- Savory Sausage Egg Breakfast Muffins
1 pound sausage
7 large eggs, divided
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 cup canola oil
1 cup shredded cheese (your favorite variety), divided
Preheat your oven to 400°. Either line your muffin tins with muffin cups or spray the muffin tin well. Set aside.
 Using a nonstick skillet, cook the crumbled sausage over medium heat until it is no longer pink. Drain the sausage; set aside. Clean or wipe out the skillet.
Whisk five of the eggs in a bowl. Pour into the skillet and cook, scrambling the eggs, just until they are done and no longer watery. Set aside.
Using a large bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the remaining two eggs, milk, and oil.   Gently fold in the crumbled and cooked sausage, the scrambled eggs, and 2/3 of the cheese. Spoon into your prepared muffin cups and top each muffin with a sprinkling of the remaining cheese. (This should make approximately 15 to 18 regular sized muffins or 10 to 12 jumbo muffins. )
For regular sized muffins, bake for 12 to 15 minutes. For jumbo muffins, bake for 15 to 20 minutes or until the center of each muffin is done. 
If desired, serve with pancake syrup on the side or drizzle syrup over the muffins.

Spray your meat masher, as you call it, with some non stick spray and your meat won't stick to it!

If you spray a little Pam or olive oil spray on your meat masher the sausage or hamburger won’t stick to it as much!! Hope that helps?!! 😊😊😊

Tom, a trick I once read about, said to add 1 tablespoon of water per egg for fluffier scrambled eggs. It really works, and I won’t fix eggs without it anymore.

I learned to use water instead of milk in my eggs from my grandma years ago. It does make them fluffier.

I have froze them on baking sheet and then used my bag and seal to freeze them for a while. The heat up.

Just found your channel. Those muffins look so good. I can't believe anyone would complain about these. The whole idea is getting the basic idea and then tweaking the recipe the way you'd want to try it. I always make the recipe the way it was shown, then take it from there to put my twist on it. If you have never tried cornmeal, sausage, cheese muffins .... you should try them. I use a box of Jiffy mix & follow directions on box for muffins. Add sausage & cheese to batter. Bake in muffin tin. Delicious.
Also, diced ham & swiss cheese is great alternative . Thanks for todays video.

Is it odd that I really don't like muffins or cupcakes in liners? I get their purpose, but for some reason, I've always preferred them just from the pan instead of in liners. Anyone else have that quirk?
I also would rather make them without the liners. We just have to make sure we grease the Muffin pan - sides & bottom to make sure the muffins don't stick.

We do recommend a few drops of pancake syrup on top of these, but we didn't want to go to the grocery again before our trip home (and they would be messier in the vehicle with syrup), but the syrup - just a few drops - really makes these extra great!
