    This is my go-to holiday dessert as it taste absolutely incredible, easy and a crowd pleaser. Expresso flavor, smooth creamy texture, cocoa powder and some cute garnish. What else more can you ask for? How to make Mini Tiramisu by Bao Bei, enjoy ~

    Recipe (16 servings)
    - Eggs (3 yolks)
    - Lady Fingers (as needed)
    - Sugar (50 grams 2x)
    - Heavy Cream (250 grams)
    - Mascarpone (180 grams)
    - Cream Cheese (180 grams)
    - Cocoa Powder (as needed)
    - Expresso (2 cups)
    - Gelatin (4 grams)
    - Vanilla extract (a splash)
    - Cognac or Brandy (a splash)
    - Chocolate (as Needed)
    - Cookies of choice + butter
    1. Crush your cookies and mix with butter, add a small layer on the bottom of each mold and then leave in fridge. Create expresso mixture with expresso, liquor and 50 grams of sugar
    2. Pour some Gelatin with a bit of water and let bloom for a few minutes. Mix Egg yolks and sugar in a bowl, then put on a double boiler. Cook until creamy, around 3-5 minutes and will change into a lighter color. Take off the heat and stir a little bit more.
    3. Take off the boiler and add in vanilla extract and a splash of liquor. Dissolve gelatin, add and mix everything together. Mix Mascarpone and Cream cheese (room temp) softly with the with egg mixture, pushing down any clumps, whip shortly if necessary.
    4. Whip some heavy cream into soft peaks and then mix with the cheese as well. At this point just use a spatula and fold together, be gentle to ensure ingredients don't separate. Use this cream and start filling the molds halfway.
    5. Prepare a coffee mixture with coffee, sugar and cognac. Soak pieces of lady fingers inside the coffee and the place inside the mold. Cover up the rest of it with the cream, smooth it all out and leave in the fridge for 6 hours to overnight.
    Decor- Dust the top with some cocoa powder and add any garnishes as needed!
