We ate in an Italian restaurant in Hendersonville, NC, and the spread for the bread was amazing. It was green. We asked about it because it was so good and were told it was butter with pesto mixed in. Delicious!

Paula I have a wonderful Maple Butter that we make when syrup is flowing from the trees. It's out of this world. If you have some bottled syrup you can make it. 4 sticks of soft butter, I cup maple syrup, and confectioners sugar to just to thicken it up a little. Don't refrigerate or it will be to stiff to spread, best on toast or French toast or muffins, pretty much anything you would want the taste of maple. MMMmmm. Eddy might know about Maple Butter coming from NH like I am here. You missed a great snowstorm Eddy.

Always buy locally-sourced honey if you find it. Approximately 75% of the "honey" in grocery stores is manufactured in China and is more corn syrup and other questionable artificial fillers with little to no actual honey. Definitely never but the stuff that comes in the cute little honey bear. Always read the label. The only ingredient should be 100% honey.🍯
If China was putting corn syrup in the honey jars do you think the labels would be accurate?

Absolutely! We haven't bought store honey in years. I try to buy more than one quart jar when we ride up to Hendersonville, NC and Chimney Rock.

Compound butters have been around a very long time, having worked in the industry, we used to make many different "flavors" at once and then freeze. This was mostly done by the new interns in the kitchen. Brings back memories of 25+ years ago! 👩🍳

Hello Paula, this is way off the subject of cooking, but I have been noticing your beautiful hair and today loving how it is pulled up. Would you after the holidays consider doing a video on how you did your hair or your hairdresser did it? It's called Jade Ware. I am sure you can buy them online. Jade Ware was popular in the 50's and 60's. My Mom had a few bowls like Paula's.

I hope your thumb nail doesn't turn black...I bet that did hurt. Buddy Valastro just had his entire hand mangled by a 10 pin treturn bar...just be glad Eddie didn't have to cut you free 😳. Anyway, I think I would have rolled it in a log and put ribbons on the ends. That way you could cut a pat.

Getting started on baking!
I've made a savory compound butter before, for spicing up corn on the cob. It had cayenne, or paprika I think, lime juice and cilantro. When I worked at Jack in the Box, they had (and still do) two "buttery jack" (classic and bacon swiss) burgers that has a "dollop" of herbed garlic butter on the top of a premium square-shaped beef patty. Let me tell you, those burgers were good, but that #herbedbutter #garlicbutter made them great! The quality of those #burgers were surprising for fast food imo. They even started selling "garlic fries" with this same warmed butter over the top lol. I've yet to try this special butter over steak, but now that's on my to-do list.👍 Edit: Paula, I #love this gift idea and have wanted to make a nice semi-homemade gift basket for my family/friends.

Speaking of Uncle Bubba’s......my girlfriends and I went to Tybee Island a few years ago on one of our girl trips, Loved it! We went to Uncle Bubba’s 3 of the 4 nights we were there. I think I had the same fish dish each night!! I don’t like strong tasting fish but this was the best mild fish I’ve ever had! It was a blackened fish, I think and it was wonderful! Please make and give that recipe. Thank you so much for your videos and for Uncle Bubba! I met him there and was star stuck! 🥰

I have a quick question- DO YOU USE CLARIFIED BUTTER, and if so, what would you suggest using it on? This episode made me think of this question. Love 💜 you!
Is there anything that u SHOULD NOT put into a compound butter? Like vinegar or fish sauce? Did u put raw garlic in or did u use roasted garlic? I made some the other day with a mixture of things I put into almost everything I cook. Butter roasted garlic green onion a small splash of hot oil and a splash of lemon juice. Yumo o. Oh and salt
