Why in the world are you adding corn starch to powder sugar...it's increasing your appetite more than just from regular sugar and you have more metabolic issues from corn as well...ugh...
When I make vanilla, I make it in 2 quart jars. I use the 1st quart jar until it's about 1/3 gone, then I refill it with spiced rum, or vodka. I put that quart behind the 2nd quart jar, and start using vanilla from the 2nd quart jar. Every couple of years, I add more vanilla beans to each quart, but leave the original beans in there. I never have to start vanilla from scratch, and have been able to give my grown kids vanilla, as gifts!
@@sharonrowland3041 I’m not sure if you’re asking me or Lisa, but I use 4-5 beans per 8 oz, so for a quart I’d probably use around 20 beans just to make sure there’s enough flavor.
Please remember not to toss out the vanilla pods. Once you decant your finished extract, just refill the jars with your favorite alcohol. I'm on batch 5 with my current pods. They seem to last forever this way.

I’ve been making my vanilla for many years. I bake and decorate sugar cookies for all occasions for family, so I go through lots of vanilla. The recipe I first used indicated using Grade B vanilla beans and that’s what I’ve always used. I imagine it’s cheaper than the Grade A. I also make cinnamon extract w cinnamon sticks; great flavor for my Mexican wedding cookies. I make lemon extract w the zest of my Meyer lemons which I grow. Finally, I make coffee extract w coffee beans, anise extract w anise stars and orange extract w orange zest . Your video is awesome. I’ve got new ideas!
What do you use the star anise extract for when baking. I got a pretty big batch and can’t remember why I got it 🤦♀️ And I do the same making all those extracts plus more. Cocoa nibs are another one you should try. Delicious and very healthy.

Grade B vanilla beans are the best for extract, they aren't as pretty but have more flavor. I also tried vodka, rum, and brandy when i made my extract, the brandy was the best by far out of mine.
The correct ratio for homemade vanilla extract is 1 oz of vanilla beans to 8 oz of vodka. When using vodka, it will mature in 12 months. Other liquors range from 18-24 months to fully mature. Also, a seam ripper makes it easier to split the bean pods down the middle.
There is no exact correct ratio for making vanilla. They suggest that amount, but you can use more or less depending on how strong of a flavor you want. Great idea to use a seam ripper🙂

The liquid from making butter is not a true buttermilk rather a butter whey. A true buttermilk requires a culture to make it. I make it all the time as I use it in making my cheeses along with yogurt.

Last time I made a batch of vanilla extract, I used the dark spiced Captain Morgan rum. Oooooh was it good. Granted, you really can't follow the darkening process but, the taste when it was finished was worth it.🤤 I currently have a pint of regular Smirnoff vodka with fresh mint from my garden. Never done the mint before so, I'm looking forward to see what it will turn into. I regularly make hazelnut extract, since I love that in my coffee. I have however for about a year now, added one vanilla bean stick to the jar. Tastes great in my coffee and when I use it to bake with.

I have been making my own vanilla for a few years now. I have done several different alcohols. My favorite, that I use for everything vanilla, is Captain Morgan's spiced rum. Any brand would work but for some reason, the spiced rum makes the best. I have used in everything from French toast to cakes and cookies. I also found about a year of sitting in a dark place, occasionally shaking the bottle to dissolve as much vanilla bean in to the alcohol as possible, gives the best flavor. As you use it up, you can just replace the alcohol used and reuse the vanilla pods for several batches. Simple and lasts forever. The longer they sit, the better the taste. Thank you so much for these recipes. I love learning new things in my kitchen.

