    Hi, I'm a chef from Sweden and I've worked in no less than four restaurants that served meatballs, including the one I currently work at. I thought I'd just straighten some things out just in case you're interested in learning about scandinavian (swedish) cuisine. A common misconception of Swedish cuisine is that we use dill in everything. We do not. It's typically used with fish, see "Salmon gravadlax" or "Skagenröra" that are two great examples of traditional scandinavian dishes with dill to get an idea of how we use dill in them. I've seen some chefs use dill with braised meats but its not very common. However it's fucking lovely with slowcooked lambshank or brisket for instance. I've never ever seen anyone put dill in meatballs, though.. You should also try to serve your meatballs with some pickled cucumber, as it's traditionally done in Sweden. The sharp tangy flavor really cuts nicely through the rich sauce, potatoes and meat and goes brilliantly with the sweetness of the lingonberry. :)
    Oh, and the rasberries made me cringe. Why did you do that?

      Swedes do put dill in other meat dishes, such as "Dillkött" which is an old Swedish traditional dish

      Jag har då flera gånger fått Köttbullar serverade med dill så tror det kan variera från region till region. Har även fått pannbiff med dill. 🙂

      When I first visited Sweden 23 years ago, I was served french fries with dill at a cafe in Ängelholm. That cemented the idea of Sweden=Dill for me...

    Coming from a Swedish person: what is wrong with the recipe? Not much, given that there are variations of the traditional Swedish meatballs, it comes rather close to accuracy.
    Normally we'd use milk and not cream for soaking the breadcrumbs, in some variations you'd use cold boiled potatoes instead of breadcrumbs (good for those with gluten intolerance).
    An egg (or just egg yolk) usually put in too.
    Dill in the sauce isn't common but it's acceptable.
    RASPBERRIES DO NOT GO ON THE PLATE!!
    Sometimes you'd have pickled cucumber on the side, quite common. Especially a quick pickled cucumber (using pressure) with parsley, which is where the herbs normally would come in.

      Your comment should be top on the list, cause this is a correct assessment of what went wrong and how to fix it! Also not too uncommon to have fine grated carrot in the meatballs, nor is it too uncommon with more milk/cream and a bit of soy sauce in the sauce :)

    As a swede, I gotta say this looked pretty good! Not sure what you were doing with the raspberries at the end though, those shouldn't have been there, not if you wanted to do it properly swedish, that is. Also Mike, Lappland is Sweden, it's a province ;)

    Difference between ground pork and ground beef: you can mix pork as much as you want as it actually gets better. Beef will get tough if you overmix and using fingertips is good. Therefore, you mix the pork with everything first, then gently add the ground beef so it stays tender.

    Soooo... a lot of Swede's will have opinions on this. 😂 But personally, no dill in the sauce. Lingonberries in the sauce is ok, not dill. Never had dill in the sauce wherever I've eaten meatballs. And raspberries? What?! No no no. 😂
    Other than that I think you did a great job with a Swedish classic. 😄

    As a swede I approve of those meatballs, but I'm not sure about the process... plus, we dont put the lingon berrys in the brown sauce and we dont have rasperrys in the dish

      Lingonberry in the brown sauce is pretty common, but technically its called "lingonsås" if you add lingoberry to brown sauce. The recipe is pretty much spot on except for the raspberries.

    As a swede, I have to say that´s the most authentic swedish meatballs i have seen on youtube. Not 100% like I would do it, but close enough.
    The sauce was extra authentic. That´s what most people seem to get wrong.
    The only things I would do differently is:
    1. Less allspice. That seemed like WAY too much. It can easily overpower everything else, but extra points that you actually used allspice. It is indeed important for the authentic meatball flavour.
    2. I would not put dill in the sauce. Maybe in the mash, but not in the sauce. It is a very swedish herb though, so I can´t really complain.
    3. I would add a little cognac (just a few splashes) to the meat mixture before rolling the meatballs. It enhances the flavour tenfold. Trust me, it´s amazing. This is not typical though, just the way I do it.
    Overall, amazing meatballs! Many points to you.
    Oh, yeah, one more thing. NO RASPBERRIES PLEASE! Lingon all the way, and nothing else!

      Yeah. Dill and potatoes are really good friends. My mother would always put the thick woody stalks from her dill in the pot when boiling potatoes (preferably new potatoes, or at least a waxy potato), with plenty of salt. Mouth watering memory there.

    Lappland is in Sweden, and yes, meatballs with lingonberrys are "just from Sweden". Even though my grandmother in Finland also eats her meatballs with lingonberrys. She lived half her life in Sweden, thats why. ;)

    I make a turkey meatball/meatloaf that tastes like Thanksgiving. I finely chop mushrooms and sauté them, use ground turkey, cheap Parmesan cheese( handful)
    Grated onion, some breadcrumbs to firm up the turkey and lots of sage and poultry seasoning. Instead of red sauce I make a stroganoff style gravy and serve over noodles.

    Just wanted to add in that in Sweden we don't cook the meatballs in the sauce, we pour it over the meatballs when they're on the plate with the potatoes and the jam so everything get sauce:))

    I absolutely LOVE lingonberry jam. I eat it with absolutely EVERYTHING. Got some cheese sauce? Lingonberry jam. Some beefroulads? Lingonberry jam. Some baked Salmon? Lingonberry jam.
    Lingonberry jam is the best.

