The history of the restaurant just blows my mind❗️ All those generations perfecting the process of the aging of the meats. These meats are like aged cheese. Something I've never heard of before. I love the ancient wine caves that they converted to meat caves. Did they say when these caves were made❓️

Spain is by far the best country to enjoy food and wine. Best seafood, meat, vegetables, fish, modern and classics techniques, etc. Incredible meal guys.
And unfortunately been underrated and looked down for centuries (especially by northern fellow Europeans). But time and social media has proven them wrong
Yes agreed Alex that exactly why I love eating in Spain😋😂 you can go too the coastal regions and have the best seafood in the world, or go inland where most of the Spanish live in red meat and quite simply eat some of the best red meats in the world. I am Portuguese and I love Spain however their gastronomy in most places is really bad. If you looking for a food tour go to Portugal instead. Spain is amazing though lived in Alicante for a year and I can't wait to go back. South of Spain will always be my paradise on earth.
@@andrecardoso6941 Ok tell me, which places are those you say? Hahahaha why do you have to lie about our gastronomy? If you don´t know enough it´s just your problem. You can find great food in EVERY province.
@@Raessok lie? As I said I lived in Alicante and I know Spain from top bottom. But if you doubt me ask any Spanish people who live close to the Portuguese border then come back to me. The only region in Spain I’m not familiar about is Asturias and País Vasco which I plan to visit soon. I even remember in Alicante there was barely any Spanish restaurant. Most were fast food or Italian which is not a good sign of good gastronomy. In Portugal most restaurants are Portuguese.
@@Raessok and I don’t even get why do you think “I’ve to lie” lol I don’t even like my own country and my best friends from Portugal have called me Spanish since I can remember. One good thing Portugal has is their gastronomy too bad all the rest is getting destroyed by our corrupt politicians.
I love food videos where you can clearly see and feel the passion of the owners. I felt that watching Jose from beginning to end. Such a beautiful restaurant! I would love to visit someday. Thank you Mark for sharing this treasure with us!

I am in LOVE! WOW WHEE! Thank you Jose Gordon for being you! ever so humble, happy, polite and a master at your craft. well... maybe 100 million could buy it, but its probably not going up for sale anytime soon lol :)
Do you know that this guy create this restaurant, and ir only took some years to buil and o cold say that IS true because my family IS from the zone basically from the same place there are three villages, jimenez the jamuz (were capricho IS), Santa Elena de jamuz, and Villanueva de jamuz (were my family IS)and they are so litle towns that everybody know Who IS who.And the caves "bodegas"were built after, like much other in that zone, like literally there are docens and docens, but this isent a wine land.In certain way this restaurant provide a lot of minimun tourisim to this forgoten villages so ita something Lore than a restaurant. And finaly, cecina y can agre its delicious and i think that a restaurant in León that dosent have cecina of León isent a restaurant in León, like cecina IS super tupical from this province, so restaurants like this need to have super good cecina. bee
OMG! WE WILL GO THERE!!! Love you man! I love how this man respects his animals! I worked on a ranch in Wyoming when I was younger and not all owners are as kind to their animals as this Great Gentleman is! God bless!!!
@Nabor Simbor Yes, a good life, veterinary care, good food, respect and a sweet death. Do you think that these animals would live (or exist) without the help of man? How?
Surely you prefer to see them in freedom full of diseases, or eaten by wolves, or with permanent hunger and thirst, right? Because that is what would happen.