Hello, regarding the vanilla, I learned a great trick. If you use your instant pot as a canner, set the jars on top of the rack it comes with, a little water at the bottom and pressure cook- then you can actually "can" pint jars of vanilla without the alcohol escaping out of it and that vanilla will be infused in about 30 mins versus 3 years :) Then when your jars have cooled, just funnel them into your cute jars. This is a lifesaver for me and the best infused vanilla for baking

Wow! I never knew how to make butter, brwn sugar, or powdered sugar, im totally impressed, im 79 & we can STILL teach old dogs new tricks. My new research is now learning different processes of Vanilla paste, either with alchole , non alcoholic, vs cooking the vanilla bean first b4 blending OR just blending the ingredients in a vitamix, using gum additive, vs not to use it, there is one gal on TH-cam that tried 3 different recipes, but i figure its all in our own tastes buds, vs the cost. Well thats my next new journey. I just Love making my own stuff, becuz these companies rip off consumers with price gouging. ❤❤❤❤ Love ur channel ❤❤❤
❤ use a mixer for the brown sugar if you have one & dont have patience😂❤ the kneady homesteader has great insight with the vanilla essence. Just put em in whole if the bottle is big enough & chuck it up in the cupboard for 6 months or so. She replenishes when needed but leaves her vanilla beans in the bottle & just adds more. Over time the bean will break down into the alcohol so absolutely none of it gets wasted, its so cool😊 and bekky from acre homestead swaps them out after a while & puts her beans into sugar😊❤
For the butter, your using the ice water to get all the buttermilk out of the butter. Not to firm it up. That does happen naturally with the ice water but that’s not the reason you’re doing it. It’s strictly to get out the buttermilk that goes bad rapidly if you wanted to store your butter for more than couple days in fridge. Simple.
Vanilla flavored rum and vodka sounds good. Seriously though I am going to make my own vanilla. I just spent a fortune on an 8 ounce bottle of premium vanilla.
Great video--thank you! I've got some vodka-based vanilla in the original 1.75 L bottle; I decant some as needed into the smaller bottle that lives in the spice rack. When the level gets too low in the big bottle, I just buy more vodka and top it off. It's been going since the summer of 2016. I tried making some with Everclear--never again! It was vile. You can also make your own baking powder: 2 parts cream of tartar, 1 part bicarbonate of soda (baking soda). You can make as much or as little as you like at a time. If you intend to keep it for a while, add 1 part corn starch. This way you'll always have the freshest baking powder to use.
Hi from Ireland. Loved watching the video even though i knew how to make it all. I've never tried making vanilla before, i dont use much of it at all but i might just try 1 bottle to see how it turns out. Its always good to know how to make things at home. I bake everything from scratch and teaching my 2 youngest now. Here its cheaper to just buy brown sugar instead of making it, same with the butter etc. Believe me if it was cheaper I'd definitely be making it! So over a year ago 1kg (2lb 3oz) of sugar was about 70c, now its €1.69, thats from Aldi, butter was around €2.19 for 1lb, now its €3.39, it went down in price to €2.99 a few months ago then over night they put it up to €3.39. I've read that butter over there in parts is extremely expensive. Love your accent and will be having a look at your other videos 😊
What a great video!! Real Money savers!! I’ve done the vanilla extract both with rum and vodka and it really saves a lot of money and I haven’t bought vanilla for a long time. You could reuse the beans. You can do the same with mint and almonds! Thank you for sharing cuz I always have to run to the store for powdered sugar..well, no more of that lol !! It's fulfilling to me, plus it's cheaper per pound to buy bulk sugar and make brown sugar or powdered sugar so the wallet's happy. I love how real you are with your story telling. Then your gas station story had me rolling 😂 I have a bottle of vanilla that is ready to go for the holidays. I do a batch every October so it's good for next year's holidays. Not this year though. I don't drink alcohol, not a teetotaller, it just makes me feel off and I feel no judgement at other shoppers; but I can so relate to your alcohol buying story. No one else cares. I discovered the butter making by accident when I didn't watch my whipping cream well. Before I knew it, liquid splashed all over and butter in my bowl. Didn't want to waste it so I finished the butter. Rinse your butter when finished with water until the water is clear. This gets the buttermilk out of the butter. That way the butter won't spoil on the counter. I season it with a little salt which helps the preservation. So yummy! This can also be used to make awesome compound butters. Add herbs of your choice. Orange extract, cinnamon, lots of things you can do.
I have been making it for about 30 years. Same jar just poor some in a bottle like your giving away, and add Vodka to old jar. Beans added every so often. Definitely needs to be dark area and shake vigorously not just tilts. You need those beans as the get soft insidde to come out and mix in. I use a midrange Vodka...Definitely taste better ! Hope it goes well for everyone ❤

