    300g beef steak (or king oyster mushroom)
    1 large red onion, cut into petals
    1/2 aji amarillo or orange bell pepper
    1 spring onion
    1-2 plum tomatos
    2 Tbsp pisco or brandy
    2 Tbsp soy sauce
    1-2 tsp ginger juice
    1 clove of garlic, minced
    cilantro
    friench fries / oven potatoes
    rice

    In Cantonese there’s a slang term for side jobs “bei lou”, which actually means “Peru”. It shows how prevalent it was for people in the Cantonese-speaking community to work in Peru and other South American countries back in the late 1800s. We still use the term today after all these time.

    Out of all the places I’ve traveled, Peruvian food was definitely up towards the top of my list. My mind was blown by how amazing the food was there.

    As a Chinese American, I’m very moved by this video. Thank you Peru, for welcoming my cousins. As a Chinese immigrant, I feel like a lot of times we are very discriminated against and our ancestors were basically Asian slaves in the early days. But most of us worked hard, integrated into the local community, and become welcome members of our new adopted countries. Much love, and I look forward to visiting your beautiful country soon!

      I’ve always mention how Peru Welcomed the Chinese and Japanese immigrants with open arms to the point that we had a Japanese President for about 10 years, I’m a proud Peruvian with Japanese Blood. I’m proud and always mention it even tho I’m 4th generation I’m still PROUD 🤘🏼🤘🏼.

      I am Malaysian Chinese and my wife is New Zealand Chinese. All our ancestors left south China in the 1800s due to famines and overpopulation. In New Zealand, the people were not very welcoming to them.
      I always hear Americans talk about being "Asian American", but I wish they could also see that their identity as an Asian American is also very similar to Asian Australians, Asian New Zealanders, Asian Peruvian and all the other Asian Diaspora communities around the world.

      Do Peruvians talk about issues affecting the indigenous communities? what about the Spanish descendants living in Peru?
      By describing someone's ancestry, I'm not trying to create any tension or division. My perspective is to celebrate our differences. I don't know the situation in Peru, but from where I come from, I believe each group helps make us stronger and smarter. Peace.

    as a Peruvian I can confirm that lomo saltado is definetly one of our national dishes. but they way you cook it it's very unusual. eithery way, it seems it tastes delicious!

      Brooo I was thinking the same wayyy 😭😂 im Peruvian Mexican and my moms the Mexican but she try’s to make lomo and all the dishes and her lomo is good for her being Mexican lol but ima tell her we should try this so we can see how it is but honestly the best lomo I’ve ever had was in Lima honestly nothing can compare to it

      @@coolestson7547 part of the process of cooking lomo saltado is using a wok to stir fry the ingredients and using the flame of the fire to sear the meat.

      @@bngr_bngr also soy sauce is a staple in Asian dishes. I am not sure if Naitve Peruvians use soy sauce, also as I am not aware of their traditional foods.

    Lomo Saltado was introduced to me by a Peruvian college of mine some years ago and it was a LOVE AT FIRST BITE!!!

    I find it interesting in the pronunciation of certain Chinese word in Peruvian context. 1) Peruvian Chinese call themselves Tu Sheng (土生). In Chinese it means local born, which is quite common use in for Chinese descendant born and live overseas (southeast Asia and etc..) 2) Chao fan (炒饭) is Cantonese way of pronouncing fried rice. So base on that I guess the majority of Chinese are southern Chinese mostly Cantonese in dialect. But it is so interesting to see how language is adapted and evolved. Also the mixed of noodle and rice from leftover is not so commonly done in Asia. However, in southeast Asia, some of us would take the leftover and stirred fried it with sambal chili. Food transcends, culture, reglion, race and etc.. It adapts and adopts and grow. It is a pretty awesome lesson we can learn.

