    I have a care agency that looks after me. I along with one of my carers are currently writing a cookery book for the carers to cook different meals for the clients. I have designed a spag Bol base, that can then turn into either a spiced cottage pie or a chilli or even a beef tomato and veg soup. If you make a big batch of the base and freeze in portions, you can then take out a portion and alter the flavour as you go. Also, if you have any red wine left over, freeze it in ice cube trays and add one or two to the spag Bol or maybe a stew. If you do a slow cook beef, turn it into a pie by just adding a ready rolled pastry on top, egg wash it and bake it. If you don’t want to buy a whole bottle of wine for a recipe, you can buy red or white wine stock cubes.

    Over the years I feel like each of the three normals have gotten better at cooking and cooking knowledge. However each of them still have tendencies that then drag them down. Jamie will tend to go with a weird twist that kind of makes sense from a normals perspective. Mike tends to either think big but can't reach it or goes as straight as it goes. Then Barry will start playing poker with UNO cards. Each might be good, but their cooking shows their unique personalities and upbringing. *Also Jamie is closer to my own cooking*

It's a very pleasant thing to watch imho because it's something a lot of people with less income have a need of doing... 'alright, I have this, this, and this left over, what can I make out of it that's tasty and nutricious?' I mean, I imagine a lot of people do this, but... I know it's fairly common for me, and it's nice to see people think that way on a cooking channel.

    • @laurensteenkamp7693
      @laurensteenkamp7693 ปีที่แล้ว

      It's worth noting that where there is somewhat a tradition of families going to a farm to pick a pumpkin (or several), take it home and carve it in the US. That is not the case in the UK, indeed the whole 'US style' Halloween thing is a relatively (15 years or so) new concept. Thus you get wastage at all parts of the supply chain, at farm level either the pumpkin's not supermarket (most Brits buy their carvers at a supermarket in the days/ week running up to Halloween) perfect* or aren't ready to be to be taken off the vine. Then at supermarket level, most of the household names (e.g Sainsbury's, Tesco etc) tend to over order the perfect pumpkins from the farms and therefore it is still possible that you can get whole ones a fortnight after Halloween, at a reduced price of course. Then finally at the home level, as pumpkin is a relatively new vegetable to the British diet their isn't an arsenal of recipes (bar soup) for people to make. And before anyone comments about using the Internet;
      1. Some of the other ingredients from recipes found on the Internet (particularly those from the U.S) are almost impossible to find in the UK.
      And 2. The variety of pumpkin most often grown in the UK is reasonably wet inside so using it in baking is not advised unless your a reasonably skilled baker, also if you walk down the international food aisle/ look at the shelves in the inf section of any British supermarket (superstore and average size/ small respectively) you'll likely find a few tins of Libby's Pumpkin pie filling anyway
      *= all the big supermarkets have a set of 'aesthetic standards' they use when buying fruit and vegetables from growers, since a year (pre covid) when the weather was less than optimal and vegetable harvests were lower the supermarkets have gotten better.
      Most now do sell whole less than perfect vegetables to their customers (at a reduced price) rather than souping or pureeing it

    I am sure many people do this but I think the key to reducing food waste is to have a good pantry of dried goods and spices and canned items that won't go off quickly, and then shop sparingly and regularly for fresh ingredients that have the most versatility and that can keep meals interesting. I know everyone's time is limited, but if you have a local little fresh food market, think about what you are going to make for the next two days and buy only those items, instead of making a massive week long haul - at the end of the week you are bound to have to toss some spoiled items, or you will just get bored of them. Plus it is an opportunity to support small fresh market shops if you are lucky to have one close by on the way home from work. Fresh items that work in both cooked and raw salad applications are great so that you have options. Cooked chick peas are excellent - in curries, salads, fried with chorizo until crisp, made into hummus. Use scraps to make stock and freeze flat in ziploc bags, labelled. Labelling frozen items is important - it is so annoying to have no idea what something is later on and then you probably toss it.

      to me a large freezer is key to reducing food waste. but maybe that's just because i don't have a large freezer and you miss what you don't have. if i have chicken or other meat that's gonna go off soon, then i can just freeze it for months and months. same with a lot of produce. and depending on how i use it, it won't matter if it was frozen

    This is a really interesting concept because it required the normals to use ingredients they haven’t chosen to use and so have had to adapt to the different tastes and shopping habits of the other boys, Jamie did especially well considering the contents of Barry’s fridge he had to use, because I’m sure i would have zero ideas with what was honestly a lacklustre set of ingredients that don’t really work as part of a food combinations so keeping the dish quite simple but flavourful and effective was an excellent Spafford choice

      I agree. Baz as the runner-up made a well-executed, but ultimately confused dish that focused more on using up ingredients than being "good". Mike's dish looked amazing, but the pumpkin seeds were a critical error, and from what Ben said, the pumpkin was undercooked as well. Jamie's, on the other hand, was perfectly executed, and gave and interesting twist, while using the ingredients, and really his only issue was his mistake with the oven that meant that he couldn't cook out the raw garlic on the bread. In a real weeknight cooking situation, you could wait an extra 5 or 10 minutes for garlic bread.

    Barry and Mike missed cracking opportunities while cooking - Jamie provided snacking cheese and Mike made sure to include a thinking beer! :)
    I did find myself nodding when Ben was talking about minimising the waste though. I very rarely have anything other than a vague idea of what I want to cook before I start, that comes after checking the fridge and seeing what I have. Heavy on the curries, soups and stews at this time of year but almost all made using up anything that looks like it needs to be. Closest I get to meal planning is just making sure I have a decent selection of spices and dried goods like lentils!

    I feel like Ben was too harsh on them. Calling cooked bacon 'food waste' doesn't really make sense. Once cooked, it can then easily be stored again for a couple days to be used in salads, as a garnish, etc. The time limit on them in this also feels a little strange, since if you're working up leftovers, like you'd do at the end of the week, you'd have lots of time to make and think about a dish

    I like how Jamie's giggles were sprinkled here and there as a quick editing cut through the video :D
    It was surely an interesting and enjoyable video, bit I felt that there were still too many ingredients (even though you might be used to have a wider choice) and the challenge seemed to be more about making something fancy out of a regular quick dish instead of making a good dish out of very limited amount of ingredients.

    I kept hoping for Mike to do a kind of kale taco, where he used the amazing leafs as the shell and then stuffed it with chicken, mushrooms, pumpkin and some kind of sauce - that would've been amazing with that bag in my opinion.

    I won’t give up! Two new ideas for challenges:
    1. no energy/depression cooking (needs a better name!), get the participants to use as few elements/stages as possible AND as little clean up needed as possible (like dishes, trash etc) as little effort as possible but still not like, microwave meals you know! lite sure, use shortcuts, but you're not supposed to notice them in the final dish. cook like you have no energy to cook/depression. when I am in a depressive episode the thought of many different stages or elements in cooking or the cleaning up afterwards makes it almost impossible to start cooking.
    2. Use as little electricity as possible! (don't really know how to measure this though, number of times or different points for low/medium/high...?)