    Guys! First of all, dill and raspberries does not go with meatballs. Dill is most often used with summer potatoes or fish (herring/sill and salmon) and the raspberries are for dessert, preferably with cream and milk if you have enough for a bowl each.
    Now, back to the meatballs. No other spices apart from salt and pepper should go into the meatballs (local and family recipes might say otherwise, but the old Swedish cookbooks are quite basic. Moreover the mashed potatoes should be made with butter and whole milk after being mashed, then seasoned with salt, pepper and nutmeg to taste. Remember! This is an everyday dish here in Sweden and is therefore very simple with basic flavours.
    By the way, It's a VERY Swedish dish. In Denmark the meatballs are generally made with raw onions and are about 3 times the size of the Swedish ones... and we eat them with pickled beets or ketchup in Denmark.

    Wait a minute Partridgeberry Jam in Gravy? Not sure exactly how i feel about that one, but it might be worth a try. (Partridgeberry is what we call lingonberry in Newfoundland)

    I think the meatballs and mashed potatoes are in the ballpark, looks very yummy, and there is one recipe per chef here in Sweden, meaning everybody is sort of in the ballpark. Fry in butter and only cream in the sauce. Simple and round. Dill, don't know about that one ...
    Tip from the coach: the lingonberries are much better if they're directly translated "raw stirred" or "råröda" meaning the lingonberries are mixed with just white caster sugar and cooked into a jam consistency. It's a preservation method but lingonberries themselves are kind of indestructible in that regard and a natural source of preservatives. Just asking for lingonberry jam will get you "lingonsylt" which is cheaper and diluted with applesauce. It's nice too, more of a generic sweet berry sauce, but not the real deal! Raw stirred lingonberries hit you in the face like an elk kick in a fabulous raw way! :D
    And man drop the raspberries, if you want it to look like Swedish meat balls hahaha. Never heard of that combination. ;D

    The literal translation of the swedish word for allspice is "spice pepper" (kryddpeppar)...however, you can't say "it's not a spice, it's a berry", because there's no such thing as a "spice"... spice is not a type of plant, or a specific type of anything. It's just a word we use for ingredients that are added in (relatively) small quatities to add flavor to stuff.

      Also, never had lingum berries before? How's it taste and what can I use as substitute (no such berries here)?

      Usually when I make meatballs, even like these ones, I steam them in the stock that is going to be used for the sauce. So I just add the stock after they've been in the pan for a bit. That way they can't really get dry even if they're lean. Lingon berries are kinda tart, I would say cranberries might be similar? They might have lingon berry jam at an ikea if there's any near you.

      Swede here. Lingon berries are quite unique, id say cranberry is the closest you'll get. You want thar acidity mixed with sweetness.

    First of this is a great swedish meatballs recepie for anyone who want to try making swedish meatballs at home and never done so before. Nonetheless, I got to ask is there a reason why you use dill over parsley as I believe dill rarely are used with swedish meatballs if at all. Also, I would like to say that the raspberry was very interesting add on might even try it myself next time.

    I understand that this is a take on a traditional dish but raspberries with this seems odd and also I don't know if people have dill with their meatballs, as far as I know, we usually add dill to fish dishes here in Sweden.

    If you want to maximize the flavor of the meat balls make sure to brown them on ALL sides not just 2. I see you went for the poaching approach, heh, but it's much better that way because it creates a crispy crust all over. When we make meat balls aka. "frikadeller" in Denmark our family likes adding dry white wine to the mixture "fars" in danish. Danish meatballs are generally a bit bigger though.

    I love lingonberry jam and the Ikea meatballs. This was an interesting mix but I think I'd leave out the raspberries. I'd also leave out the onions, but that's just me. :)

    Those look delicious! My mom's family is Swedish, and my great grandfather apparently made the best meatballs, but he took his secret ingredient to his grave, much to my mom's chagrin because she remembers them being so good! My grandfather said the best meatballs he had in Sweden had part reindeer sausage, which I can imagine just added another incredible dimension to this wonderful dish! And finally, just a fun note, my mom would use sage in her gravy, which is another herb option, perhaps if you're not a huge dill fan.

    You should have Swedish week, I think. One thing that's really good about Swedish food is that you'll get a good, satisfying meal for a very low price. Try making kroppkakor! (translation: bodycookies (it's not really body-cookies (more like swedish dumplings)))

      We literally call it "Brown meat sauce" in Norway and Sweden.

    I would've skipped the rue and gone straight in with just double cream in the sauce, with the balls still in the pan. Then added a meat stock cube and reduced the sauce to thick and creamy. No dill in the sauce, and no lingon berry jam, but rather a drizzle of honey would be awesome. Then I would've boiled some new potatoes in water with salt and dill, and then served it all up with some lingon berry jam and garden parsley on top.
    But nice take on the recipe! Would love to try it, just to compare :)

    as a Dane, I was a bit surprised about the Dill comment, its all over here and thought it was a common used spiced, but now that I thing about it, not very often you hear it being used in cooking shows outside Scandinavia. Anyone not tasted it? (also great in dips for potato chips/crisp)
