TRADITIONAL PERUVIAN FOOD - María Zuñiga is a purveyor of traditional, time tested, and slow cooked Peruvian food. It was an honor to have a chance to go to her home-style restaurant, where she serves private Peruvian food experiences. #PeruvianFood #Lima #lomosaltado
Chef Timour was telling me, typically when you have a Peruvian family meal, you have one or two of these main dishes - we had a whopping 7 main dishes in a row - huge Peruvian family style food. The food was incredibly good and I have huge respect for María Zuñiga, her knowledge of Peru and its many ingredients, recipes, and culinary influences. We arrived for lunch, but Maria began cooking at 2 am!
1. Peruvian tamales - María Zuñiga is very well known for her tamales, and she comes from a family that specializes in Peruvian tamales. There were not just any tamales, they were made from different colorful ingredients, and colorful.
2. Arroz con pollo - Chicken with rice, this is a Peruvian food family favorite.
3. Ají de gallina - Another classic traditional Peruvian food, and a dish nearly everyone loves is Ají de gallina, a chicken stew.
4. Lomo saltado - Lomo saltado is a main dish that has direct Chinese influence, and yet it’s so mingled into Peruvian everyday culture. This stir fried beef was insanely juicy and tender.
5. Seco de Res - This is one of my favorite Peruvian food dishes, beef on the bone, stewed with cilantro until fall apart tender. It was incredible.
6. Rocoto relleno - This is a Peruvian dish originally from Arequipa, wonderful rocoto chili peppers, stuffed with meat and spices.
7. Juane - From the Amazon jungles of Peru, juane is a packet of rice and meat cooked in leaves, this time banana leaf. It was delicious especially with the cocona fruit garnish.

It was an outstanding Peruvian food meal and a learning experience for me. These were some of the best home-cooked dishes I’ve had and a meal in Peru that I’ll never forget. Thank you to María Zuñiga!

Before reading what you ate i was making my list of top 7 i recommend my friends when they visit:
1. Ceviche
2. Pollo a la brasa
3. Anticuchos
4. Choritos a la chalaca
5. Pan con chicharron
6. Arroz chaufa
7. Pan con palta y jugo de papaya.
BUT when it comes to home cooked meals, those 7 definetly are super necessary.
Yo le agregaría el lomo saltado, ají de gallina, la causa, la papa a la huancaína, el chancho al cilindro o la caja china, la carapulcra, etc. :-D
People always forget about Chupe de Camarones, that dish is my favorite :)

Extraño mi comida!!!... aquí en España lo trato de cocinar pero no hay nada como en Perú porque todo es fresco del campo a tu mesa acá no es como en Perú encuentras comida hasta las últimas horas riquísima y cualquier variedad lo que se te antoje extraño llegar de mi trabajo y sentarme en cualquier huarique y desgustar un caldo de gallina o un chaufa un pollo a la brasa o los ricos anticuchos o pollo Broaster los guisos como el estofado seco tamales sopas como la sopa de mote menestron sopa criolla a la.minuta seco de cabrito con frejoles ceviche pan con chicharrón etc etc la variedad de elegir cada día que comer era un paraíso ya regresaré a Romper la dieta que se hace aquí 😢 Gracias por difundir al mundo el paraíso gastronómico que tenemos y no valoramos muchos BENDICIONES !!!...

As Mark was drinking the Cerveza Negra he mentioned chocolate. It is my understanding that dark beers have cacao powder in them.
I think one of my favorite parts of these videos is watching someone's face light up as they watch someone else enjoy their local food. I struggle with a lot of the foods Mark tries because my palate isn't very sophisticated, but I want to eat every single one of these dishes. Yum!

La diferencia que hay en el Perú con la comida del resto de países es que para nosotros es una ceremonia, tanto cocinarla como servirla y compartir con la familia. Hay procesos que se deben respetar. Nunca comerás tan rico como aquí.

- Recuerdo cuando viaje a la provincia de Huancayo en Perú pase por lugares Naturales tan hermosos q me emocioné hasta las Lágrimas, era como estar en un Paraíso en un mundo tan Caótico.
- No me imagino lo que sentiré cuando vaya al Cuzco y ver la mejor Maravilla Mundial Macchu Picchu y ver sus otras tantas Maravillas más q tiene Perú.

todo lindo y bello hasta que te roban, o te atropellan - asi camines en la acera - o te insultan por tener rasgos indigenas o si compras algo te enganan y te dan menos del producto, o te dan productos pasados (arroz lleno de gorgojos) o ves que la gente tira al piso las envolturas de lo que comen o ves la basura acumulada en cada esquina de la calle y un trafico caotico donde todos tocan sus bocinas y nadie avanza y mientras esperan dentro de sus autos son asaltados ... etc etc

This is a great video but my criticism is that I feel like a translator should have been used for this trip. As she is saying really important about the culture and the dishes. And it’s a shame that non Spanish speakers can not understand it. You need to include subtitles as you have viewers all over the world.
I was thinking the same, the way she was describing everything was so beautiful. Along with the importance of culture.

No en todas las cocinas usan ajinomoto, tenemos tantas especias para que le den un sabor especial a las comidas por ejemplo el ají amarillo, loche, azafrán, y para el ceviche el ají limo pero mejor aún el ají mochero que se usa en los ceviches del norte que solo lleva cebolla, limon, sal, pescado y ají
en mi casa nadie usa ajinomoto ,mis abuelitas que son expertas cocineras nunca usan ajinomoto ni condimentos envasados ,y sus comidas son perfectas super deliciosas ,en mi casa cocinamos delicioso y nunca es visto el ajinomoto ,,ajinomoto es para los que no saben cocinar .los chefs nunca lo usan ,porque se nota clarísimo el sabor artificial
@solusst estás muy mal informado. No todos lo preparan con eso. La cocina peruana no necesita de eso para ser rica. El ajinomoto le da un sabor adicional más no todo el sabor que se requiere.