The carreggean can cause (Bloating Inflammation Irritable Bowel Syndrome (IBD) Colon Cancer Liver Cancer Glucose Intolerance Insulin resistance Immune Suppression Fetal Toxicity Birth Defects Ulceration in Large Intestine) in the whipping cream is a no no also. It's just easier to buy butter or use a carreggean free whipping cream. The vanilla, I definitely will try it. Thanks you for your videos. 😊

The cornstarch can be omitted, but it helps with clumping if you are storing it for a while. Butter is easier to buy for sure, but it’s fun to make also😁😁

Just put em in whole if the bottle is big enough & chuck it up in the cupboard for 6 months or so. She replenishes when needed but leaves her vanilla beans in the bottle & just adds more. Over time the bean will break down into the alcohol so absolutely none of it gets wasted, its so cool😊 and bekky from acre homestead swaps them out after a while & puts her beans into sugar😊❤

For the butter, your using the ice water to get all the buttermilk out of the butter. Not to firm it up. That does happen naturally with the ice water but that’s not the reason you’re doing it. It’s strictly to get out the buttermilk that goes bad rapidly if you wanted to store your butter for more than couple days in fridge. Simple.

Great video--thank you! I've got some vodka-based vanilla in the original 1.75 L bottle; I decant some as needed into the smaller bottle that lives in the spice rack. When the level gets too low in the big bottle, I just buy more vodka and top it off. It's been going since the summer of 2016. I tried making some with Everclear--never again! It was vile.
You can also make your own baking powder: 2 parts cream of tartar, 1 part bicarbonate of soda (baking soda). You can make as much or as little as you like at a time. If you intend to keep it for a while, add 1 part corn starch. This way you'll always have the freshest baking powder to use.

Hi from Ireland. Loved watching the video even though i knew how to make it all. I've never tried making vanilla before, i dont use much of it at all but i might just try 1 bottle to see how it turns out. Its always good to know how to make things at home. I bake everything from scratch and teaching my 2 youngest now. Here its cheaper to just buy brown sugar instead of making it, same with the butter etc. Believe me if it was cheaper I'd definitely be making it! So over a year ago 1kg (2lb 3oz) of sugar was about 70c, now its €1.69, thats from Aldi, butter was around €2.19 for 1lb, now its €3.39, it went down in price to €2.99 a few months ago then over night they put it up to €3.39. I've read that butter over there in parts is extremely expensive. Love your accent and will be having a look at your other videos 😊

What a great video!! Real Money savers!! I’ve done the vanilla extract both with rum and vodka and it really saves a lot of money and I haven’t bought vanilla for a long time. You could reuse the beans. You can do the same with mint and almonds! Thank you for sharing cuz I always have to run to the store for powdered sugar..well, no more of that lol !! I don't drink alcohol, not a teetotaller, it just makes me feel off and I feel no judgement at other shoppers; but I can so relate to your alcohol buying story. No one else cares. Just me if I go into buy alcohol, but I get embarrassed or weird about it. I'd much rather brew it for myself at home somehow. Now there's an idea... when lockdown happened I flirted with the idea of producing some, (difficult as it was to buy at the time) for sterilizing purposes...

I discovered the butter making by accident when I didn't watch my whipping cream well. Before I knew it, liquid splashed all over and butter in my bowl. Didn't want to waste it so I finished the butter. Rinse your butter when finished with water until the water is clear. This gets the buttermilk out of the butter. That way the butter won't spoil on the counter. I season it with a little salt which helps the preservation. So yummy! This can also be used to make awesome compound butters. Add herbs of your choice. Orange extract, cinnamon, lots of things you can do.

In the UK, we don't use corn starch in our powdered sugar.

I have been making it for about 30 years. Same jar just poor some in a bottle like your giving away, and add Vodka to old jar. Beans added every so often. Definitely needs to be dark area and shake vigorously not just tilts. You need those beans as the get soft insidde to come out and mix in. I use a midrange Vodka...Definitely taste better ! Hope it goes well for everyone ❤

The cornstarch can be omitted, but it helps with clumping if you are storing it for a while. Butter is easier to buy for sure, but it’s fun to make also😁😁
