    Hi Marion!
    I love this recipe!
Just a tip, if buttermilk is not available, adding either white vinegar or lemon juice into the milk and giving it a stir, let it sit for 2 min, then stir again, is a good 'in a pinch' buttermilk!
Also, so as not to waste a lemon, BEFORE adding lemon juice into milk /egg whites, zest the lemon into the pancake batter for a fresh flavour!
I have many topping likes, but sprinkled icing sugar, and fruit spread/fresh, is my most favourite!
    Thank you for this!

I always add a dollop of yogurt to my pancakes as well. it's not just the faux buttermilk flavour, it also adds a tenderness that can't be beat. I try not to ever make pancakes w/out yogurt because of it.

These looks amazing!!! Just one question... Do we need 1 whole egg and 2 whites or actually 3 whole eggs, but added yolks and white separately? Because the written recipe says 3 eggs, yolk and white separated, while in the video you used 1 whole egg to mix with the batter and then added just 2 whites after mixed as foam.

The trick to the best pancakes is to stir the flour as little as possible so the gluten doesn't develop. I wouldn't have whisked the flour into the wet mixture, I would have gently folded it in and folded in the egg Whites in at the same time as the flour.

I used to bake the desserts for an upscale restaurant and something I learned from my mother growing up to save money because buttermilk can be kinda pricey is to add lemon juice to whole milk in place of buttermilk. Let it sit for a few mins and the lemon will not only add the acidic taste of buttermilk but it will thicken to resemble this thickness of buttermilk. Also, vinegar works well too. I just personally prefer lemon and yes the little plastic lemons with concentrated lemon juice works also if u don't have fresh lemon.

You can use sour cream and milk.

I love Marion, period. But what I actually never have around is self-raising flour. I’ve perfected my own pancakes, so maybe I’m feeling defensive ;) Honestly I do whisk the egg whites, that and buttermilk are the absolute key. Use a double burner nonstick griddle & there’s no need for butter in the pan at all, it just creates mess & trouble. A double griddle means less need to stack, just keep serving them hot, no stacking needed. Plenty of butter in the batter. You can throw a few blueberries on the top side, turn over, they just hide in their holes, so perfect. (I haven’t checked the recipe, but basically I’m sure it’s the same. Mine is from Fannie Farmer, goddess of basic baking.