    The lady's description of the "Corner Chinese" actually moved me a lot. Reminded me so much of the Chinese-American community and the Chinese expats from around the world. They are totally like that, long- persevering, hardworks in silence for their kids. Yeah, that sounds like so many people I know. Glad to know that they are so alike. 😥😊

      Originally from the Philippines, been in the states for decades now. But anyway, Phils claim to have the first/oldest Chinatown. Not sure it’s true, maybe, but gets to show how proud Filipinos are of Chinese integration into our culture. The Chinese are very resilient and hard workers, so much so that more than half of the 10 riches ppl in the Philippines all have Chinese heritage. Growing up we call Filipino Chinese “chinoy”. We celebrate Chinese ny, have a lot of beliefs after Chinese culture and of course most of our food is also a fusion of Chinese. Our famous “pancit” or noodles, as well as the lumpia, which in the Phils we refer to as “lumpiang Shanghai”, I’m sure both originated from China. We just took the credit, because we popularized them 🤣

      "Corner Chinese" also happens here in Indonesia. Literally you can find small shops owned by Chinese people anywhere. They are really hard working and getting along really well with locals, especially among "peranakan Chinese" (that is Chinese person whose ancestors are married with locals). Heck they even speak regional languages like Javanese much better than locals.
      Even though there's several ethnic tension between locals and Chinese descendant in the past. The Chinese are an integral part of our society, they practically assimilated with locals (to the point that they no longer able to speak Chinese anymore). Also their food also become a staple for Indonesians like nasi goreng, noodles and baso tahu that is a dish related to dimsum.

    Chinese living in the US here, visited Peru last December, got wowed by the lomo santados, the ceviches, and of course the chifa places were nice change from the Panda Express I get in the states . Nice video andong, keep it up.

      as the narrator said, some families migrated for generations (100+ years) and their descendants now can only speak Spanish and identify themselves as Peruvian. Many won't be able to speak any Chinese. But i guess that means they have really embraced Peru as their country.

      When I used to live in NYC there was this Chianese restaurant the owner was Chianese Jamaican with a Jamaican accent spoke Spanish, Chianese (don't know which dialect) and Haitian Creole

      Hi bro, only chifa is peruvian chinesse food. Chifa is only a little parte of peruvian gastronomy. Also we have Nikkei food, that is peruvian japanese food, and also, it's only a little part of peruvian gastronomy. The true peruvian gastronomy has uncontable dishes.prehispanic dishes, creole dishes, coaste dishes, andean dishes, amazonan dishes, Novo andean dishes, not only that, un Perú there are 25 regions, and every has a typical dishes, without chinesse ir japanese influence, only heritage from old peruvians.
      Y bueno, hermano, espero pruebes tantos platos peruanos diferentes, y una acotación para este video, el lomo saltado tiene solo el salteado chino, todo lo demás son ingredientes peruanos que siempre se han usado. Sabías que Perú tiene más de 3 mil variedades de papa? Pues en Perú se la domesticó. El tomate también es de origen peruano, al igual que el pisco (aunque esté ya es un producto elaborado, y te recomiendo purebes el pisco sour, chilcano de maracuyá, cóctel de algarrobo a, que son a base de pisco). La cebolla y el vinagre lo trajeron los españoles, al igual que la res, pero el lomo saltado lo único chino es la forma de saltearlos al wok.

      Funny, I'm Peruvian and I studied in Germany. Every time I wanted to eat Lomo Saltado, I went to a Chinese restaurant close to the town where I lived. Yes, it was somewhat different, but good enough to kill the desire for Lomo Saltado

    Peru is magnanimous & has acceptance. They label the food-influence as contribution to the country, rather than dismiss it quietly.

      THIS IS SO IMPORTANT. I am glad they are giving credit and actually label the influence as it shows respect. Unlike America that likes to steal from colored people's creativeness and pass it off as "American culture" so the creators are not given proper credit. it isn't hard to give credit. Makes you think if things like these are intentional.

      The video doesnt explain that peru was the first port of south america, all the migration came basically to el callao in Lima. All the african food, the chineese food, the eruopean food, all of it in one place.
      Lima have 3 restaurants in the top 10 beacuse of it.

