Ok the show really didnt explain well about the angels getting hurt so here it goes: angels can hurt themselfs or being hurt by anyone, same thing with sinners, both are immortals when it comes to normal weapons, thats why we see so many sinners killing each other just fine, they will just respaw later in hell. Both sinners and angels can only be kill by angelic steal/weapons, thats what they meant with that, angelic weapons dont just kill your body bur also your soul, since the only place that have angelic steal is heaven, they never thought a demon would really try to use something that is used as a weapon to them against the angels. And to prevent that the angels may pass this information (if a demon thread the angel with an angelic weapon and the angel act cautious about it), heaven never said to them, that what can kill angels are they own weapons and that also make them fight thinking they are invencible and more brutal. Vaggie didnt get that she was hurt and could have been killed by Lute with an angelic weapon because it was Lute, in her mind she might have thought that she only got hurt because she sinned and was another angel inflicting harm on her and not a demon, it would be like "oh Im an angel and another angek almost killed me because I sinned, other angels might notget hurt because they didnt sin" something like that. An angel hurting another angel its diferent of a deon hurting an angel, specially in a case where the demon uses a normal weapon that wont kill the angel making them look immortal

I think Sydney overreacted on the wall thing, they were clearly trying to surprise her like "heyy look the wall is down😅" and women usually don't care about that stuff so why tell her??

Her being upset about the wall has more to do with the communication. He kind of blew her off to hang out with Claire, which she doesn't know. That itself is its own thing because Carmy is becoming distracted, especially considering how tight of a deadline they have. They are supposed to be growing the menu together, and now she had to go around trying food all by herself all day and he hasn't texted or called her all day. Then when she gets back, the wall is down and all these changes are happening. She simply wants to be communicated to ya feel? The wall represents that. It's a large thing so it could've been as simple as "Hey, you should come by the restaurant, the wall is coming down." And regarding all of the tension with her partnership with him, its very valid because the restaurant business is cutthroat, and to sign into a deal, putting in your time, energy, and money into a partnership where things like communication aren't being put as a priority, its a very cautious and 'dangerous' thing to consider ya know.
