I literally did this same exact upgrade earlier this year when the COVID lockdown first happened. I decided to put Ubuntu on mine and discovered that the most recent version that has an installer compatible with this Mac Mini is the 2014 version. So, I installed the 2014 version, then upgraded to 2016, then upgraded to 2018, which is where the machine currently stands.
Assuming you installed a Core2Duo: There’s Linux ISO’s that can install 64-bit versions on Macs with 64-bit processors but 32-bit EFI. Might be worth a shot. Google “Matt Gadient Linux ISO” and it should be the top result. Running Mint 20 on my C2D MacBook thanks to that iso
My first Mac is a 2006 iMac I hit recently. I did pretty much the same upgrades to it as he did to this Mac mini, although it has a 500gb desktop hard drive instead of an SSD. It also has windows XP installed trough bootcamp.
The Core Duo is a cool processor in that it's almost like the ultimate development of the Pentium 3.... It's essentially a dual-core version of the Pentium M, itself a revamped P6 architecture chip. Conroe borrowed from it also, but it's much more different from the Pentium 3 than is Yonah.

Ahh, this was my very first Mac. I remember buying this in 2009 for my birthday. Mine was a 1.83Ghz Core 2 Duo, with 2.5GB RAM and a GMA video card. My very first computer. I absolutely loved it.
When I bought my 2009 mac mini, some individual designed an air-filter to fit perfectly on the base of the unit. I still use this mac mini today, and those ports are totally free of any dust.
I clicked the video right when I noticed it. I would've clicked even faster if the thumbnail would have been edited like shown at the end though. 😂 Bruh!
Here's an interesting story about the mac minis of this generation: I had the base 1.66GHz model and attempted to use it as a HTPC, and it REALLY struggled with video playback under OS X (with 512 MB RAM). A DVD-rip of the X-Files could barely be played in VLC. Then I installed Debian (and also Xubuntu) with rEFIT, and it was SO MUCH FASTER, especially with XBMC. While cleaning the computer I accidentally broke one of the RAM slots, but even with 256 MB RAM debian outperformed OS X (in video playback). I had it for a few years as a media station, even playing through all of Super Mario 64 on it.
My friend has one of these and after installing certain software, I noticed that one of my Thinkpads running the same software with a slower CPU, same / similiar chipset and RAM etc performed WAY better. Not sure why but the Apple Mini was struggling and it was using a fresh operating install too.
I work for a second hand IT company that's been in business since the early 90s, we use one of these on the order shelf as a marker, drawn on with sharpie saying "pick from here" with an arrow, the thing has been literally drop kicked before but we found a power supply in a box recently and plugged it in...the dam thing still works
I also have a Mac Mini I recently upgraded to a T7200 as they're dirt cheap. I really just use it as a file server tho. It also has a 240 GB SSD for some reason lol Btw this is how to install 10.7: 1. erase drive with 2 partitions (make sure you install 10.7 on the first partition so you can remove the second one later as we're going to use it for a temp install of 10.6), optionally you can use TDM and a second Mac to do this too. 2. Install 10.6 on the second partition (skip if using TDM) 3. Make a 10.7 USB installer and delete PlatformSupport.plist from /System/Library/CoreServices from the USB drive you created (the file might be in another location but tbh I don't remember where) 4. Install 10.7 5. Boot into 10.6 or TDM and delete PlatformSupport.plist from /System/Library/CoreServices from the 10.7 installation 6. enjoy
Hi, Snow Leopard user here. For the web browsing, you could use an older Google Chrome version, it's still usable today and far better than Safari, and also Artic Fox is one of the best and it's still being developed.
The first generation Mac mini was in fact the apple TV version 1 that was hackable. I had OSX Tiger running on my apple TV version 1. Also early version of Microsoft office. So this is really the second version.
Great work there buddy! Loved the new video you had put up about the Mac Mini. I had a similar problem with an old 2009 iMac when it came to upgrading the MacOS on there. What I had done was downloaded the .DMG image of one of the MacOSes that you can get for free online and do an in-place upgrade to the MacOS directly onto it. As it worked for me and was able to get to High Sierra in the end, hopefully it should work out for you too!
No joke my dad still uses one of these. It had a RAM upgrade and HDD replacement over the years, but it's still running the Core Duo CPU. I installed Arctic Fox as a browser, which is a rebranded version of Pale Moon (itself based on Firefox) that is aimed at older systems, including Mac OS X 10.6.

Proud owner of a 2010 Mac mini here with a core 2 duo. Sadly it can't be used due to it's horrific graphics (fails to manage Discord or TH-cam in 720p) but it's a sleek looking machine. Those older minis still look pretty good though.
I still use a 2007 Intel Mac Mini in production as a DHCP/DNS server running a very locked down build of Snow Leopard. 1.83GHz, 2GB RAM and the original 80GB HDD. I've been using it since 2009 and recently picked up a 2014 model to swap it out with. I am expecting it to be very clogged up with dust after the ~13 years of 24x7 operation that it's seen!
mac mini g4 1.42Ghz was my first mac ever. with 2 usb ports and usb broadband i quickly learnt the way of apple and had to buy their keyboard and mouse :)

I would stick with Snow Leopard.
Loin doesn’t add that much capability and Rosetta is a must-have for a vintage intel Mac.
Plus in 10.7 they got rid of the scroll arrows. Agree with you on Rosetta.

Btw this is how to install 10.7:
