omg I just made mini pumpkin pies but I used my mini quiche tins with the pop out bottoms they are amazing to use and made it so easy to get out of the pans thank you for the great idea this thanksgiving is guna be a blast.

Hey Laura :) those look so cute!! When I make my pumpkin pie filling I press a thin layer of very finely gingersnap cookies and very finely chopped pecans its to die for! I also use a half a cup of heavy cream. I recommend you give it a try next time you make pumpkin pie. I promise you wont be disappointed !!☺
I love how you explain things in your videos. I made a pumpkin pie last night using the recipe on the can of pumpkin and it didn't turn out (how could it not turn out, right?). My oven isn't calibrated properly. It's always 25 degrees cooler so when I bake something, I have to heat it 25 warmer than I need it to. Hope that makes sense! Even though it says 450, it's actuallt 425 degrees :)
Laura in the Kitchen Hi Laura. I love your recipes and recreated quite a few of them myself. However, I have one big doubt when using the oven. When you say the temperatures do you use the oven in top and bottom mode or in Fan-assisted mode? Keep the good recipes coming in.
Laura, maybe you can show some hand held gadgets to use to to blend pastry. That way you can familiarize those who dont know what to use if they don't have the big appliances. Thanks sweetheart. I remember when I was learning to cook, I didnt have much and it was nice to know what you can use to get the same results without using big appiances.
Laura i would like to see your take on an extravagant creamy coconut cake. I prefer to use coconut at every turn like whipped cream of coconut frosting and substituting milk for cocnut milk but i haven't found the right balance of ingredients. Laura can you please help me!

I have to admit that I was kind of worried when I saw the color of the batter! I was like "OMG is there too much cream!!!" But after it baked, it came back to the bright orange pumpkin color! LOL great recipe!

I made some of these today.... 1st time I made them with Cranberry filling which was yummy, but the filling really leaked out a lot. The one's I made today I use a no sugar apricot preserves filling. WOW tasty and the filling didn't leak out at all.
I'm doing these for my potluck thanksgiving! Lol I'm sort of nervous because my first time doing them nd also, I don't know if I should do your version of the filling because what if I don't like it? Lol x
