    I used to watch Anthony Bourdain's cook/travel shows..he was such a nice, funny guy and visited lots of fascinating places. When he died i stopped watching food shows because no one could come anyway near him and all the other shows were soooo lame.
    I accidentally found Sonny and after two days of non-stop watching him traveling all around Asia i just had subscribe.
    I finally found someone who makes me laugh again while drooling over delicious dishes. Sonny's voice (when he is narrating things in the background) is similar to Anthony's: Distinctive, friendly, professional and easy to understand (i'm from Finland and at times it is difficult for me to understand what is being said).

    The history of lechon is a lot more complicated that just it being a "Spanish influence". Pigs are some of the first animals that had been domesticated by Austronesians, while grilling and roasting are some of the most common methods of cooking, therefore a lot of cultures have their own versions of roasted pig. In fact during Magellan's voyage, his chronicler Antonio Pigafetta mentioned that they were served with roasted pig. In Cebu the term (Lechon) was not widely used until the late 1990's or early 2000's, the local term was (Sinugba). This happens a lot in the Philippines, a lot of local dishes had their original names be replaced or supplanted by a Spanish derived name, another example of this is (Adobo), this is another local dish that got its original name replaced. Originally, the Spaniards referred to this dish as (Adobo de los Naturales) which translates to (Adobo of the Natives) because it reminded them of a similar dish back home in Spain.
    The point that I'm making is, just because these dishes currently have Spanish derived names, it doesn't automatically mean that they are of Spanish origin.

      Not sure where you got that the word lechon was not widely used in Cebu until the late 90's. A whole roast pig has been called that since the 80's, I can't say for before that since that is before my time, but places selling lechon had signages saying lechon. Sinugba is for grilled food, and is the broader term.

    • @dayangmarikit6860
      @dayangmarikit6860 ปีที่แล้ว +2

      @@jovalrama5561 In most regions of the Philippines, lechón (spelled lechon without diacritic but also litson or lichon) is traditionally prepared throughout the year for special occasions, festivals, and the holidays. Although it acquired the Spanish name, Philippine lechon has pre-Hispanic origins as pigs are one of the native domesticated animals of all Austronesian cultures and were carried throughout the Austronesian Expansion all the way to Polynesia.[13] In the former Spanish colony of the Philippines, lechón (Filipino: litsón) is considered a national dish. As the usage of the term has evolved over the years, lechón has now come to refer to roasted pig in general (including suckling pigs). Suckling pigs in the country are referred to as lechón de leche, which corresponds to the term cochinillo in Spain.
      The native name of lechón is inihaw [na baboy] in Tagalog, a general term meaning "charcoal-roasted/barbecued [pig]".[23] Native names were also preserved in other regions until recently, like in Cebu where it was previously more commonly known as inasal until Tagalog influence changed it to lechon in the 2000s.[24] As the usage of the Spanish loanword evolved over the years in the languages of the Philippines, "lechon" has come to refer to roasted pig in general (including suckling pigs).[25] Roasted suckling pigs are now referred to in the Philippines as "lechon de leche" (which in Spanish would be a linguistic redundancy, though corresponding to the term cochinillo in Spain).[26]

    • @jovalrama5561
      @jovalrama5561 ปีที่แล้ว +6

      @@dayangmarikit6860 I was just sharing my lived experience as someone from the region you were referring to. Calling something lechon was definitely widely understood before the 2000's. I think the point of contention here is more on what 'not widely used' means. I did grow up using the terms interchangeably. At no point was there some place that I remember where you won't be understood saying one word instead of the other. It may be more fair to say that using the term lechon in written works became more frequent in the 2000's and inasal dropped off. That seems like something a study would be tracking--it would be hard to track how often it was spoken especially back--and it is understandable if shifts in the written word are delayed compared to the language as spoken seeing as most papers in the local dialect use words better understood by the previous generation. Hopefully that serves to address the seeming discrepancy.

      @@vishaalmohandas3836 we have the most common Pork Bafat (Bafat powder is a local special blend of spices) and pork sarpotel (meat plus intestines) . Both dishes are semi gravy, moderate to high spicy (depending on your choice) and Both taste amazing the second day, once the masalas are absorbed in the meat.
      Dried pork blood is added to make these have that smoky flavour making it even more tastier.
      These are best eaten with idlis or chapathi and even rice!
      Then we have the fan favourite pork chilli! A spicy ,red, semi gravy dish with green chillis that will pinch and tease your tastebuds. The meat is usually cut into bite sized 2 cm cubes(fat adjoining the meat) .
      This dish is a comfy accompaniment to a tall glass of beer .
      At last we have the Pork indad. A sweet -spicy combination dish. The meat is first fried in it's own fat and sugar , pepper and other spices are added. This imparts a dark brown -black colour from the caramelized sugar ,plus rubbery texture and a bite to the meat which is very satisfying: almost hard jelly like pull.
      This last dish is often made to order by catering services or it is homemade. Not all restaurants serve this.

    contrary to popular belief lechon, or at least the process of roasting pig did not come from Spain, it truly is a Filipino dish. As a matter of recorded and documented fact, the meticulous Italian chronicler of the Magellan expedition, Antonio Pigafetta wrote of witnessing Filipino natives roasting pigs upon arriving in the Philippines.
    Documented in the Antonio Pigafetta Chronicles y'all.

      It's meat roasted on a spit over an open fire. I bet the ancient people all over the world did that too since discovering fire.
      But I think I get what you're saying. It's like the Filipino Adobo. Our ancestors have been eating it long before. Then they served it to the Spanish when they arrived, and they stuck the Spanish "Adobo" name on it because they had a slightly similar dish, apparently.

      Everywhere in the world people roast pigs...
      Lechón is a Spanish delicacy.
      A suckling piglet cooked in a charcoal oven at a low temperature.
      It is common in Portugal and Spain and made his way to all their colonies.
      Philipine people couldn't afford it so the name Lechón started to be used to any roasted pig and today to almost any pork meat.
