Drake Garrison I agree I’m sick of it. I don’t even watch much of the cooking channel anymore because it’s ALL the SAME! Italian, Italian, French, Italian again! My husband is Lebanese and I have many Armenian friends and I will NEVER choose a bowl of pasta over some good Mediterranean food.
We make this all the time in the Levant (Lebanon, Syria, Palestine/Israel). We call it Lahme bi Ajeen. We have so many Middle Eastern Armenians and they're all family.
Only just discovered your channel! Wow, great food! The lahmajun we first experienced in Cyprus, where there was a Middle Eastern bakery. I have loved it ever since, and as your is so simple, I will definitely try this (but with lamb).

My friend makes hers using store bought flour tortilla wraps … My grandparents are from Armenia they escaped during the early 1900s… and growing up we literally NEVER ATE this ! I never even heard of it till I met my Syrian Armenian friend ! I never even saw it at the Union City , NJ Armenian Church Festivals. But I see it now in the old cookbooks I have from the Festivals.

+maylien Pepper paste you can find in any and all Armenian markets. It says just that "pepper paste" on it. They come in mild, medium and hot. Very tasty just by itself too, just add little olive oil, fresh cilantro (finely chopped), garlic if you like, and some tomato paste.

+maylien haven't seen your question, sorry Any Mediterranean store has it , if you can't find it, leave it out and just use red chili flakes ,tomato paste and sauce , it'll still taste great:)
I think I had this years ago and a spice blend was sprinkled on top that had sesame seeds in it. Do you know of that spice blend? I really like your cooking style and want to try this soon. Thank you for sharing

I live in US too. What do you think, can I use tortilla (mexican bread) instead of the dough and use the grill pan (with grill marks). And then use some iceberg lettuce and fresh tomatoes and some tsatsiki sauce and wrap it up in the cone or a "baby blanket". Is that sounds good for you?

This is truly the best recipe for Lahmejun out there... Heghineh does it right, only difference is that I prefer more Tomato Paste (I usually use one to two 5 Ounce Cans) and I bake them at 500* in the Oven. Your Recipes are Amazing, I find very few who keep things really authentic the way they should be. For the Record, anyone who uses Tomato Paste in their recipes, ALWAYS use Mutti Double Concentrate Tomato Paste, the Italian Brand of Tomato Paste Concentrate. Trust me you'll never buy the other brands ever again.

That's another kind of bread/appetizer , this lahmaju doesn't have sesame seeds:)

Susan Ruzicka you're referring to zaatar or zataar which is a spice/herb blend and typically made into manaeish

what about the meat? Is it still raw, espcially when you cook in the skillet. I assumed you cooked it then mixed it with the other ingredients.
Does the fat content in the meat make a difference? Does it need to be very lean meat if so how much? How do you keep the meat/topping from shrinking?

Can I make this with pita bread or tortia if I don't have time to make the dough ?
Yes, you can use both, if using pita bread try to use only single layer of it, or else it'll be too thick and hard to bite :)
