My son-in-law likes my meatloaf. Every Christmas I give him a new kitchen cooking pan with the meatloaf made in it. This is going to be next Christmas’s pan! Love the stuffing idea instead of bread crumbs. I always have stuffing mix in the house.

Making your fav. meatloaf recipe in muffin tins was something my dad and I found out about ages ago. We would make ours with onion soup mix and always froze the extras. Up until he passed, it was one of his fav. things to make and to eat. Said two were just the right size and so easy to warm up from frozen.
Amber, since you love potatoes and asked which stuffing we prefer.....you MUST try potato stuffing! It is common in Amish & PA Dutch families. We grew up on it. Potato stuffing (AKA Potato Filling) is essentially a mix of bread stuffing and mashed potatoes.
That sounds wonderful. I looked up a version of it and it seems really easy. I'm already thinking of some different versions to make it my own. Add a little leftover turkey, peas, bake in the muffin tin and you have yummy left overs.

Amber, all of these recipes look so delicious. I can’t wait to try the potato & bacon. It would make a wonderful side dish with any type of protein. Your recipe with the stuffing gave me a great inspiration too. I have a casserole that’s intended to use up left over turkey or use rotisserie chicken, or cook up chicken for this casserole. I’m going on memory, but it has turkey or chicken, Stove Top Stuffing, Cream of Chicken soup, cheese … those are the main stars. The whole mixture goes into a 13 x 9 pan, but I was thinking that would be great to do in muffin cups & it would be a great way to watch your serving size. Another recipe I have can be for any meal. its made with croutons, an egg & milk mixture & cheese. The flavor of the croutons is the flavor of the overall dish. If you're interested in either recipe, I'd be happy to share it with you.
I like to freeze or dry any extras I have to use in winter when produce prices, at least in the far north where I live, skyrocket. I'm way too cheap to spend 5 dollars or more on celery, especially when I remember paying less than 75 cents for it not long ago.
I made meatloaf once using a box of stovetop stuffing. It was delicious!! I used lean ground beef and there wasn’t very much fat so it was actual all soaked up into the meatloaf. In a good way! It didn’t taste greasy or fatty it was just delicious!

My dad makes the best stuffing. We have a big family and we used to have like 40-50 people for thanksgiving dinner. He would melt an entire pound of butter and in that sauté an entire bunch of celery sliced up and a giant onion or two. He would add the poultry seasoning or whatever spices and then we would cube like 4-5 of those giant loaves of bread. Like these loaves each had at least 30 slices in them. So in the end it wasn’t greasy even though it was a LOT of butter to start with. For leftovers my mom makes a turkey and dressing(stuffing) casserole. Chopped turkey mixed with maybe some corn or peas and gravy, and the stuffing on top. We usually didn’t have leftover mashed potatoes but if we did those went on the top, with the stuffing on the bottom instead. Sometimes we make small batch of dressing and use a rotisserie chicken if we’re craving the casserole.

My mother inlaw makes meatloaf cupcakes they are pretty darn tasty.. She makes the meatloaf in the muffin tins then tops them with mash pot with a bit of grated cheese sprinkled on top. I save butter wrappers which are actually parchment paper. I would line the cups with butter wrappers to make the clean up easier. But yes, I love your idea of doing meatloaf and a muffin pan!!

