    Hi guys! I'm excited to finally share this video with you today! Note: I don't have full recipes (with nutrition info) on my website for the recipes shown in the video, but if you'd like me to add them, let me know! And while all of these recipes are gluten-free, they could easily be modified into vegetarian and vegan options as well. In fact, I've been wanting to make a video for vegan cashew ricotta for a while, so if that's of interest to you, let me know. What would you make with these glorious vegetable sheets? - xo Lisa

      Hubby and I cannot have any kind of dairy or gluten we are extremely sensitive to both! Looking forward to all your upcoming Vegan Recipe Videos (AND that Cashew Ricotta Recipe) Thanks in advance! 👍

    I love zucchini lasagne. A tip to reduce water from the zucchini: lightly sprinkle the sheets with salt and let sit for 5 to 10 mins. Excess moisture will come out, which can be wiped away with a paper towel. Helps a lot with avoiding watered down sauce.

    KitchenAid really needs to create a Recipe book for this. I bought this for my wife as a Christmas gift, and I do like the Chicken Enchilada, I wish there would be more ideas given to us. Maybe a form of Apple Pie? Or maybe a recipe for Spring Rolls? A colorful book would really inspire more people in buying this.

      my idea for apple pie is phyllo dough with the apple sheets. May defeat the principal of replacing doughs with veggies, but I believe you can have both.

    I was just thinking you could avoid the apple sheet turning brown by misting both sides with lemon juice as it drops down. Or, I guess you could just have a bowl of lemon water underneath, but I think you could lose some of that great apple flavor. Just a suggestion.
    Blessings and health to you and yours and to all who read this! 😘👍😇💖

    I bought a kitchenaid mixer cause I love to make bread, but I was diagnosed with diabetes and can't make fresh bread anymore and my mixer has just been collecting dust. But now I can wash that dust off, I can see all the great recipes that can be made with this attachment and the price is not all that much considering the healthy food's that will be made with it. Thank for sharing this video AWESOME!!

    • @Downshiftology
      @Downshiftology  6 ปีที่แล้ว +7

      So glad you loved it! And I agree completely David. I don't think it's pricey at all. For me, as a celiac, gluten-free bread and pastas can easily cost $5-7 loaf/package, yet an organic zucchini is a fraction of that (and far healthier). :) Hope you enjoy the attachment and create some delish recipes!

    • @HingiKajoomer
      @HingiKajoomer 6 ปีที่แล้ว +2

      I’m not sure where you live but there are sugar replacements that aren’t Splenda. I highly recommend zing- it’s a mixture of stevia and cane sugar. Both my parents are diabetic (which means I have to prepare for that possibility for myself too) and I bake everything with it. It works amazing because it has the same texture as normal sugar. I’ve done pies, cakes, bread, cookies and I’ve never had a problem

    • @davidendsley2391
      @davidendsley2391 6 ปีที่แล้ว +6

      Samantha Ring thanks for your reply but the main problem is that bread is a carbohydrate which unfortunately turns into sugar in your system and beside that cane sugar is what regular sugar is made from, I can make bread without sugar at all but it still causes my blood sugar to rise because of the carbohydrates. P.S. I live in the big city of Las Vegas, NV

    • @HingiKajoomer
      @HingiKajoomer 6 ปีที่แล้ว +1

      Obviously you can’t eat bread on the regular but there are definitely alternatives . I’ve gotten my dad on 100% whole grain breads because the carbs are lower than regular white bread. I’m in Canada so I don’t know if zing is available in the US but I checked the package and it’s 2 grams of sugar for half a teaspoon which is a lot . It doesn’t have aspartame which is a lot better too.

      iTheGeek no actually, many people have families to take care of and/ or are already overworked. Personally, I'm a full-time student and i have a job and the list of things I'd try to do before i took the precious time to learn to thinly cut vegetables is days long. Many people aren't lazy, just short on time try not to be so judgemental

    • @iluveschool
      @iluveschool 6 ปีที่แล้ว +12

      You don't have to learn it. An easy way to have say for example two metal rods equal in diameter (The larger the diameter the thicker the slices) You lay the rods parallel and lay the food in the middle. You basically run the knife along the metal rods while cutting and rolling the food. The rods basically ensure that you always have an even thickness.

    I already have a few ideas, make sweet potato praline casserole but in layers instead of canned sweet potatoes. I bet people would eat it at Thanksgiving because they couldn't see the sweet potatoes LOL! Or make apple pie in a large roasting pan for big get togethers, or beef pot pie where the veggies don't poke through the crust.
    Also you could use those sheets with cookie cutters to make decorations or twirl into roses out of a firm tomato or red plum or use it to prep stuff for the dehydrator, think about how quick it would be to fill thee trays completely.... so much more than just wraps and lasagnas.

      Jenny, until you have your very own, you can do a similar, though not exact, thing with a mandolin. Just make sure it's very sharp and keep your fingers protected (don't ask how I know! :) ) and you'll get pretty good slices for zucchini, potatoes, cucumbers, apples, etc. They won't make sheets like this will, but you can make nice thin slices for zucchini lasagna, baked potato or apple chips.

    How does the apple not turn instantly black?

    • @Downshiftology
      @Downshiftology  6 ปีที่แล้ว +2

      I mention on the full blog post (linked in the description) that the apple does oxidize pretty quickly. You could always place the strips in a bowl of lemon water, which helps to slow that process a bit. But anything made with the apple is best eaten right away, whereas wraps, sushi rolls, etc made with zucchini or cucumber you can make ahead of time. :)

    I agree with the other comments about the price for this item. Kitchen Aid stand mixers retail from $400 to $1,000. The attachments retail from $13 to $400 dollars. The attachments arrive with many parts. Some parts are not ideal for the job too. Like their plastic pieces when they should really be stainless steel. Cleaning specifics need to be tended to as well. If you already own a stand mixer, it may be an incentive to purchase this attachment. This Vegetable Sheet Cutter attachment retails at $130. I would wait to see if there is roughly 30% - 50% discounts on it. As of 2/11/18 it is 38% off from the retail price at Amazon. Thankfully, I still have residual Amazon gift card balances from the holidays. I decided to gift myself a late Christmas present and I ended up paying $40 for this attachment. While I am happy to save money, I hope I enjoy using this attachment to the fullest.

KitchenAid provides both to people who feel they have more pressing or desirable things to do than all the prep work. Just my thought on why this is a great addition.

      Kitchen Aid used to be good. I have owned every color of their stand mixers just about. Every single one stalls when u turn it on, and I always have to slide the button all the way to high speed to start it, just to quickly turn it back. My professional silver slide up is horrible. I think the originals were top notch, but with everything...they raise the price and make the product cheaper. Oh well, guess I am saying don't waste money on one unless u can find an old faithful older avocado colored one at an estate or garage sale.

    Thank you for this video! I got one of these units after watching it a few months ago and it took me a while but I finally broke it out. So far so good with a couple of little learning bumps. Zucchini must be absolutely firm! Any soft spot will create issues because the black insert [that attaches to the mixer] won't be able to grab. For sweet potatoes, it takes some effort to insert it as well as the center rod so be prepared. Also, removing the rod from the left over core of the sweet potato can be a bit difficult/awkward. I'm thinking a bit of vegetable oil applied to it first might help. Thanks for the recipes and suggestions :) .
