you know i'm a fan of your series and despite your hair in this video I will have to call you out on your calling out of MSG taste. I'd wager there is no way you can taste the ingredient MSG as it really is just a flavour enhancer with some saltiness. two dishes side by side one made with glutamate ingredients being boiled for a long time or stewed to extract the natural MSG within the ingredients vs sprinkling some MSG, there's no way you can tell a difference just based on the 'taste of MSG'. do a blind taste test and see for yourself, of course I think a video on this would be great as well! as always, enjoyed the video.
true. there was one incident where I mistook a pork broth for being 'too tasty' to the point where I thought they added more MSG-related products. I learnt then that it is possible to have an overly enhanced flavour even without the use of other ingredients. But, I think it still remains that the resulting flavour is ultimately unbalanced. In this instance, it might be miso or shoyu providing that hit of tastiness but I would have liked more peanuts to balance that out.
Ok… I mean mapo tofu is kinda mala even though it’s JP. But we stick to more Chinese mala? Like 麻辣香锅? 酸辣鱼? Or more mala dish? Desperately need a good mala guide for SG .. tyty
wah i gotta say this series abit disappointing leh. Like after all that mala, and i still have not been interested in any of the locations recommended. If i donate / subscribe can you actually pronounce suppose instead of sho-possed? =\

The OG Iron Chef is such a campy show. The US version just doesn't feel the same.
