EASIER WAY TO DO IT! Been a baker for a long, long time! Place the butter on very low heat as if you were to clarify it. Let it cool. Place it in the fridge then, pour the buttermilk off. The fat will separate naturally because it will have hardened in the fridge. Now, whisk the vodka into the buttermilk. No heat, no alcohol burn-off. Safer than putting the vodka on the flame.

This looks effectively the same as "fat washing" spirits! I recommend using room temperature alcohol and melting the fat separately, then combining both in the blender for at least a minute. It's a little bit more cleanup but you generally get a more thorough extraction Definitely excited to use fat washed alcohol in cookies, thanks for the awesome tip!
You are correct. I have also seen it called “fat washing”. There are several ways to do this. As you mentioned above, the blender works great with the warm butter, but with a bit more cleanup. You can also grate it and put the butter and alcohol in a jar together, placing it in the refrigerator once combined, for at least 24 hours. More time is better. Heating it up supposedly speeds up the process and the heat is supposed to help combine the butter and alcohol quicker. I think any way you decide to do it is the right way!!!

Renee my granny had a simpler recipe she would take three cups of whiskey and two cups of brandy two cups of vodka and a cup and a half of old port sherry and half a bottle of Chardonnay mix them all together with one tea bag (tetley tea ) she would make a sponge cake While the cake was cooking she would drink her recipe get drunk and give us burnt sponge cake for supper ah the good old days 😂😂😂😂😂😂
In order to get brown butter you need to cook off the butter milk first which is the part used for this extract . The use of brown butter in baking, would be to replace oil , but then it just adds a burnt taste , that’s why you never see it much in recipes.

I bought some McCormick butter extract (it was on clearance at a steep discount) and use it to flavor oil that I substitute for butter in baked goods (ones that don't involve creaming) with excellent results. When I run out, I will definitely give this a try!

I would start with a light teaspoon full. 1/2 teaspoon seems like it wouldn't be enough. I have not tried this in a bread recipe. Let me know how it turns out. Hi, Renee! Sorry this is so long, but I need your advice. Yesterday I got this recipe going, and just a few minutes ago tonight my hubby helped by squeezing the liquid out of the butter. I sampled it the way you did, tasting just a tiny bit and waiting a few seconds to get the full effect. But I didn’t get the butter taste at all. All I could taste was the very strong taste of the vodka. The liquid looks exactly like yours did, but by the time I strained it, I only got about 1/3 of the amount you did. My frozen butter didn’t look the same as yours did. It was more along the lines of a Slurpee, instead of solid butter. Did I do something wrong? I thought I followed your instructions and demonstration well, not letting the butter & vodka boil. I used unsalted Danish Creamery, 1/2 cup (1 stick) to 1 C of the Vodka. Can I do a “booster” to the liquid by repeating the first cooking step with it and either more of the same butter or perhaps a different type of butter? I want to make those cornmeal cookies you made, where you used a bit of the butter extract. If I get the extract straightened out, could I use 1/2 tsp of it in the dough for the scones? Woozy bottle - I worked for Kroger Corporate in Cincinnati for a few years and one of my buyers was the one who purchased containers for many of the Kroger products made in their food manufacturing plants (Kroger is the largest producer of food items in the United States from bakery items sent to the stores to all the canned and bottled products like green beans and such). I mention all this because Kroger is where I learned the word "woozy" as the easier to say, shortened version of the word Worchestershire sauce. Everyone at Kroger uses the term "woozy" to refer to that longer named sauce! Just a little bit of my own "history" with that word. I won't swear it originated at Kroger, but it was and is used regularly because it's so much easier to say!
My grandkids are lactose intolerant, but i can use "clarified" butter in their recipes. Does this process basically do the same making it OK to use in baking for my lactose intolerant kiddos (well... and my SiL) 😂?
When you clarify butter you are separating the fats from the milk solids in the watery part of the butter. The alcohol in this process is dissolving those milk solids into the alcohol so this extract would likely be exactly the wrong thing to give to your grandchildren.

Couldn’t you just buy the clarified butter then. What would be the amounts to combine if you did?

Safer, yes. But, you'd have to keep the liquid in the fridge as it will go bad. The vodka method will keep in the cupboard.

Take spiced rum and put in vanilla beans. Gives a rich flavor.

I haven't tried it in anything cold yet. I plan to experiment with it though, so I'll let you know what I learn!! Great question!
Great video. If you are certain that the alcohol content is still high, it doesn’t need to be refrigerated. Alcohol is a natural preservative

Woozy bottle - I worked for Kroger Corporate in Cincinnati for a few years and one of my buyers was the one who purchased containers for many of the Kroger products made in their food manufacturing plants (Kroger is the largest producer of food items in the United States from bakery items sent to the stores to all the canned and bottled products like green beans and such). I mention all this because Kroger is where I learned the word "woozy" as the easier to say, shortened version of the word Worchestershire sauce. Everyone at Kroger uses the term "woozy" to refer to that longer named sauce! Just a little bit of my own "history" with that word. I won't swear it originated at Kroger, but it was and is used regularly because it's so much easier to say!
My grandkids are lactose intolerant, but i can use "clarified" butter in their recipes. Does this process basically do the same making it OK to use in baking for my lactose intolerant kiddos (well... and my SiL) 😂?
I actually don't know the answer to that!!!! Good question!!! Hopefully someone on here can help!!!
When you clarify butter you are separating the fats from the milk solids in the watery part of the butter. The alcohol in this process is dissolving those milk solids into the alcohol so this extract would likely be exactly the wrong thing to give to your grandchildren.