      You're welcome, Peru was the capital of the Spanish colony over 500 years and as the Chinese migration here are a lot of African, European descendants, so is a fusion of culture and of course food.

    it's so strange and beautiful at the same time to learn that we all have different history..and in the end.. food always bring us together..what a great video..and i have learnt a lot about Peru... not related to foods tho..there is one famous Peruvian Japanese scientist Marino Morikawa..his works are very inspire ... about Eco-friendly water treatment project

    Lomo saltado is definitely the go to dish when it comes to Peruvian cuisine. Chinese food really makes a big influence in not only cuisine wise but culture for Peru. Chifa restaurants are what fascinates people to come to Peru and experience the beautifulness of our culture. I'm a proud Peruvian and I always grew up with Chinese culture being present within my childhood and as I got older, I've been fascinated with learning Mandarin and a little bit of Cantonese. Plus without a doubt, somewhere in your DNA, someone in your family is Chinese and you most likely don't even know it

    5th gen tusan here on an official mission to grant you the honorary title of "Causa", I know us peruvians will be like AAAAAAA with some of the ingredients or preparations in this recipe, but, it´s lomo a la Andong (I gotta say tho, for me it needs to look a tiny bit juicier), I know for me and many others here, the flavor of the meat juices, oil, vinegar and soy sauce is awesome, so much so that many order lomo saltado in smaller portions for breakfast, just the stir fry and ciabatta bread, and we dip the bread in the lomo juice

    I fell in love with Peruvian cuisine when I was in Lima and nearly a month in Iquitos, which is a whole different story than what you find in Lima or in the Andes. Lima is a fusion kitchen heaven and it blew my mind. This episode was awesome.

      candid moe Andong no sabe la historia del Lomo Saltado, no hay ni una prueba de lo que dice, el Lomo Saltado es un plato de fines de 1800 que deriva del bistec a la chorrillana, es un plato cien por ciento peruano. No tiene influencia china.

    It's fascinating there's a sizable Chinese community in Peru considering how far they are, basically diagonal on earth. First time had Lomo Saltado in the States many years ago when I wasn't even aware of the existence of Chinese Peruvians, and it immediately reminded me of Chinese food.

    I am impressed with the Chinese folks who have settled the US, Canada, Central, and South America. They learned and assimilated into their community's culture and brought their culture for other people to enjoy. The Chinese immigrants have really learned their Spanish very well. The places I have been too around the world besides the US. Europe and Asia has had China Towns with the exception of the Middle East like Iraq. Kuwait has a small tiny community. Peru is very impressive with many other nationalities that came to that country. I found out the Japanese were very dominant. I was impressed with a Japanese tourist that came here to Las Vegas who couldn't speak English but spoke South American Spanish. His family for many generations lived in Peru. I have also understood Chinese folks from Peru come here to the US and blew me away with Spanish and English.

    Thanks for the great food, culture and peoples video, Andong. I'm a Canadian-Chinese whose parents immigrated from China. I visited Peru a few years back with my family and we were amazed at how many chifas there were in Lima. Our tour guide told us it was the most popular restaurant type in Peru, as your Vanessa Yong confirmed. He also suggested that some 10% of Lima's 10M population were of Chinese descent. Equally fascinating is the similarities of Chinese immigration and cultural integration in many parts of the world. The observation that Peruvian Chinese worked on their railroad is a parallel to the establishment of Canada as a country connected from sea to sea by our railroad, one that was built in large part by a Chinese labour force (my grand uncle was one of them). I look forward to seeing more episodes, your movie and visiting Germany at some time. Cheers. Norm

      Actually is true, between 9~10% of Peruvian Population has Chinese Roots, because there were thousands and thousands of Chinese people who came to Peru. The majority of them were extremely poor people but by the time they knew how get the chance to develop in a country which was not ours. Today, many of grandsons and grand-grand-sons of Chinese imigrants have became important figures in Cultural, Sport, Political and Artistic aspects for Peru. For example, the biggest franquicie of Supermarkets WONG, was funded by a Wong family, etc. Other story is about Japanese migration, even Peru had a NIkkei(Jap-Peruvian) as President of the country in 90s. China and Japanese, and Asia in general, gave many important things culturally to Peru and we are thanked by that. Greetings from Lima!

    Growing up in Panama and being ethnic Chinese, there are a lot of similarities between the Chinese Panamanians and Chinese Peruvians both being an integral part of their countries, culture and communities. Here in Panama, lots of local people would have dim sum for breakfast during weekends and at least 4% of the population are ethnically Chinese.

