  • lentils and vegetable stew in in famous south Indian style
    Lentil based south Indian dish, slightly tangy to taste combined with a mix of vegetables, spices, and freshly ground sambar powder that gives a thumping aroma all over the house.

    Ingredients
    2 tbsp channa dal
    1 bunch coriander leaves
    2 tbsp coriander seeds
    2 tbsp cumin
    1 bunch curry leaves
    2 piece garam masala
    30 grams ginger-garlic
    1 number grated coconut
    1 tsp hing-asafoetida
    1 tbsp jaggery or sugar
    1 tsp methi seeds-fenugreek
    300 grams mix sambhar vegetables
    1 tbsp mustard
    4 tbsp oil
    1 large onions
    2 tbsp peppercorns
    6 piece red chilli
    1 tbsp rice
    1 to taste salt
    40 grams tamarind
    200 grams tomatoes
    1 tsp turmeric
    1 cup yellow dal -toroidal
    Directions
    • sambhar masala Heat heavy pan, over medium heat, and add the mustard seeds, fenugreek seeds, cumin seeds, black peppercorns and coriander seeds,red chillies ,rice chana dal can also add little urad dal,. Stir and roast for 3-4 minutes, reducing the heat if necessary to take care that the spices don't burn. . In the same pan, heat 2 teaspoons oil and roast garlic ginger ,hing ,turmeric When they start to colour continue roasting Add the pan contents to the bowl and cool along with the spices. add all to a grinder and make it into a fine paste. sambhar making Heat one teaspoon of the oil in a heavy pan, over medium heat, and add the mustard seeds, fenugreek seeds,hing ,red chillies (chef did not add but please do) cumin seeds, . . Add the shallots or big cut onions ,turmeric powders, stir add curry leaves ,chopped gr chillies and mix vegetables add tomatoes tamarind juice and add water and cook till the vegetables are half done add sambhar masala -add half the qty and save the rest to use next time in fridge when the vegetables are 3/4 cooked add mashed dal and cook for 30 min in slow flame nice fragrance of sambhar will spread all of your house add seasonings ,sugar and finish of with coriander leaves eanjoy with rice idli ,dosa

    I got introduced to Sambar while I was in Dubai and I love it especially with Idli. South Indian cuisine is wonderful, they really know how to use spices. Thumbs up!!

    Chef, I am a Bengali but absolutely love Sambar and hold my greed for my South Indian friends to invite me. I happened to see your recipe and exactly followed your ingredients (minus coconut and imlee due to health reasons). Frankly, it's one of the best. After this I will include this in my menu when I invite my South Indian friends and just watch their reaction. Thank you, you are absolutely fantastic!!!

    Now you have basic recipe ,make changes to suit to your taste buds, for idli and dosa they add jaggery, for rice skip jaggery, and the quantities of masala you add and the thickness you make ,will determine with what it goes best , sambhar is one of the toughest dishes and very personal -all the best

    Sanjay is the greatest. You really have to appreciate how he brings the nuances of Indian cuisine to the forefront...he is absolutely right - you cannot eat rice and sambhar with a spoon...it's sacrilege!

    I was searching high and low for a sambar recipe, thank you I found your video.. your are right.. no cutleries will do any justice to sambar and rice together, and with pappadams.

    this sambhar preparation ,i learned from the kitchens of parksheraton , in Andhra we make it less milder version call pappu charu ,
    ginger and garam masala is added in preparation of sambhar masala (wet)version and there are many sambhars -iyers,iyangar,and every house hold sambae is unique so find what suits to your tastse and that is the best sambhar in the world for you have fun cokking with vahrehvah

    This is a very good recipe and is a hit among even our South Indian friends. We are from UP and did not know how to make sambar and learned from this recipe.
    There may be other recipes and we all know that the recipe differs at each household. I personally do not think any recipe is carved on stone. I think any recipe is just a guideline. Each person can impart their ideas to it and make it to their liking. Kudos to you chef for this recipe and keep them coming.

    Amazing recipe, tastes like heaven. Quick question: did you use all the masala you made in the blender? I used only like 2 tablespoons, and stored the rest in the freezer. Also, how long do you think the masala would last frozen? Thank you!!

    Chef, can you please advise on how much of the masala to use for say one cup of uncooked toor dal? Also how long can the masala be stored in the fridge?
