I like how she can articulate the flavors so accurately. Most people on cooking shows just say “it’s good” but not her. She really does a great job explaining the taste and texture and I think that’s really important for video since we can’t smell or taste it ourselves. Great job! Going to have to make this :)

I thought this was gonna be a fudge. I used to make fudge using a 6 ingredient easy recipe, but then...i discovered sweetened condensed milk & its versatility. 10 oz of chocolate chips, & a can of condensed milk. So super easy. Pie, cake, fudge, condensed milk does it all. It really is liquid gold.

Once you have dusted them after removing them from the fridge - put them in the freezer. It changes the texture and they become soft but chewy and don't stick to your teeth as much.
So like after shaping them? This is my first time trying this, I hope I don’t burn the house down 🤞

Hello! I’m Brazilian and this recipe it’s so SO different from ours! The famous brigadeiro its like this truffle but the making its super different. We actually cook the condensed milk until it gets thick enough to roll it. It doesn’t burn this quickly. If you want we can teach you and you can make another video, same ingredients!!!

i'm so proud to say that emmy is the reason why i am so more vocal about my excitement when my food comes out how i want.
EDIT: Taste AMAZING - so I dont' even care what the work in progress looks like. Made these. They smell delicious! I measured out the condensed milk (using ml) and the cocoa powder (in grams), and mine was WAY thick. The powder did not incorporate all the way in and I had to use additional Condensed Milk. I'm wondering if anyone else had this issue or if they are just impossibly thick and there was nothing wrong with them? In the video it looks like she gets a thick but smooth textured product whereas mine were thick but clumpy. I still smooshed it together in some plastic wrap. Not gonna waste it
I measured mine both in grams because, though the write-up said ml, in the video she said grams. However, mine still came out way thicker than hers. I thought maybe I “warmed up” the condensed milk too much. I ended up using my hands and working the mixture together and almost kneading it like a bread dough. Mine still came out really yummy, just not as gooey as hers.
Maybe just not add all the cocoa in the 3rd part. I imagine different brands and different times of year would change the humidity in the cocoa and that would have an effect.. I know it changes heaps with flour.
@@nikiTricoteuse sometimes this happens when you overcook the condensed milk it becomes too thick. keep it to a low simmer. also i recommend using half cocoa powder, half nesquick. im brazilian and grew up making these :)

In the Philippines, there's this candy treat that you use just a can of condensed milk and boil it in a pan until it is caramelised and thick. Let it cool completely and it'll be like a dough almost, you roll it into little balls in your hands and then roll it in granulated sugar. My mum calls it Yemas. It's my favourite candy! So simple but it tastes so good.
You can do the same thing with powdered milk and create a Filipino candy, pastillas.

Most Filipino desserts also utilizes Condensed Milk - virtually available at any store nearby. A Filipino version of a fruit salad, Leche Flan, which is very similar to the japanese puddin, coco pandan jelly, and a lot lot more.
Even just by the condensed milk itself, it's good as a spread for a bread, coffee sweetener, mix it in your oatmaeal or even cereal and can be used to make home made ice cream.
The possibilities are endless, and not just limited to Filipino or even Brazilian desserts.

@Save TheUmmah you can make other sweet that we call "beijinho". You cook the condensed mil with a spoon of butter, a small pinch of salt, shredded coconut. Mix it all the time, until it starts to get thicker and you can see the clean bottom of the pan when you mix it. Then let it cool, make little balls and roll them in shredded coconut. Basically you can use anything instead of the coconut. Like, chocolat, milk powder, gelatin powder, cinnamon (we call it brigadeiro de churros", etc etc. Just look it up brigadeiro and you gonna see all the option.
Other amazing recipe, a little more complex than brigadeiro, is 'pudim de leite condensado ". Look it up, you won't regret it 😍

That reminds me of the 2-ish ingredient truffles I used to make when I was in middle school. They were just condensed milk and powdered María cookies (vanilla flavoured), I just made tiny balls with them and tossed them in chopped nuts or chocolate sprinkles. No warming, no measuring, no tools, just my hands and winging everything like a middle schooler that knows no better. Even tho now that I think about it, those seem too sweet and cocoa powder now seems like a good balance to the sweetness of the condensed milk, now I'm craving the bitterness of the cocoa powder.

Espresso powder works amazingly in truffles! I've made "mocha" truffles for years with espresso powder and they are delicious if you like coffee. If you use instant coffee, mix it first with your condensed milk so the crystals dissolve well. 😊

I use 1 boxes of bakers chocolate semi sweet squares and 1 can sweetened condensed milk, heated in the microwave until melted (about 2 min stirring half way). Add a splash of vanilla. Makes perfect fudge and you can top it with anything or add in stuff you like in fudge. Recipe is on the inside of the bakers squares box. I'm sure it would make great truffles too.

18oz of Semi-sweet chocolate morsels
1x 15oz can of sweetened condensed milk
Melt the chocolate over in a double boiler. When it's fully melted stir in the condensed milk. Mix thoroughly and pour into a tray/pan to cool. Allow to cool completely before cutting into pieces

I learned a couple tips from a chef:
1. Mash the clumps of ingredients (cocoa powder, flour, etc.) through the sifter screen at the bottom each time you sift. Then, no waste.
2. "Condensed Milk" is not always sweetened, and it's not always the same product in other countries. The chef said it's important to call it sweetened-condensed milk to clarify which product to use in a recipe.

its a thing, you can use pretty much the same measures, but you have to test to make sure. The most popular ones in Brazil are the chocolate one, the powdered milk one and the coffee one. Oh... and the peanut one too.

Sweetened Condensed Milk
(This is like Eagle Brand Milk!)
This should be made as you use it - the milk doesn't store well. One recipe equals one can of store bought sweetened condensed milk.
Prep Time: 10 minutes
Ingredients:
* 1 cup nonfat dry milk powder
* 2/3 cup sugar
* 1/3 cup boiling water
* 3 Tbsp. butter
Preparation:
Combine all ingredients in a small bowl and beat well with wire whisk until smooth. Use in place of canned sweetened condensed milk in recipes.
I can imagine this recipe using other kind of powders other than chocolate, like matcha, coffee, or even milk powder. :)
Ohh yes and maybe a freeze dried strawberry powder to make it like strawberries and cream! Yum 🍓

There's a sweet in brazil called "marzipã" (i don't know if its common in other places) thats just equal parts sugar, condensed milk and powdered milk, its super simple and sweet

I tried these myself, and if you’re a person who liked Hershey’s milk chocolate and isn’t too good with dark chocolate, I recommend doing 30-40 grams of powdered sugar, and then the rest is cocoa powder. Also, cover the outside with powdered sugar. It’ll be ever so slightly bitter, but it’ll be more sweet. (Not overpoweringly sweet)
From what I remember is that it’s 240 grams of SWEETENED condensed milk and 100 grams of cocoa powder. (this is the original recipe, if I’m correct.)
I made these. I made several different kinds by adding extra ingredients to the recipe and they were so delicious!! toasted coconut, peanut butter chips, pecans, white chocolate chips with dehydrated raspberry powder coating the outside, and I made rocky road by using pecans, chopped marshmallows and coating the outside with dehydrated marshmallow dust.

I ended up making these today! And they were definitely easy to make! Although the only change I made is instead of dusting the outside with the cocoa powder, I dusted the outside with powdered sugar. Because I’m my personal opinion, the bitterness of the cocoa powder on the outside clashed too much with the decadent sweet of the truffle. But they are very good!

@@blue13.07 Evaporated is just literally evaporated milk (milk with less water), condensed milk has sugar and it's also more evaporated than the other (milk with even less water and sugar)
