Beef Boneless Koyla karahi | Beef Karahi With Homemade Karahi Masala

Today I will share with you Pakistani style Beef (boneless) Karahi with homemade karahi masala. This dish is cooked in Pakistani restaurants in a special karahi wok and serve as it is in the same dish. The tradition of cooking meat into the karahi (wok) brought this name of this dish. In this video I will also share with homemade karahi masala (spices) which is easily make in 5 minutes. This is a very simple and easy to cook recipe. I hope you like the video.

Ingredients:
- Beef (boneless) 1 kg
- Oil or ghee 3/4 cup
- Homemade karahi masala 3 tbsp
- Garlic (grated)1 tbsp
- Ginger (grated)1 tbsp
- Tomatoes (halves) 4 large/500g
- Green chillies (slits or sliced) 2-3
- Ginger (julienne) for garnish
- Fresh cilantro for garnish
- Hot water 2 cups
- Onions (sliced) 2
- Salt 1 tsp
- Charcoal (for smoke) 1 piece
Homemade karahi Masala
- cumin seeds
- Corrainder seeds 1 tbsp
- Black peppercorns 13-15 nos
- Black cardamoms 2
- Cloves 3-4
- Red round chillies 6-8
- Kashmiri chilli powder 1 tbsp
- Turmeric 1 tsp
- Salt 1 tsp
- In a pan add coriander seeds,cumin seeds, black peppercorns, black cardamoms to dry roast over medium low heat until lightly fragrant. Roasting whole spices will awaken the flavor.
- Once whole spices cool down, grind coarsely.
- Peel two onions and slice them.
- Add beef boneless meat, sliced onions, grated ginger and garlic, salt and hot water into the karahi (wok). Turn flame on high to bring the mixture to boiling. Once it reached to the boiling, cover lid on and cook beef for 45-50 minutes until one cup of water remains and beef boneless meat is cooked through 70-80%. Further meat will be cooked in the tomato gravy with Karahi seasonings.
- In the meantime, prepare other ingredients which is require for making karahi gravy and for garnishing. Cut tomatoes into halves and set aside. Chop green chillies. Cut ginger into julienne and chop fresh cilantro for garnishing.
- Uncover the lid, check meat for doneness, if you feel it’s still need to cook more then don’t worry because remaining meat cooking will happen in tomato-based gravy. Now add tomato halves skin side up and cover the lid on for 7-10 minutes to let tomatoes soft on its own in cooking steam. Uncover, remove tomato skin using tong or fork, it will peel off easily.
- Once tomato skins are removed, mash all tomatoes into the gravy through wok steel spatula and stir continuously until tomatoes are completely mixed into the gravy mixture. Add oil and prepared karahi masala (spices) into the meat and stir it continuously for 8-10 minutes. This step is important for karahi to create thick gravy texture and blend of spices will enhance the flavor and aroma of the whole dish. Once oil has risen to the top and the gravy has thicken. Now your dish is ready. Final cooking is done with covering karahi on medium-low heat for 3-4 minutes. At last, garnish karahi with ginger juliennes and fresh chopped cilantro.
- Serve Koyla karahi with hot tandoori naan or chapati with fresh onion-cucumber salad on the side.
- Enjoy!

    Hi...what to do, if the instant pot doesn't have steam mode?? I have a new model of instant pot and in my model the steam function is missing. Please help. Thanks 🙏🏻

      Add 2 cups of water to the bottom of instant pot, place steam rack in the pot and cover the steamer pan (poured mixture). Close instant pot lid and set valve on sealing. Press ‘Pressure cook’ option and set cook time for 20 minutes manually. Once cook time finishes release pressure on vent. Another option is that you can cook on stove top by pouring water in a pot on medium heat, bring to boil, set a rack to place Khaman Dhokla mold. Cover lid and steam for 20 minutes. Check your khaman by running knife in the middle. If knife came out clear means it’s cooked. I hope this helps.

      Rice paper tends to stick everywhere but you can still work with it. I would suggest to keep your working surface (like cutting board) little damp with water so that it won’t stick and it will get easier to work with. As you continue to work along you we will get the idea of handling rice paper.
