  • Magnus Nilsson stops by the Googleplex for a discussion about his new book, "The Nordic Cookbook."
    Magnus Nilsson (b. 1984) is the head chef of Fäviken Magasinet restaurant in Sweden. After training as a chef and sommelier in Sweden he worked with Pascal Barbot of L'Astrance in Paris before joining Fäviken as a sommelier. Within a year he had taken over the running of the restaurant, which is currently ranked #19 in the San Pellegrino World's 50 Best Restaurants list, produced by Restaurant magazine. Nilsson is the author of Fäviken, also published by Phaidon, and he appeared in the US TV show, Mind of a Chef, which aired nationally across the USA on PBS-TV in Fall 2014. He is set to appear in the Netfix docu-series, Chef's Table, in 2015.

      Chef's Table S1E6, Mind of a Chef S3E9-16, plus many bonus features for Mind of a Chef which are on Netflix as well. I greatly prefer Mind of a Chef. It's less pretentious which is so much more appropriate and it goes a lot deeper

      I don't know if you understand the book idea actually. It's not about making Nordic food "work" in other cultures but showing a relation between the food and the region. Would you expect a map of England to "work" for someone in China? If the person in China is curious about the geography of England it will work fairly well but if they're trying to use it to travel it's not going to help them out much.

      GhOsT ID the second part of your comment is quite confusing. The persons question really is whether they are firstly going to like the cuisine (work to their taste) which basically is irrelevant when the concept of the book is to highlight the cuisine of the particular region and is never meant to take into consideration likes or dislikes of anyone outside this particular region and whether they will be able to access the ingredients in which to make the recipes in the first place and that’s really going to wholly depend where they live, in Australia where I am, because of our awesome, incredibly multicultural society, we can generally source ingredients from all over the world in our general shopping centres or otherwise in the many speciality grocers we have but other parts of the world have very limited access to ingredients outside their local cuisine.

    I have watch Chef's Table and love all that Mr Nilsson brought to the table. But, I couldn't watch half of it because all I kept saying is "please pull your hair back"

    The book sounds interesting perhaps I'll have to pick a copy up. I'm surprised Magnus didn't use potatoes as a culturally unifying Nordic food.

      Potatoes are a big deal in the book, I use it a lot so I know Boiled Potatoes is on Pg. 117... because everything is "served with Boiled Potatoes (Pg. 117) or why not a Kale Salad (Pg. 90)" I swear to God lol

      Andrew Ross Maxwell before watching this video I was very interested in buying this book as I very much want to learn traditional Scandinavian and other traditional European cuisine and want to purchase comprehensive cookbooks that are seen as the leading authorities on the particular cuisine, in this case I thought Magnus such an Author. Now hearing this talk which is very interesting regarding how he defined traditional cuisine but now I am unsure what to expect from the book other than open sandwiches skolbrod or similar which is good if it has recipes for the different items on the sandwich for example gravlax but I don’t want recipes such as the taco quiche. So what can I expect from this book? And can you suggest other leading authorities and cookbook writers on other traditional European cuisine, German as an example?

    This is a great talk but a very bad video, I think. You continually miss out showing the (few) picture slides which makes it harder to follow his reasoning. The worst part though are the missing questions at the end - we get Magnus' answers but miss out on the questions. I excpect more!

    plating could be more NORSE. Menu could need vamping. Lots of creative ideas BUT keep it NORSE.