From a photo I saw somewhere I began making meatloafs in muffin tins very similar to your recipe. I then made very smooth mashed potatoes and put it in a piping bag. When the little meatloaf cups come out of the oven with the sauce, I transfer them to plates and add mashed potato "frosting" to make them look like cupcakes. Great for a birthday party or celebration.
Hi Amber. I just found your page and love all your muffin tin ideas. I discovered one that is pretty much my go to. The fact I was able to cook it without a actual recipe really made me feel good and I have been making them every so often. My only complaint about using muffin tins is I tend to eat several of them at one time. 😊. I had some leftover, cooked biscuits no one wanted and they were a bit hard. I cut them up. I made an egg mixture (however you prepare eggs to scramble). I put the biscuit bits on the bottom of muffin tins after spraying the tins, added some shredded cheese, poured enough egg to just cover the biscuits. top with more cheese precooked sausage or bacon bits. I baked them at 350 for about 15 - 20 minutes. The eggs puff up and when you take them out, fall like a soufle. They will be brown and a bit crunchy on top. They make a quick grab and go breakfast. I just made some potato stacks in them and they turned out pretty good. I found coming up with muffin tin ideas is a great way to use up some leftovers as well. I thought about meatloaf but never got around to trying it. I can see doing some potato stacks in one half of the 12 cup tin and half of the meat loaf. Since it takes a while to cook the thick potatos, I bet they'd be done about the same time. Thanks for the inspiration.
I do the stuffing mix in my meatloaf now. My husband loves it that way, too. And since it's just the 2 of us, I make mini loaves. And sometimes I wrap bacon around them. I can't wait to try making the potato roses. Thanks for the easy recipes!!!
Love the mini meatloafs. I have another idea for you, make your meatlosf mix and form it into patties and fry in a skillet, it is a fast way to have meatloaf and delicious. I brown both sides and then add the sauce on top, so good and pretty on the plate. My husband likes melted cheese on his. sides of mash, blackeyed peas, green beans and hot biscuits or corn bread.
How can we possibly resist those bacon potato roses, they look phenomenal. I will be making the stuffing muffins, they'd be lovely with a Roast Chicken dinner. Thank you so much for sharing Amber xxx
I also love potatoes & bread.😂 I make southern cornbread dressing like my mom made. I actually used some of the leftover dressing at Thanksgiving, and made mini waffles with it. So good! I love the idea of making muffins with it.
My mom used saltine cracker crumbs, 2 eggs, an onion, green pepper, with a mixture of ground beef and sausage (2/3 - 3/4 beef, w 1/3 - 1/4 sausage). She would also simetimes make them into patties, which cook up quicker than a loaf or casserole pan. She also never put a sauce on her meatloaf. Always delicious even though, like you, she swore she never made it the same way twice!
I’m with you on potatoes any way and crunchy. Great ideas. I use the mini muffins for pumpkin mini muffins (can of pumpkin pie filling and spice cake mix only) so good.

Lovely meatloaf. For the kids/some adults, I mix ketchup and brown sugar together and pour it over the meatloaf the last 15 minutes of baking. The kids really like it!
My meatloaf sauce has always been just ketchup and Worcestershire because that was what my mom did. I like the meatloaf muffin idea because I can’t eat beef but my son prefers it. This way I can make my turkey or chicken loaf and he can have beef.
A few years ago I was trying to think of a way to use leftover mashed potatoes and I came up with something I call Potato Puffs. I thought individual servings would be a fun way to do them and would allow for more surface area to brown! I added meat & cheese so I only needed to make a veggie on the side. I liberally sprayed muffin tins to prevent sticking & heated the potatoes in the microwave to make them easier to work with. Fill the muffins about 1/3 with potatoes leaving a dip in the middle. Put a small meatball or half a larger in the middle of each, top with a pinch of shredded cheese. Cover the meat & cheese thoroughly rounding the tops of each one. Bake at 350 for 15-20 minutes (it takes less time if using heated potatoes and meatballs) then bake at 450 for 5-10 minutes more to brown/crisp up. Run a knife around sides & enjoy! I've added more cheese to the tops as well. They are crispy on the edges with soft centers. You can use any meatballs & type of cheese as well as season to your taste. A great way to use leftovers & the single servings are always fun to have. I have a tin made for a dozen mini brownies fun to use for any ideas like those in this video as well! I want to try the bacon/potato roses the most-YUMMY!

I was constantly asking her how I write "enough of this until the color looks right, the right consistency, asking Do you ever write anything down"? The day a friend told me the same thing I ran to Grams saying, I did it, I did it, I did it, I turned into a great cook, I turned into you! I also discovered that I have the habit of throwing together all sorts of things, often making a new meal out of leftovers. But if someone asks for the 'recipe' I have no idea the times, temps, measurements or often even all the ingredients. Thankfully with things like these potatoes there are few enough ingredients I can remake them repeatedly to get these things written down to share. I truly love to create new ideas but they only have value if there are friends & loved ones to enjoy them in the end. I hope you try these and your family enjoys the taste!
I love the idea of muffin tins. Your recipes got my mind thinking; not only meal prep but portion control. Another is making ahead for those famished teenagers getting home from school. Last idea is the sausage stuffing and potatoes roses would be a hit on Thanksgiving. You can make few days in advance so thanksgiving day less stressful. Presentation would be stunning.

