This sauce is like liquid GOLD! I found my husband eating by the spoon before bed. Lol. I’ve made this recipe twice now and def a hit. The second time I skipped the tortillas and just made rice bowls. I made reg rice in rice cooker, sautéed extra green veggies, and added the beef and sauce on top. Totally non traditional but healthier and damn delicious. I also cooked it in the crock pot, did everything in the video except I mostly did everything in cast iron skillet. Used it to toast chiles, sear meat, and sauté veggies. Mixed all in there and then added to crock pot for 3 hrs in high and done! I saved a little bit of the red chili sauce and added it to scrambled eggs and made breakfast burritos out of those.
I agree if i had to choose two cuisines from around the world it would be italian and mexican. They have pretty much everything you would need and want.
The Italian cuisine all tastes the same. Take away pasta and gravy and it falls off a cliff. I lived in both Napoli and Vizenza while in the Army. Horrible.

I made this recipe and OMG the flavor was amazing. I did not use the quantity of chili’s the recipe called for or the chili’s that have a lot of heat. I used the California chili, Quajillo chili and the Pasilla chili. I took all the sauce ingredients and puréed them, my daughter-in-law will not eat veggies, added the blended chili’s and veggies to the meat, simmered on the stove top for 2 1/2 hours and out came meat and sauce made for the gods. Used the chili Colorado in burritos and tacos, sooooooooo yummy. Will keep the recipe in my “go to” recipe box. Thanks for sharing❣️❣️❣️
I just cooked this dish for the first time. I did it with some County style pork ribs. Absolutely loved this recipe with the pork. It was very easy to follow. I forgot the cinnamon but the flavor profile was perfect without it. I loved the authenticity of the recipe however I did go with the queso blanco. I didn't use the oven but opted to use my pressure cooker to simmer the meat. I will definitely cook this again.

I followed Aaron's instructions faithfully (except adding a few dashes of fish sauce and a couple tablespoons of maple syrup), and --- thanks to the COVID 19 stay-at-home order --- I made the tortillas from scratch. Anyway, thanks so very much, Aaron, for a fantastic meal. BTW, just bought Aaron's book (Where I Come From). Great read; great recipes.

Like someone already said burritos are made with flour tortillas and enchiladas are made with corn tortillas, the fillings are often different as enchiladas are typically made with chicken and cheese and then topped with sour cream lettuce and Mexican cheese. Typically anything stuffed into a flour tortilla can be called a burrito, and no matter how much sauce you put on it it won’t be an enchilada.
Aaron, I’m an old Blanco man now, but I grew up in the Imperial Valley, Ca. My dad died at 39 yrs old, I went to work at 14 yrs. old. I worked in the lettuce fields, with the Asians, I worked in the onion fields, the carrots and broccoli with my Mexican brothers (all though my friends are dwindling). My best friend (Raul Urquidez Laguna), is deceased, his mamma and his “pops” are long gone. I remember his mamma cooking Chile Colorado (the best). I told Mamma I wanted to learn how to make “chili Colorado”. She told me to put her apron on and she would teach me. (I had to wear the apron). Her recipe that She made me learn is almost identical to hers. I used a different chile and she new it. I had to remake it and used “her” recipe. That women new how to make her “chili Colorado “. Rita, her oldest tried to sneak past a different and got caught..(hell to pay).. Thank you for bringing this to my memory. This white boy makes my “mammas” Chile Colorado in her honor and it’s the best. My grandkids love it as well. Again, Aaron, thank you. Pajarito Blanco!

I believe the tortilla is pan fried with the chili sauce to get enchiladas. The sauce is inbeded within the corn tortilla.

Ya he has been on the food network on pretty much every show possible for years and years. Iron chef, master chef pretty much everything note worthy. He is a very well known chef. He tied Morimoto when he faced him on Iron Chef which should say a lot