    I was in Lima last week and had chifa. . . was super good. Very simular, yet very different to types of American styles of Chinese food. The dish with the chicken, peppers, pineapple and peaches was awesome. I looked up chifa in the SF bay area and there was some sad remake place. . . . guess I'll have to go back to Peru to get more. Peruvians know what's up with food. . . they got good taste with everything else. Not too big with the cuy though, lol.

    Peruvian / Japanese, foodie and amateur cook here, I usually roam around trolling peruvian food videos because the history behind it isn't well described or well shown in the video, but God damn this video is on point in history and in preparation. really, Big thumbs up for you hopefully in your stay in Lima you learned there's is a history behind Peruvian food and japanese traditions and will make a video about it.       Peru has a long history of multiculturalism that goes back at least 450 years.
      *Our first 200 years were merely influenced by Spain and Austria and our national dance "Peruvian Waltz" and Polka reflect the germanic influence (Viceroyalty of Peru, during the ruling of the Habsburgs), followed by Spain and France (during the ruling of the Borbons)
      *During the mid-1600's, African slaves were brought to our sugarcane and cotton plantations.
      *During the French Revolution the best chefs from France fled to Peru to cook for the Peruvian aristocracy.
      *We have the 2nd. Largest Japanese colony overseas, Brazil has the largest one.
      *At the beginning of the 1800's, Chinese workers were brought to build the railroads along the Peruvian coast and sections of the highlands.
      *During the early - mid 1800's Austrians and Germans came to populate Oxapampa, in the Central Andes. We have a German-Tyrolean town, called Pozuzo (next to the jungle) where everything is written in German and the traditions still today are kept alive.
      *In the early 1800's English families immigrated to Peru and got established in Piura, Huancayo and Arequipa.
      *Other European minorities (French, Dutch, Polish, Hungarians, Croacians, Greeks, Danish, Norwegians, Swedish...), immigrated during the early 1800's as well. Italians, the largest group, got established at El Callao, and later, as they became more prosperous, moved to the old Lima (centre-ville)
      *In 1879 we went through a war "The War of The South Pacific". We were defeated by Chile and we had to import "men and families of immigrants" to overcome the consequences of the war.
      *In the 1940's 28 Families of the Holocaust were received and got established in Lima.
      The immigration-emmigration continues. We also immigrated masively towards the end of the 1960's, during the militar dictatorship, in the 80's during the time of terrorism of the "Shining Path and Tupac Amarus", in the 2000's during the dictatorship of Fujimori, adding blends to our multiculturalism.
      We are a blend of Native American, Spanish, Germanics, French......and all these reflects on the features of our faces, the colours of our skin, the colours of our dresses, the sounds of our music, the flavors of our food.

    Yes! Finally the continuation of the Chifa series. It was great, thank you. I think the exploitation of Chinese people for manual labor is still happening in Japan. They are brought in through internship programs where they are supposed to be taught skills that can help them get better jobs, but they just end up being forced into low skilled manual labor jobs with low pay.

    Actually the Peruvian National dish is Ceviche, lomo saltado is on the list (along with dishes like papa a la huancaina, anticuchos, causa, aji de gallina etc) but ceviche is the national dish by excellence.

    So you say that Lomo Saltado is not found anywhere in China. But get this: I am Vietnamese, which was once a suzerainty of China, and I grew up on a potato, beef, onion, tomato stir fry that was eaten with rice. We did not have the chili that is essential to Peruvian Lomo Saltado but it's 90% similar. When I first had Lomo Saltado in my 20's, I was transported back to my mother's kitchen. We had this every week. Every Vietnamese has this as a home dish. It's not in the restaurants. But it is part of the home cook repertoire.

    Fascinating! A similar thing happened in the US. The end of slave labor in America after 1864 saw decades of administrators scrambling to figure out a way to replace all that labor. It's what caused the rise in prison labor and the Jim Crow laws that targeted non-whites. It's why a century later in 1964, we had to have the Civil Rights Movement.
    It's still a problem. 25% of the world's prisoners are here on US soil or in some foreign detention center right now. That explains why so many nonviolent cannabis offenders are still locked up even though half the nation is enjoying it recreationally, they just can't afford to let go all those cheap laborers. It's a tragedy.
