The moisture in the dessert does its work overnight, the time it is supposed to sit in the refrigerator. I also use specialty espresso coffee. made on an espresso machine... and to finish I use little sugar, it makes it less cloying.
That is a gorgeous tiramisu !! I adore tiramisu but some people take “liberties” with the recipe that make me not like all tiramisu. Yours came out beautiful and you made it traditionally with the right ingredients ❤

They probably are not pasteurised. This is an Italian recipe (obviously) and they don't used pasteurised. I come from a country that always told you to never eat unpasteurised eggs hence why i have never made this😢

you can cook the egg and sugar in bain-maire. put the bowl over the steam of boiling water and stir there like 4-5 mins. this way egg is no longer raw and it doesnt lost any taste
The only part of the egg that has salmonella is the shell. What I do when making Egg Nog is wash the shell so there's no chance of salmonella going into the raw egg when I crack the shell.

It damages the outer coating and makes them more vulnerable, which is why they need to stay refrigerated until use unlike in the UK. However, the fresher the egg the lower the risk, so if you wash eggs fresh from your own chickens you should be fine. I'd personally whip the eggs off of a double-boiler to be safe.
