Spoon on an inch or so thick layer (I go an inch and a half) of mashed potatoes (caramelized onion or garlic mashers work best!). Top with shredded sharp cheddar cheese (and maybe some chopped green onion) and bake for a half hour at 350 degrees. Plate up and squeeze out some catsup for dipping on your plate. Trust me...you will NOT be disappointed.
