I had the pleasure of working at the HOPR between high school and college and there was never a dull night. From celebrities coming in nightly-Chuck Norris is an amazing tipper, Tia Tequila is a hot mess-to all sorts of wild happenings with folks who’ve enjoyed a martini or two over their limit, there was always some unbelievable story that I got to go home with. Slowest night while I was there was just shy of 200 covers and the busiest were 4th of July and Fathers Day which came in around 1,500. A true SF institution.

I am from CA and have spent lots of time if the city, lived there for a year, my best friend lives there but I haven't been! So I am definitely taking him next time I'm back. We used to have a restaurant that reminds me of this in Modesto, CA that my wonderful stepdad Bob used to take my mom, brother, sister and me to called The Chuckwagon. It was an occasional Saturday night delight and always such a treat for us kids!
This is really old school rib roasting the way I was taught back in the 70's with 109 ribs and rock salt. This time consuming method has mostly gone away as chefs now use a more trimmed rib called an "export" or boneless ribeyes and roast them in slow cooking ovens known as Alto Shaams. The old method produces great results though.

I remember Gus.I asked management what his function was and they told me he was the heart and soul of the restaurant!!. RIP Gus.
And how remiss of me... Chef Jose!!! I knew him back, many years ago when I was a food purveyor from Monarch Foods. The HOPR was one of my customers, and I dealt exclusively with Chef Jose. A really nice man, and great chef who would share wisdom with me regarding cooking and the Restaurant Business.
For those that haven't been, the restaraunt and experience is A+. The meat? B- I'm afraid.
Its so much better when you don't have an interviewer.
Wow first off that looks insane it’s truly the best cut of steak !!! But I have to say her smile is addicting wow she lights up a room with her smile
Love this place so much. Always worth a visit!
I so much love her personality. She is absolutely beautiful inside and out my kind of lady. And she knows how to get around the kitchen.. much-loved hun. This place is amazing. I will have to make a trip 🥰
This woman has a fantastic spirit. Bravo!
I had the pleasure of dining there for the first time a few months ago. Best meal of my life.
How much a person?
We dry age primal cuts at home for about a week, too. Makes a huge difference in the flavor and texture of the meat.
I hope chef Jose bought a house 30 yrs ago for $75k. Probably a millionaire now.
Been there and the prime rib giggles bc of how tender the cut is
Its not just a meal...., Its an Event!
Such artistry, for shure!
He said, "I know you, you know the restaurant business, I'm scared of you."
This host is amazing, best I've seen in cooking channels
I love the roasted edges of a prime rib. I'm surprised they seem to not have much of that.
Agreed. They could add to perfection with a beautiful crust
Idk who this woman is but I freaking love her. Give us more.
Guy wasn't letting go of any "secrets" 😂 and did you notice the side eye from one of the chefs when they talked about how they can't afford her. I hope those guys are well compensated.
Yep I caught that to , it was the boss drives a rolls an I take the bus to work look , i'm old worked hard all my life and finding skilled hard workers is not an easy task , it's like finding an nba player or hockey player few an far between . they are money in the bank though , if you can find just a few in a lifetime your money worry's are over if you treat them well .
The kitchen and restaurant has a bright ambiance but Nyesha manages to still lighten it up
I had dinner here a few years back and I loved it! It's cool to see what happens behind the scenes
My friend from Kansas City over here in Tokyo used to live in SF and raves about the HOPR.
You've got a couple Lowrys in Tokyo. You should go there. It's amazing prime rib too.
I count myself lucky to FINALLY get a reservation there. What a phenomenal meal! Can't wait to return.
True artists! We need to keep these historical places to keep our identities of our cities!
I wonder why I'm hungry...... I could eat a 24 oz slice right now. She's a great host, great personality and interaction.
We appreciate Eater’s content. They’re always serving on a gold platter.
This is where I had my 60th Birthday Dinner and it was WONDERFUL!!!!!
This series doesn’t need a host, just let the chefs and cooks express themselves
So agree. She’s annoying
I’m hungry now. And old, but this establishment just made my bucket list. Well done.
A great restaurant and a great host! Thank you Eater for the wonderful video
Thank you Joe for helping make this Videos.
