    Perspective for "Fuck Brunch" is the fact that brunch is usually Sunday, right? Well Saturday night is one of the busiest nights in most restaurants. So to go from high stress, late night work to then having to wake up extremely early for prep and mostly boring, unfulfilling cooking since brunch consists of fairly basic food is a nightmare for chefs that want to push their skills, refine those skills, and express themselves creatively through cooking.

    Evan is not completely wrong. Most home cooks, that aren't from countries with high-end cuisine like France, don't measure or anything. They learned from experience and watching the cooks in their family. It's why a lot of those find it hard to produce recipes, as everything is "a bit of this and that" and "by the eye".
    The French high-end way of cooking found its way to the entire world eventually, but the generation of our parents probably cook like that, unless they have some cuisine education.
    Also - because in a lot of countries food is passed down for generations, I find that most moms/grandmas don't fall short from chefs, and some chefs even go to learn from these kinds of cooks.
    THAT BEING SAID - To say "Cook the African way" is wild. I think what he meant was "The way they USED to cook in certain countries", or something like that.

    I think they’re saying f*** brunch because it’s just EXTRA. And if it’s uninspired or mundane then what really is the purpose? Comparable to a place that maybe serves a brunch menu overlapping the same time it serves lunch, it’s not ideal.

    the thing about brunch lol its because "brunch" is usually a sunday thing, and if you work late the night before you have to come in early and prep for brunch instead of the lunch-dinner rush. basically, they work a busy night, go home for 1-3 hours, then come back and do it again but early morning. Brunch tables also don't clear out fast, so instead of like a fifteen minute wait time for a table it can go up to an hour. I once saw a brunch table of three men sit at a table for three and a half hours with only one plate and several coffees around them. fuck brunch.

    My mom was half Irish and half Welsh but I now think she was African because of the way she cooked 😂😂😂😂 Love your discussion guys! I understand what he meant, the way people cook without measuring and usually the recipe is passed orally down the generations.

    If you get a chance, read Anthony Bourdain’s opinion of brunch. His Kitchen Confidential is a great book. He narrates the audiobook.
