Cold Rolls with 3 Dipping Sauce | Vietnamese-Style Cold Rolls | Easy Salad Rolls | Rice Paper Rolls

  • Welcome to my channel ‪@SpiceElementsinLife‬.I think this is the right time to introduce this summer spring rolls recipe which is easy to make at home and healthy to eat. The summer spring rolls which is made with fresh colorful veggies, little touch of meat and assembled with fresh herbs. If you are vegan and not fond of meat then replace meat with tofu or anything else for better version. Remember that these are not egg rolls which are deep fried, these rolls don’t require deep frying and involve even less cooking. These spring rolls can be served with peanut dipping sauce, but in this video I will share you with 3 different dipping sauce: peanut butter soy sauce, avocado cilantro sauce and sweet and chilli sauce. If you are making these rolls first time then you might feel little nervous and confuse about handling rice paper wrappers, but as you make these rolls you will get better.     Ingredients for filling rolls:
    -Spring roll/rice paper wrappers(25cm, as needed)
    -Vermicelli rice noodles (boiled, cooled)
    -Purple cabbage (thin slices)
    -Bell pepper (sliced, color as you prefer)
    -Carrots (juliennes)
    - Avocado (slices)
    -Bok choy (separate green &white part)
    -Napa cabbage leaves/lettuce
    -Cucumbers(matchstick)
    -Fresh herbs: cilantro,mint,sweet basil,Thai basil leaves
    Chicken preparation:
    -Chicken (boneless,lengthwise)1fillet
    -Salt totaste
    -Ground Black pepper totaste
    -Butter 1tbsp
    -Fresh lime juice 1 tbsp
    -Garlic clove grated 2 nos.
    -Worcestershire sauce 1/2 tsp
    Shrimp preparation:
    -Water (for boiling) asneeded
    -Salt for boiling water 2tsp
    -Shrimp 1lb (raw,deveined, large/medium)
    -Garlic powder 1tsp
    -Crushed blackpepper 1/4tsp
    -Onion powder 1tsp
    -Salt totaste
    Peanut soy sauce dipping:
    - brown sugar 1tbsp
    -hot water 1/4cup
    -creamy peanut butter 1/3cup
    -distilled white vinegar 1tbsp
    -low-sodium soy sauce 1tbsp
    -toasted sesame oil 1tsp
    -chili garlic sauce 1&1/2tsp
    -ground ginger 1/2tsp
    -seasalt 1/2 tsp
    -peanuts (finely chopped) 2tbsp
    -Hoisin sauce 2tbsp
    -Honey 1tsp
    Sweet chilli dipping sauce:
    -Brown sugar 2tbsp
    -hot water 1/4tsp
    -fish sauce 1tbsp
    -Hoisin sauce 2tsp
    -fresh lime juice 1tbsp
    - chili garlic sauce 2tbsp
    -toasted sesame oil 1tsp
    -garlic powder 1/2tsp
    -Sesame seeds 1 tsp
    Avocado cilantro sauce:
    -Avocado 1no.
    -Greek yogurt 1/2cup
    -Cilantro handful bunch
    -Garlic powder 1/2tsp
    -Seasalt 1/8tsp
    -Lime juice 1tbsp
    -Water 1/2cup
    -Ground black pepper 1/4tsp
    Directions:
    -Peanut Soy Sauce: In a medium bowl, combine all the ingredients and together until get smooth consistency.
    -Sweet Chili Sauce: In a medium bowl combine all the given ingredients together until get desired consistency.
    -Avocado Cilantro Sauce: add sliced avocado, chopped cilantro, Greek yogurt, lime juice, salt, black pepper, garlic powder, water and blend it.
    -Refrigerate all dipping sauce once prepared until ready to serve.
    -Prepare all the veggies by washing, chopping and set them aside.
    -Turn heat on high,fill pot with water for boiling, add salt and stir it. Once water boiled turn off heat. Transfer raw shrimp into pot and soak for about 3 minutes or until it turns pink. The process of soaking shrimp into the boiled water is called poaching. Take shrimp out using slotted spoon and quickly drop into the ice water. Take shrimp out and dry on paper towel. Remove shell and tails as shown in video.
    -Set pan over medium heat, add butter to sweat shrimp followed by seasoning. Cook shrimps on both sides for 2-3 minutes each side.Transfer into plate once cooked then cut each shrimp into halves like butterflying them and set aside.
    -In the same pan over medium heat add butter to melt. Grate garlic and stir it for about a minute. Then cook chicken with given seasoning (see the ingredients) until well cooked about 5-6minutes.
    -Take warm water (not too hot), soak rice wrapper to soften for 5-7 seconds, don’t over soaked otherwise it will too soft and break off easily.
    -Keep working surface slightly damp and lay rice paper onto it.
    -To assemble the cold rolls, lay out all veggies (add according to your choice): lettuce, cabbage, cucumber, bell pepper, avocado, then noodles top with few herbs. Start rolling up wrapper from bottom fold over the veggies then fold in both the sides from edge (see the video for ideas). Then place sliced shrimps on halfway folding then continue rolling all the way to the end (start rolling from the edge closet to your body by finish rolling the wrap away from you).
    -Serve fresh spring rolls with dipping sauce

      Rice paper tends to stick everywhere but you can still work with it. I would suggest to keep your working surface (like cutting board) little damp with water so that it won’t stick and it will get easier to work with. As you continue to work along you we will get the idea of handling rice paper.
