I needed a sheath for a quality Cutco knife, and made one probably a little better: use a soft plastic that you might find potato salad in, the kind that is used to create snap-on lids for containers like Tang or Pringles, not a thin crinkle plastic. Cut out the right size, fold, and flatten the crease with pliers. Insert the knife, and staple around the blade with a paper stapler. Flatten the staples with pliers so that the staples are flat and don't snag. Trim with scissors. Works great! It really does. I have made 2 now 😎👍
I've made a few cheapo sheaths using boxboard from old frozen food boxes. It's thinner than corrugated cardboard, and if need be, you can glue two or more layers together. I usually would fold the board over at the spine of the knife, then staple the area along the edge closed. The outside would get wrapped either in duct tape or with scrap denim glued to it. I haven't had issues with rusting inside such sheaths with the carbon & tool steel knives I have, but my part of the world isn't super humid.
