    Great idea for the spring. So elegant. The Cook’s sparkling wine may be too cloying. What about leaving out the simple syrup if using a sparkler that is so sweet?

      You could do that for sure! The Cook's I was using was a brut champagne, not a particularly sweet sparkling wine, and I've only had this with brut champagne (from several brands) since then and it's always seemed perfectly balanced to be and the guests I've served. But yes, I would definitely back off the sugar if using a sweet wine.
