  • CREAM PUFFS
    1 ½ cups non-fat milk
    ¾ cup unsalted butter
    1 ½ cups all-purpose flour
    6 whole eggs
    ¼ teaspoon salt
    Pastry cream:
    ¾ cup white sugar
    ½ cup cornstarch
    3 cups fresh milk
    4 egg yolks
    ½ cup salted butter
    Ganache:
    2 cups cream
    2-3 cups dark chocolate (depends on how thick you want the ganache)
    BAKING:
    • Bake at a preheated 450F (220C) oven for 15 minutes. The hot oven will make the cream puff, PUFF!
    • Decrease the heat to 350F (170C), and continue baking for another 20-30 minutes, or until the cream puffs are evenly golden brown in color.

    Chef RV, maliit po ang oven ko. di ko kayang ibake sabay sabay lahat ng dough. pwede po bang nasa kusina ko lang yung dough while waiting for the first batch to bake or dapat ilagay ko muna sa ref?

      @@ehloysoriano865 Nagtutunaw po ako ng sugar sa skillet/frying pan at dun ko po sinasawsaw ung ibabaw ng Cream puff. Parang kapag nag-caramelise ng sugar for leche flan. Ingat lang po na wag mapaso ng tunaw na asukal!

      @@anniemariebautista6682I watched other cream puff recipes, ang sabi po kailangan butasan yung choux pastry after baking para mawala yung steam sa loob. Then once off na yung oven, ibalik mo ulit yung mga nabutasan na choux pastry pero slightly bukas yung oven until medyo lumamig na. I hope I made sense.

    Chef Rv, I hope na maanswer tong question ko 🥰 what should be the function of the oven po ba when baking cream puffs or ng kung ano po? Should it be top and bottom heat? Bottom heat only?     Bakit po kya yung cream puff ko kumupos sxa after ko ilabas sa oven ? Prng hndi po sxa kcng crispy kgya ng inyo. Anu po kyang problema duon ? I follow nman po yung temp and no.of mins.pra ma bake.

    I wrote you before about coaching me, about the little gifts-that I included my niece boxes was sent last May. They may get it July or August, inside of little box I have a little note with my email address. So from M, then my niece live in Naga City, She mail it to you. Neither way is both okay or not, for you this side gig coaching. Summer months here is busy, after Summer is good for learning lessons.
    We’ll talk how time will adjust .
    I made those cream puff even I had a little time at night in my little Dutch oven. I think I burned it a little bit, because I did 2 layers same time. It’s my first time my whole life to make a cream puff, millions thank you for sharing your knowledge to us. Please see attachment 😁, anyway I will hire a baker for my coffee shop, however, I need knowledge from someone have experience + expertise this kind of business. Thank You .

    - Wala po akong silicon mat.
    - pwede kang gumamit ng parchment paper.
    - wala rin po akong parchment paper.
    - pwede mo rin pahiran ng margarine o shortening
    - wala rin po akong margarine o shortening.
    - labas ka, bumili ka muna. 😁😁😁

    Sarap for sure chef... Na try ko pa lang yung chocomoist cake nyo with egg sya ang sarap po, my kids love it❤️... Fulltime mommy home baking pero pang miryenda lang namin 😁

    Hindi ba eclair ang ginawa nyo hindi cream puff? I graduated HRM and regardless if normal round puff pastry or the elongated one ang ginawa, if chocolate ang nilagay na topping, eclair yan. Cream puff is either caramel or ung caramelized sugar ang topping.

    Hello po, yung recipe po na sinusunod ko 4 eggs kaso masyado na pong runny yung mixture kaya ginagawa ko lang pong 3 eggs. Tama po ba yun? Kaso after po maluto ng pastry butas po siya sa ilalim is it because of the egg? Thank you po😊💕
