Clip-in pedals and cleats will give you a lot more power and speed. I can’t imagine climbing a hill without them. Street tires pumped to the correct PSI before every ride will also help.
An inexpensive bit of kit are a pair of toe clips - the plastic ones, you don't need straps. They help keep your feet in the correct position on the pedals.

When my wife and I first began cycling, we were fighting old bikes that weren’t really ideal, they worked just fine, but everything was harder than it had to be. Consequently, we sacrificed a little and purchased well fitting road bikes. For us, it made things a lot more enjoyable. Good luck on the training, I will be pedaling along. RAGBRAI LI, here I come.

Great job It’s starts out at ten miles then you get further and further as time and training progresses But take advice from me cheap bikes are great for getting into the sport but I’d look into some good used bike on marketplace those department store bike will give you nothing but problems at ragbrai
are you riding with a charter or the main Ragbrai group? the odd thing about riding Ragbrai is that when you get riding with the group of 20,000 riders, you ride at a different pace and things go by very quickly. You both will do very well, just keep putting in rides and get the butts callused up.
Granted, 10 miles is a fair ride if you're not used to it. You'll get to the point where it's just a short workout for you both. I used to ride to work & back each day which was a little over 11 miles each way, rush hour traffic when bike lanes weren't a thing (yes, that long ago lol). Being in the UK on narrower roads as you know, which was no joke sometimes. Because of the stop/start traffic I could travel faster than most of the cars on average except on the dual carraigeway sections that I usually avoided for safety, This was borne out when I challenged my Dad to a race to his home one day after work. He was in his car which should take about 25 minutes on a clear-ish run, me on my bike, I won. He did/does drive like an old fart, but still, not a bad pace for me as it took under 35 minutes. I could (back then) do it much quicker in the morning on my racing bike (dropped handlebars etc) - especially if I was late for work 🤣 10 miles would be a trek for me too nowadays but keep up the good work 👍

Check out Quadlock bike phone mounts. I live in the Cotswolds we have hills, did you know 😂, and cant ride anywhere with out having to climb them
