see food from my country beeing appreciated, you should take a chance on a Francesinha :D

      I would recommend sirloin or New York strip. Those are both parts of the loin. You can use filet mignon but it’s generally much higher price per pound

    Good video, but not 100% correct! Preferably you need to marinade the steak for a couple of hours. Once the steaks are removed from the pan you need to reduce the sauce left in the pan with some of the marinade, which will make a gravy. The bread gets dunked into the gravy before placing the fired steaks in the roll. Per-peri is optional.
