I went and did Japanese Chicken Katsu Curry and completely messed it up. Went and put the full chicken in and it wasnt fully cooked as it was still raw when I cut it up. My mom told me about the butterfly 🦋 technique so I did that and coated the other side. The result and presentation was average but next time I will keep this in mind!
Very nice .. but what I notice often is the breast underneath is usually messy and when I pound the bottom side looks odd or scraggly so I have to cut off lots to get a nice uniform piece .. any thoughts ?
@@bluecadillac Well thats what the parchment paper is for. You're not supposed to smush it into a paste with all your strength, just tap gently to even it out

How do you pound it so quietly? Is it the technique, practice, a special type of rolling pin or the parchment paper?
Thanks for noticing Scott. I'm pretty sure the pounding is edited (cut short & without sound). I timed it. Under 4 seconds to pound a fresh chicken?

Roll it, rotate it. Maybe, you need to remove the tenderloin (he doesn't show that part).

My chicken breast is WAY more deformed and weirdly shaped than this haha, so I had to make far more cuts, concept remains the same tho.

I don't get the need for parchment paper. Why not just roll over with a rolling pin, Gordan Ramsey style?