I do the stuffing mix in my meatloaf now. My husband loves it that way, too. And since it's just the 2 of us, I make mini loaves. And sometimes I wrap bacon around them. I can't wait to try making the potato roses. Thanks for the easy recipes!!!

Love the mini meatloafs. I have another idea for you, make your meatlosf mix and form it into patties and fry in a skillet, it is a fast way to have meatloaf and delicious. I brown both sides and then add the sauce on top, so good and pretty on the plate. My husband likes melted cheese on his. sides of mash, blackeyed peas, green beans and hot biscuits or corn bread.

I make southern cornbread dressing like my mom made. I actually used some of the leftover dressing at Thanksgiving, and made mini waffles with it. So good! I love the idea of making muffins with it.
My mom used saltine cracker crumbs, 2 eggs, an onion, green pepper, with a mixture of ground beef and sausage (2/3 - 3/4 beef, w 1/3 - 1/4 sausage). She would also simetimes make them into patties, which cook up quicker than a loaf or casserole pan. She also never put a sauce on her meatloaf. Always delicious even though, like you, she swore she never made it the same way twice!

Lovely meatloaf. For the kids/some adults, I mix ketchup and brown sugar together and pour it over the meatloaf the last 15 minutes of baking. The kids really like it!

My meatloaf sauce has always been just ketchup and Worcestershire because that was what my mom did. I like the meatloaf muffin idea because I can’t eat beef but my son prefers it. This way I can make my turkey or chicken loaf and he can have beef.

A few years ago I was trying to think of a way to use leftover mashed potatoes and I came up with something I call Potato Puffs. I thought individual servings would be a fun way to do them and would allow for more surface area to brown! I added meat & cheese so I only needed to make a veggie on the side. I liberally sprayed muffin tins to prevent sticking & heated the potatoes in the microwave to make them easier to work with. Fill the muffins about 1/3 with potatoes leaving a dip in the middle. Put a small meatball or half a larger in the middle of each, top with a pinch of shredded cheese. Cover the meat & cheese thoroughly rounding the tops of each one. Bake at 350 for 15-20 minutes (it takes less time if using heated potatoes and meatballs) then bake at 450 for 5-10 minutes more to brown/crisp up. Run a knife around sides & enjoy! I've added more cheese to the tops as well. They are crispy on the edges with soft centers. You can use any meatballs & type of cheese as well as season to your taste. A great way to use leftovers & the single servings are always fun to have. I have a tin made for a dozen mini brownies fun to use for any ideas like those in this video as well! I want to try the bacon/potato roses the most-YUMMY!

@@FeedingtheByrdsBack when I was young & building my T & T family recipe box to start for my own family I tried getting many recipes from my Grandma. I was constantly asking her how I write "enough of this until the color looks right, the right consistency, asking Do you ever write anything down"? The day a friend told me the same thing I ran to Grams saying, I did it, I did it, I did it, I turned into a great cook, I turned into you! I also discovered that I have the habit of throwing together all sorts of things, often making a new meal out of leftovers. But if someone asks for the 'recipe' I have no idea the times, temps, measurements or often even all the ingredients. Thankfully with things like these potatoes there are few enough ingredients I can remake them repeatedly to get these things written down to share. I truly love to create new ideas but they only have value if there are friends & loved ones to enjoy them in the end. I hope you try these and your family enjoys the taste!

I love the idea of muffin tins. Your recipes got my mind thinking; not only meal prep but portion control. Another is making ahead for those famished teenagers getting home from school. Last idea is the sausage stuffing and potatoes roses would be a hit on Thanksgiving. You can make few days in advance so thanksgiving day less stressful. Presentation would be stunning.

When I make meatloaf I add fresh herbs straight from the garden. (Quick rinse!) You get more nutrients as well as a ton of flavor! ☺️
