I would recommend cooking this on a grill, or in a toaster oven, a conventional oven, an air fryer, or inside a cast iron skillet with a lid.
Griddle is great, but not for everything. The bacon will cook more evenly and easily inside an enclosed space with ambient heat without the cheese spilling as much. Every microgram of cheese saved counts!
Jokes aside… If it is suspended above a cookie sheet in the oven, you will get delicious semi crispy bacon with reduced oiliness.
Add a little mayo and some inglehoffer mustard to that bun and it’s Gucci ~ 👌
